The Chorizo & Potato Stew is a hearty family favourite that will fill bellies right up! This is a fantastic choice for a mid-week meal that you can bulk up by steaming additional vegetables during the cooking phase for a complete meal. I have learned that the majority of commercially made chorizo mince is full of additives and preservatives as it is a raw meat product. I therefore love how making chorizo mince from scratch is not only incredibly easy but so flavourful and healthy for you and your loved ones.

Crema Catalana was the single most requested recipe when I first announced that I would be doing a Spanish cookbook. I learned to cook this creamy dessert in Barcelona and could not wait to get back home to recreate a healthier and easier version using the Thermomix. Similar to a crème brûlée, but with citrus and cinnamon flavours—this dessert can be prepared ahead of time to finish off your Spanish fiesta.

  • 500 g frozen peas
  • 5 fresh mint leaves
  • 30 g butter or olive oil
  • ½ tsp salt
  • pinch of cracked black pepper
Instructions
  1. Add 300 g water and mint leaves to mixer bowl and insert simmering basket. Put peas inside the simmering basket and cook for 9 min/steaming temperature/speed 3/MC on.
  2. Set aside peas, drain water and discard mint leaf. Add peas back to mixer bowl with remaining ingredients and mush for 10 sec/speed 5/MC on or until desired consistency is reached.

skinnymixer’s Aussie Meat Pie Filling

Meat pies are one of my favourite cheeky foods, I have very fond memories of getting a meat pie with my Dad after watching the races as a child. Unfortunately, the pastry doesn’t like me – but this is a great way to get the taste of a perfect Australian Meat Pie without the pastry – or with if you like 😉 Here in South Australia we have a tradition of enjoying a Meat Pie Floater, which is a pie served floating in pea soup – top a pie this Australia Day with my Mushy Peas for a reverse pie floater and celebrate this great country! skinnymixer's Aussie Meat Pie Filling

  • 1 x brown onion, peeled and quartered
  • 30 g olive oil
  • 300 g liquid beef stock or 1 tbsp beef stock concentrate + 300 g water
  • 30 g tomato paste
  • ½ - 1 tsp salt
  • ½ tsp cracked black pepper
  • 700 g beef mince
  • 1 tbsp corn flour
Instructions
  1. Add onion to mixer bowl. Chop for 3 sec/speed 6/MC on. Scrape bowl down.
  2. Add olive oil and cook for 5 min/100 degrees/speed 1/MC off.
  3. Add beef stock, tomato paste, salt and pepper to mixer bowl. Insert simmering basket and put mince meat inside. Cook for 10 min/steaming temperature/speed 3/MC on.
  4. Carefully break up mince meat with a spoon and continue to cook for 10 min/steaming temperature/speed 3/MC on.
  5. Set aside simmering basket with the mince. Add corn flour to the gravy in the bowl. Blend for 10 sec/speed 4/MC on.
  6. Add mince to gravy and combine on speed 3 until mince is broken up and mixed through gravy.

This rustic, intense Thermomix soup recipe, with an explosion of layered flavours, will impress any seafood lover with its generous portions and the added bonus of being healthy and nutritious. While visiting Madrid, a local Skinnymixer, Melissa, took Sarah and I tapas bar hopping. I had every intention of avoiding seafood like the plague, however Melissa insisted that we try out the local octopus. I was so glad I braved it because it was delicious and since then, I have been more open to trying many different seafood dishes and was able to enjoy creating this soup.

