skinnymixer’s Beetroot Relish

This Beetroot Relish is super versatile; you can serve it with a big brekky (amazing with my Breakfast Sausage PattiesSmashed Avo in THMII), on a juicy burger or as part of a cheese platter spread as featured in our Skinnymixers Entertaining Guide. Made healthier by significantly reducing the sugar, using unrefined sugar and apple cider vinegar – I think you will have a new favourite condiment 😉 Love Nik xx

skinnymixer's Beetroot Relish

Ingredients
  • 500 g fresh beetroot, peeled and cut into 3cm cubes
  • 1 medium red onion, peeled and quartered
  • 1 medium red apple, cored, quartered
  • 70g apple cider vinegar (take care not to use double strength!)
  • 50g coconut sugar
  • 1 tsp yellow mustard seeds
  • ¼ tsp all spice
Instructions
  1. Add beetroot, onion and apple to mixer bowl. Chop for 3 sec/speed 6/mc on or until finely chopped but not mush.
  2. Add remaining ingredients, including 400g water, and cook for 45 min/steaming temp/speed 1/mc off. Put the simmering basket over the hole to avoid making a mess of your kitchen.
  3. When the relish is finished cooking, if you prefer a runnier texture add a little more water. Allow to cool completely before putting into sterilised jars. If you use a sterilised jar and clean spoon/knife for serving this should last several weeks in the fridge.

Skinnymixer’s All in One Sausage Dinner

I have been so busy lately with moving house and making sure that the kids are well settled, that I have only just been able to actually cook something in my kitchen ! In fact, we’ve been so flat out moving that I am actually blogging this at 39,003 feet in the air – on our way to a top secret location. All will be revealed on the 5th of September.

This all-in-one sausage Thermomix recipe is fantastic for a quick, family pleasing meal and you can easily reduce or increase the amount to suit as well. Feel free to experiment with using white rice instead of potato, other types of meat and vegetables too. I hope you enjoy it, Love Nik Xx

Skinnymixer's All in One Sausage Dinner

Ingredients
  • 1 garlic clove, peeled
  • 400 g red onions, peeled, quartered
  • 20 g olive oil
  • 20 g tomato paste
  • 1 tbsp beef stock concentrate + 500 g water (or 500 g liquid beef stock)
  • 500 g potato, unpeeled, cut in to 3 cm cubes
  • 500 g sausages of choice
  • 200 g frozen peas & corn
  • 1-2 tbsp corn flour or thickener of choice
  • 30 g cream
  • 30 g butter
  • ½ tsp salt
  • pinch of pepper and nutmeg
Instructions
  1. Add garlic and onion to mixer bowl, chop for 3 sec/speed 5/mc on. Scrape bowl down.
  2. Add oil and cook for 5 min/100 degrees/speed 1/mc on.
  3. Add tomato paste, stock concentrate and water. Insert simmering basket and put potatoes inside. Layer sausages in deep steaming tray to ensure even steam flow. Put the deep steaming tray in place and cook for 25 min/steaming temperature/speed 3. You can also add hard vegetables to cook at this stage.
  4. Carefully remove potatoes and simmering basket and set aside. Add corn flour to mixer bowl. Carefully move sausages around, put peas & corn on flat steaming tray in place and cook for a further 5 min/steaming temperature/speed 3.
  5. When sausages and sauce are cooked, set them aside.
  6. Without washing bowl, put potatoes, cream, butter, salt, pepper and nutmeg and mash for 3 sec/speed 4/mc on.
  7. Season gravy to taste and serve.

That’s me at the opening of the New York Stock Exchange!

If you haven’t yet heard the news, Skinnymixers WON one of the grand prizes as part of the Shopify “Build a Bigger Business” competition !!!

Shopify have treated us to the most mind blowing experience in New York – from mentoring with some of the worlds greatest, to me ringing the bell at the New York Stock Exchange and seeing our company logo up on the bright lights of Time Square.

The experience doesn’t end here, it’s actually only just begun… tomorrow we fly to Fiji to stay at Tony Robbins resort (Namale) where we will take advantage of one on one mentoring with Tony and quite literally true heroes of the entrepreneurial world.