skinnymixer’s Persian Love Cake

Persian Love Cake has been a recipe I have wanted to try for over 4 years, after a Skinnymixer suggested it would be a wonderful gluten free recipe for the blog. With Valentines Day around the corner, it seems like a fitting recipe to share with you all. I have included both dairy and dairy free options for those with dietary requirements. The story behind the name Persian Love Cake is also a beautiful, but tragic love story that you can read about here.   • 50 g | 1.8 oz raw pistachios, shelled
  • 300 g | 10.6 oz raw almonds
  • 100 g | 3.5 oz desiccated coconut
  • 150 g | 5.3 oz coconut sugar or sweetener of choice
  • 230 g | 8.1 oz greek yoghurt or coconut yoghurt
  • 50 g | 1.8 oz butter or coconut oil
  • 2 whole eggs
  • 2 tsp nutmeg powder
  • 2 tsp cardamom powder
  • 2 tsp cinnamon powder
  • 2 tsp rose water (optional)
  • ½ tsp salt
Instructions
  1. Grease and line a 22cm or 8" cake tin, I used a springform. Preheat oven to 160°C or 320°F fan forced.
  2. Place pistachios in to a clean dry mixer bowl, chop for 2 sec/speed 6/MC on or until lightly chopped. Set aside.
  3. Without washing the bowl, add 150 g or 5.3 oz almonds in mixer bowl, mill for 10-20 sec/speed 8/MC on, until almonds are a fine ground. Set aside.
  4. Without washing the bowl, add remaining almonds and coconut to mixer bowl and mill for 10-20 sec/speed 8/MC on, until almonds are a fine ground.
  5. Add reserved almond meal to mixer bowl with remaining ingredients, except for pistachios. Blend for 20 sec/speed 5/MC on. Scrape bowl down and repeat.
  6. Pour batter into prepared tin and sprinkle chopped pistachios over the batter.
  7. Bake in the oven for around 30 mins or until golden brown and a skewer comes out clean. Grain free baking is dependent on individual ovens so adjust as required. Allow to cool completely and refrigerate for an hour before serving.

skinnymixer’s Baked Spanish Eggs

Spanish Baked Eggs are an amazing, healthy and hearty breakfast or lunch option for those who like a little more substance to their meals! 

What makes this dish so healthy is utilising the Home Made Chorizo recipe from The Healthy Mix II as an alternative to preservative and additive laden commercial chorizo. Feel free to add a little cayenne pepper for some spice! Love Nik xx

skinnymixer's Baked Spanish Eggs

Home Made Chorizo Ingredients
  • ½ batch of Home Made Chorizo meat -see the Healthy Mix II for this recipe (see notes for alternative)
Remaining Ingredients
  • 1 medium red onion, peeled, quartered
  • 1 clove garlic, peeled
  • 400 g tin chopped tomato
  • 20 g olive oil
  • 10 g tomato paste
  • 1 tsp salt
  • 1 tsp smoked paprika
  • ½ tsp cracked black pepper
  • 50 g baby spinach
  • 4 whole eggs
To Garnish
  • crumbled manchego (optional for dairy free)
  • chopped parsley and chives
Instructions
  1. Preheat oven to 190 °C .
  2. Prepare a half batch of Home Made Chorizo meat from The Healthy Mix II and form in to small bite sized meatballs, set aside.
  3. Without washing bowl, add onion and garlic and chop for 2 sec/speed 5/MC on.
  4. Add tin tomato, olive oil, tomato paste, salt and paprika to mixer bowl. Cook for 10 min/steaming temperature/speed 1/MC off - Put your steaming basket over the hole to prevent making a mess in your kitchen!
  5. Add baby spinach to mixer bowl. Insert internal simmering basket and place meatballs inside. Cook for 5 min/steaming temperature/speed 2/MC on.
  6. Divide tomato mixture and meatballs amongst 4 large ramekins. Carefully crack an egg in to each ramekin and top with manchego if using. Bake in the oven for 15-20 mins or until your eggs are cooked to your liking.
  7. Serve topped with chopped parsley snd chives.
Notes
If you don't have a copy of The Healthy Mix II and don't mind using potentially preserved/additive filled cured meats - substitute the 250 g home made chorizo meat with cured sliced chorizo that has been lightly fried.

I thought I’d take a couple of minutes to compile them in an easy to access recipe guide, as mince can be used for so much more than Chunky Spaghetti Bolognese. These tasty little morsels can be used as a snack, entree or paired with some stir-fried vege, rice or noodles to make a complete meal. There is also a seafood free variation in the cookbook.

‘A Little Taste of Mexico’: Chilli Con Carne

This recipe uses diced gravy beef in the book, but for the times when you have some budget mince to use and crave some epic Mexican… mince is perfectly acceptable.

Cook the mince in the simmering basket for 20 minutes at a time (2 x 500g Beef mince for 20 mins each in the basket), like the Chunky Spaghetti Bolognese recipe. The mince replaces the gravy beef and can be mixed at the end sp 3/reverse to remove some of the chunks.

This comforting stew found in the cookbook, ‘A Little Taste of Spain’ is pulled together with some basic pantry staples.

Remember if you are changing the mince type to watch the cook times. Pork and beef mince will be a bit fattier than chicken mince, so watch that any lean mince doesn’t dry out. This meal is great for bulking up with vegetables in the varoma, just make sure you cut the vegetables small and check that they are cooked.

Dinner on the table within 20 minutes is often unheard of, but this simple flavour packed dinner will have you going back for seconds. If you need to increase the quantities to feed a couple more mouths, I recommend moving it to the stovetop.

Make sure you add your own condiments and add-ons to your own San Choy Bao. Chilli and fresh coriander is a must for me.

If you don’t love the taste of mushrooms, I cook this to the recipe and it hasn’t had a mushroom taste yet. Just remember to remove the moisture absorbing sachet before blitzing your shitake mushrooms.

This is Nik’s favourite recipe from ‘The Healthy Mix II’ (well this week anyway!) and for good reason. So much flavour is packed into those little meatballs and combined with the tzatziki, it is truly a party in your mouth.

I like to use these for lunchboxes and the ever popular with fussy kids ‘make-your-own wraps’ dinner. These meatballs can be pan-fried, oven baked, grilled on the BBQ or even the airfryer.

With the recent success of the Meat Pie Filling, I wanted to try my hand at a fish pie recipe just in time for Easter – and it is delicious! 

I have been eating more salmon lately, which can only be a good thing for mine and my families health, and I think this is a great way to boost the flavour and colour of fish pie. Feel free to use what ever type of fish or seafood you would like, you can also add extra veggies or cauliflower mash to change it up a little! Love Nik xx

Ingredients
  • 1 medium brown onion, peeled, quartered
  • 1 handful of continental parsley
  • 6 sprigs of dill, leaves only
  • 20 g olive oil
  • 300 g liquid chicken stock (or 1 tbsp chicken stock concentrate + 300 g water)
  • 1 tbsp dijon mustard
  • 1 tsp lemon juice
  • pinch of black cracked pepper
  • 100 g cream or coconut cream
  • 1 tbsp corn flour
  • 1 kg white potato, cut in to small cubes
  • 1 tsp salt
  • 400 g salmon fillet, skin and bones removed
  • 400 g firm white fish fillet, skin and bones removed
  • 100 g frozen peas or corn
Instructions
  1. Preheat oven to 200°C or 400°F.
  2. Add onion, parsley and dill to mixer bowl. Chop for 3 sec/speed 5/MC on. Scrape bowl down.
  3. Add oil and cook for 5 min/100°C/speed 1/MC off.
  4. Add chicken stock, mustard, pepper and lemon juice to mixer bowl. Put prepared potatoes in to deep steaming tray in place. Cook for 25 mins/steaming temp/speed 3 or until potato is cooked. While potato is cooking prepare your fish by cutting into large chunks and place in casserole dish with peas.
  5. Set potato aside and add cream and corn flour. Mix for 10 sec/speed 4/MC on. Season with salt and pepper to taste.
  6. Retain 100 g of sauce in the mixer bowl, and pour the remaining over the fish and peas.
  7. Add potatoes, 1 tsp salt and pinch of pepper to retained liquid in mixer and mix for 5 sec/Speed 4/MC on or until desired consistency is reached.
  8. Top fish and peas with mash potato and bake in the oven for 15 min or until golden brown on top. Let it cool on the bench for 10 mins before serving.

skinnymixer’s Basil Oil

I had a beautiful dinner with a friend at a pub this week, and trying to choose a ‘healthier’ option, I opted for the lamb rump drizzled with basil oil. I thought the basil oil was a wonderful way to make such a simple meal a little bit fancier and yummier – and I knew immediately I was going to turn this in to a blog recipe for you all. This recipe is well timed with the beautiful fresh basil growing in my UrbiPod absolutely flourishing. You can also use other, non woody, herbs such as parsley and coriander. Drizzle this over meat, eggs, fish, bruschetta and roast vegetables to name a few – Enjoy, Love Nik xx

  • 30 g fresh basil leaves (no stalks or stems)
  • 200g olive oil
  • ½ tsp salt
Instructions
  1. Bring 700 g water to boil at 5 mins/100 degrees/speed 1/MC on.
  2. Place prepared basil leaves into deep steaming tray and carefully, over the sink, pour the boiling water from your mixer over basil leaves to blanch them. Immediately run cold water over the leaves to cool them. Squeeze the basil leaves well and pat dry using paper towel to remove as much water as possible.
  3. Add olive oil, basil and salt to bowl and blend for 10 secs/speed 7/MC on.
  4. Store in fridge for up to 5 days or freeze in ice cubes for smaller individual portions.

skinnymixer’s Dirty Sticky Date Cocktail

Espresso Martini is Mr. Skinnymixers favourite cocktail, and with the recent success of the Watermelon Gin Fizz I thought it was a great time to create a cocktail for the cooler weather.  

While espresso martinis are very popular, they are aren’t the skinniest option when it comes to enjoying a cheeky drink – this version is made healthier by creating a date and coffee syrup instead of using coffee liqueur which is full of sugar. This is a single serving recipe, simply double or triple (or quadruple!) the ingredients to make more! I hope you enjoy this – Love Nik xx

Ingredients
  • 2-3 medjool dates, pitted
  • 70 g | 2.5 oz water
  • 1 tsp instant coffee or a 30 g shot of espresso
  • ½ tsp cacao powder
  • ¼ tsp vanilla extract
  • pinch of salt
  • 80 g ice cubes
  • 50 g | 1.8 oz vodka
Instructions
  1. Add dates, water, coffee, cacao, vanilla and salt. Blend for 10 seconds/speed 9/MC on. Scrape down lid and bowl.
  2. Cook for 5 mins/90C or 194F/speed 1/MC off. Allow to cool for 5 mins.
  3. Add vodka and ice cubes and blend for 10 seconds/speed 8/MC on. Enjoy immediately

skinnymixer’s Almond Pancakes

To celebrate Mothers Day 2018, I thought some gluten & dairy free pancakes would be appreciated by all of the mothers out there who can’t have gluten or dairy. I am not going to pretend that these are anything like the traditional pancakes made with flour and milk, but they are really delicious and a wonderful substitute if you can’t have the real thing. skinnymixer's Almond Pancakes

Ingredients
  • 200 g blanched almond meal flour
  • 270 g tin coconut milk (you may need to adjust the amount depending on how liquid your milk is - see the pic below)
  • 50 g honey (or preferred sweetener)
  • 4 whole eggs
  • 10 g coconut oil or butter
  • 2 tsp baking powder
  • pinch of salt
  • 1 tsp vanilla extract
Instructions
  1. Preheat pan on a low heat. I used a griddle pan which made this very easy!
  2. Add all ingredients to mixer bowl. Blend for 10 sec/speed 4/MC on. Scrape bowl down and repeat once.
  3. Fry on a very low heat until cooked through, and flip. Almond meal pancakes can burn very easily so it is best to take your time with these. We recommend smaller pikelet sized pancakes.

You want a relatively runny mixture. Add coconut milk until you are happy with the consistency.

The Top 12 Thermomix Recipes for your Freezer Stash

One of the most popular questions in the Skinnymixers Facebook Group is ‘What Thermomix Recipes are good to freeze?’. You can freeze almost every Skinnymixers recipe, apart from salad or mayo based recipes.

I asked the very knowledgeable Skinnymixers community ‘what recipes do you always have in your freezer?’. Below are the top 12 recipes that won the #freezerstash poll.

#1 – Stock Concentrate

Remember the stock concentrate won’t freeze solid and will last for 6+ months in the freezer.

The freezer is the perfect place for your stock concentrate paste. Due to the high salt content it won’t freeze and will remain easy to scoop out what you need. Keeping it in the freezer will avoid that disappointing moment of opening your container of Thermomix Stock Paste in the fridge and discovering it has gone mouldy.

Personally I always try to have a chicken stock concentrate and beef stock concentrate in my freezer stash. I stopped making the vegetable stock paste years ago, as the chicken has so much more flavour.

Make sure you try the Skinnymixers recipe from the website and also available in ‘The Healthy Mix’ cookbook.

#2 – Curry Pastes

Keeping a stash of curry pastes in the freezer means you can have a delicious curry on the table mid-week in 30 minutes. You can freeze portions of the Thai Green Curry Paste, Curry Mee Laksa Paste, Massaman Beef Curry Paste, Thai Red Curry Paste and Ayam Kapitan Paste.

Mini snaplock bags work well to save space, but you can also portion in other containers easily.

I also like to have a snap lock back with any other essentials like coriander roots, kaffir lime leaves, lemongrass, chillies, ginger and shallots. That way I am always prepared to make the Malaysian Satay Chicken!

#3 – Butter Chicken

Indulge in some Butter Chicken Pizza for the best fakeaway dinner.

Whether you have some fakeaway servings of Butter Chicken in your freezer ready for the nights you can’t be bothered cooking or perhaps you froze the leftover sauce from the last batch of Butter Chicken to make Butter Chicken Pizza or to add in some extra grilled chicken for a fast dinner. You won’t be disappointed having some of the very popular Butter Chicken in your freezer.

Butter Chicken Pizza is actually the main reason I make Butter Chicken. You can add whatever toppings you like but I like red capsicum, baby spinach, red onion and roasted pumpkin…. soooooo good!

#4 – LCHF Chicken Kievs

Add some Chicken Kievs to your freezer stash for an easy dinner.

When I make Chicken Kievs, I always make a double batch to keep in the freezer. I make adult sized kievs and also some smaller chicken nuggets for my youngest child. I also like to add baby spinach into the garlic butter to make the sauce extra “Hulk” green for the turdler – the extra green is for bigger muscles!

Feel free to experiment and try some different variations from the alternative Kiev filling list. Cook your Chicken Kievs from frozen with a light spray of oil, in the oven or airfryer. No need to panfry if they are frozen.

These LCHF Chicken Kievs are perfect for working families who need dinner on the table quickly to feed the masses. Pop the frozen Kievs in the oven and your Silky Sweet Potato Mash can cook in the Thermomix to have dinner on the table within 40 minutes.

#5 – Family Chunky Bolognese with Hidden Vege

Sneak in the extra hidden vege with the Family Chunky Bolognese from THMII.

The Family Chunky Bolognese with Hidden Vege is extremely popular with the mums hoping to sneak some extra vege into their easy kids meals. This recipe makes a large amount of Bolognese sauce and can only be found in ‘The Healthy Mix II’ cookbook.

You can freeze just the sauce or you can freeze with pasta to make it a complete grab and reheat meal. I’ve also been know to use this mince in my mini pizza scrolls for my lunchbox #freezerstash.

So next time you make this popular Thermomix Bolognese, make sure you freeze the leftovers for fast and easy dinners.

#6 – Peri Peri Chicken

Peri Peri Chicken with Perinaise

If you haven’t tried the Peri Peri Chicken you need to add it to your meal plan ASAP! This mild chicken Thermomix marinade is better than Nando’s and you can increase the heat by adding more chilli. This chicken is best cooked on the BBQ to get the lovely char flavour, but is also good pan-fried and air-fried.

When I make this for dinner I often like to double batch the marinade to have some pre-marinated chicken in the freezer. I currently have Peri Peri Chicken thighs and wings in my freezer stash. I have also started freezing a small portion of the marinade to make perinaise, because I love perinaise <3

To make Perinaise: Simply leave about 1 Tbsp of the Peri Peri marinade in the mixer bowl and start making Nik’s Mayo (Without Washing Bowl). Pop it in the fridge and let the flavours develop for a few hours.

#7 – Aussie Meat Pie Filling

Whether you freeze some ready made pies or maybe just the Aussie Meat Pie Filling to serve with some mash and Mushy Peas. This recipe is perfect for the freezer. I currently have about a dozen pies in my freezer stash with hidden vegetables added. These are reserved for the nights or weekends where some “junk food” is the easiest thing to add to the menu for the kids. This recipe means you know exactly what is in your pies. No additives, no preservatives and good quality mince.

If you are gluten free, you can easily use gluten free pastry or serve with some mash.

#8 – Chunky Bolognese

If you don’t like the fine, mushy texture of the Thermomix Bolognese recipes cooked in the bowl. You must try the Skinnymixer’s Chunky Bolognese where the mince is cooked in the simmering basket to retain a chunky texture. You can freeze just the sauce or freeze with some pasta. It isn’t recommended to freeze with zoodles though, as they go very soggy.

#9 – Macaroni Cheese with a Twist

The ultimate hidden vegetable dinner, the Macaroni Cheese with a Twist freezes perfectly. You can either batch up the sauce and freeze to add to pasta or freeze as a meal. This is Nik’s “kids” favourite meal, I’m pretty sure that the kids don’t get much after Nik snacks on it though 😉

I recommend cutting your vegetables small and making sure they are well cooked before blending.

Also the different cheeses really make a difference to the flavour, so make sure it will be a cheese your kids like.

#10 – Coconut Curried Sausages

Coconut Curried Sausages freeze and reheat really well.

The Coconut Curried Sausages is a very popular budget, flavour packed all-in-one meal that freezes really well. The rice is meant to soak up all that lovely sauce, so don’t worry about it being runny.

This is one meal that will feed a crowd, but watch out as they will come back for seconds. If you are watching your weight then keep this for a treat meal or serve with cauliflower rice for a LCHF option.

#11 – Healthy Carbonara Sauce

When cauliflowers are cheap, it is a great time to stock the freezer with the Healthy Carbonara Sauce exclusively found in ‘The Healthy Mix’ cookbook. Alternatively you may wish to keep frozen cauliflower in your freezer to make the sauce on a budget.

#12 – Chilli Con Carne

Who doesn’t love a flavour packed fast fakeaway dinner? The Chilli Con Carne from the cookbook ‘A Little Taste of Mexico’ really delivers on flavour and is worthwhile freezing in portions for a grab and go dinner.

The Skinnymixers Guide to Pie Makers

Everyone has been a little pie maker crazy lately in the Skinnymixers Facebook Group, since the release of the Aussie Meat Pie Filling. Yes, we are a Healthy Thermomix Recipe Group but there is no reason we can’t enjoy the occasional pie or the convenience of using the pie maker for other Thermomix Recipes.

This is a collection of the tips and information from the Skinnymixers Community. If you have any to add, please feel free to comment below. I personally have a Sunbeam Traditional Pie Maker which was about $65 (on special) or there is also a deep dish Kogan Pie Maker that Sarah uses. The Sunbeam fits 1/2 cup filling per pie. These are some of the bigger ones on the market. If you have a cheaper Kmart version they are a bit smaller and around $29.

A great tip when cutting store bought pastry, is to slightly wet the edges and join your pastry sheets to make one giant pastry sheet. Also using a cooled pie filling mix will work best. For a nice golden top, some Skinnies like to brush the tops of their pies with milk.

skinnymixer’s Low Carb Burger Bun

This is seriously the best idea! Low Carb Burger Buns in the Pie Maker

One of the easiest ways to cook Low Carb Burger Buns would have to be in the Pie Maker!

Simply switch it on and coat the bottom of each pie area as thinly and evenly as you can with the Low Carb Burger Buns mixture. Then let it cook, checking on it every 5 minutes or so. Flip when golden. The time they take to cook will vary on your pie maker. I like to leave them and go vacuum the floors or something and keep walking past to check on them. You can put the lid down, if you think it helps retain the heat.

Just keep cooking until cooked through. I find it is very difficult to burn these in the pie maker, so they don’t require too much attention.

ALToS: Tortilla de Patatas

How great do these Tortilla de Patatas look made in the pie maker!

Do you struggle with the perfect flip for the Tortilla de Patatas from the cookbook ‘A Little Taste of Spain’?

Not only is the pie maker non-stick, it will cook gently and help the tortilla set – making it easier to flip. Take advantage of the single portions and easily freeze portions of tortilla for later.

If you don’t trust your pie maker to be non-stick, you may want to grease first. But otherwise it is a case of pouring the mixture into the pie moulds, closing the lid and then flipping when it is golden underneath.

THMII: Bacon & Broccoli Fritters with Ranch Sauce

These tasty fritters are a bit of a runny mix.

Simply spoon or pour the mix into the base of the pie maker and let it cook.

Flip when golden and repeat with the rest of the mix. When cooked, drown the fritters in the most delicious Ranch Sauce you will ever taste and enjoy a tasty meal.

Almond Pancakes

Another great recipe to cook in the pie maker is the Almond Pancakes.

Dairy free and grain free, these delicious pancakes really need a non-stick surface. Sometimes your fry pans just aren’t non-stick enough, so you can turn to your other non-stick appliances such as the sandwich press or pie maker.

Once again, take advantage of the perfect circles to create even servings of the pancakes. You will need to flip the pancakes when ready.

Quick Big Breakfasts

Quick Big Breakfasts cooked in the Pie Maker

Quiches are one of the easiest things to make in your pie maker. You can add other ingredients in with an egg like in the Quick Big Breakfasts.

Some people like to add a piece of bread on the bottom as a base or even grated potato / grated sweet potato.

I like to add some extra baby spinach or maybe some leftover roasted vegetables into mine.

skinnymixer’s Big N Special Burger Sauce

With the 50 year celebration of the Big Mac filling our bellies and clogging our hearts, I thought it was the perfect time for me to tackle reverse engineering the Golden Arches special sauce. Moving towards a healthier lifestyle doesn’t mean that you have to miss out on the essence of your favourite treat meals – I recommend whipping up a batch of the Breakfast Sausage Patties in The Healthy Mix II and serving as a salad, or even on my Low Carb Burger Buns. Ingredients
  • 60 g dill pickles, roughly chopped
  • 10 g honey
  • ½ Tbsp white vinegar
  • 1 egg yolk, room temperature
  • 1 heaped tsp Dijon mustard, room temperature
  • 1 tsp onion powder
  • 1 tsp ground sweet paprika
  • ¼ tsp white pepper
  • 125 g avocado oil from Costco or Cobram light tasting olive oil
Instructions
  1. Add pickles to mixer bowl, chop for 3 sec/speed 5/MC on. Scrape down and repeat if necessary.
  2. Insert butterfly. Add rest of ingredients, except oil, to mixer bowl and combine for 1 min/37 degrees/speed 3/MC on.
  3. Set timer for 3 min/37 degree/speed 3 and very slowly drizzle in oil, taking the full three minutes to do so. This sauce will thicken in the fridge if desired. If you store it in a sterilised glass jar, it will keep in the fridge for up to 5 days.

skinnymixer’s Roasted Seed Butter

Seed butter is difficult to come by in the supermarkets, and it’s nearly impossible to find one that tastes great. This is a delicious nut-free substitute for nut butters in smoothies, as a condiment or binding agent in some gluten free baking. This is also a great lunchbox snack or spread, as it is school friendly. I hope you enjoy it! Love Nik xx 

skinnymixer's Roasted Seed Butter

Serves: 14
Ingredients
  • 200 g hulled sunflower seeds
  • 25 g hulled pepitas
  • 25 g sesame seeds
  • 20 g light tasting oil (such as olive oil, avocado oil)
  • 2 tsp xylitol (or preferred sweetener, optional)
  • ½ tsp vanilla bean extract or paste
  • ¼ tsp cinnamon powder (optional)
  • 1 pinch salt
Instructions
  1. Pre heat oven to 150°C. Roast your seeds for 15 mins or until golden brown, stirring half way through to ensure even roasting.
  2. While seeds are hot, process them for 1 min/speed 9/MC on. Scrape bowl down.
  3. Add remaining ingredients and process for 30 sec/speed 7/MC on. Scrape bowl down. Repeat twice or until desired consistency is reached.