We can’t wait to get back and share our experiences with you all… and to truly take advantage of this opportunity to build Skinnymixers in to a bigger, better service provider

Guest Recipe: Tanya’s No Fail Creamy Cauliflower Mash

This recipe is Low Carb Healthy Fat (LCHF) compliant and is a great side to serve with my Chicken Cacciatore or Beef Bourguinon. Cauliflower mash is a great low carb alternative and this recipe tastes just like regular mashed potatoes!

Serves: 4
Ingredients
  • 500g cauliflower florets, roughly chopped
  • 40g Butter
  • 75g Philadephia cream cheese, softened, (see tips for alternatives)
  • salt and pepper to taste
Instructions
  1. Place chopped cauliflower into TM bowl and turbo pulse 3-4 times.
  2. Scrape down sides of bowl.
  3. Add butter and cook for 12 min/100 deg/speed 1/MC On
  4. Add cream cheese, salt and pepper and blend for 30 sec/speed 7/MC On
Notes
**The cauli mash freezes well.

**DOUBLING THE RECIPE: increase cooking time to 15 minutes and double all ingredients (particularly recommended if using to top a pie)

**Cream cheese can be substituted with cooking cream or coconut cream (for a dairy free version). Sour cream and milk also both work well.

**Different flavours can be added – try adding garlic, chives or parmesan cheese before blending for an added burst of flavour.

Guest Recipe: Lalas Kitchen’s Creamy Lemon Butter Chicken

The Creamy Lemon Butter Chicken from Lala’s Kitchen is one of those recipes that you will want to add to your regular meal plan.

This recipe is perfect for anyone on a Low Carb Healthy Fat (LCHF) diet, but also for anyone that loves a full flavour sauce that is amazing with Skinnymixer’s Silky Sweet Potato Mash. A massive thank-you to Karla D’Lima (Lala’s Kitchen) for letting us feature this delicious Thermomix recipe whilst Nik is away doing research & development for an upcoming cookbook in Europe (lucky girl!!!). If you haven’t yet checked out Karla’s other recipes like the Chunky & Creamy Beef Curry , Chicken & Sweet Corn Soup or Calderetta (Filipino Beef Stew) then I strongly suggest you give them a go!

This is quite a popular recipe in the Skinnymixers Facebook Group and I thought I would compile a list of tips from other Skinnies 😉

  • Serve with Nik’s Silky Sweet Potato Mash
  • Make it dairy free using coconut cream & coconut oil/ Nuttlex
  • Add some risoni into the pan when baking to soak up some of the delicious sauce.
  • Add different vegetables into the tray to bake in the sauce… delicious with broccolini, cherry tomatoes, beans and “apparently” garlic fried mushrooms.
  • Freeze leftover sauce in ice-cubes to make some delicious Creamy Lemon Butter LCHF Chicken Kievs.
  • You can use any piece of chicken (breast, drumsticks, thighs, boneless or boned) or even salmon for a seafood option
  • Add a tablespoon of arrowroot / cornflour for a thicker sauce
  • Add a cup of rice into the bottom of the dish with 1 cup extra liquid stock.

Guest Recipe: Lalas Kitchen's Creamy Lemon Butter Chicken

Ingredients
  • 2 tsp chicken stock concentrate
  • 200 g water
  • 3 garlic cloves, peeled
  • 60 g butter
  • 1-2 Tbsp paprika
  • Salt and Pepper to taste
  • 6 - 8 chicken thigh cutlets (with bone left in)
  • 120 g double thickened cream
  • 30 g grated parmesan cheese
  • juice of one lemon (40g)
  • 1 tsp dried thyme
  • 60g baby spinach, roughly chopped (but I left mine whole!)
Instructions
  1. I highly recommend that you guys give this recipe a go, it is so delicious and full of flavour.

Thank you to Shirley Thexeira who lives in Malaysia, for letting us share this delicious authentic Malay Chicken Curry Thermomix Recipe. If you love the Skinnymixer’s Nyonya Chicken Curry then this recipe is a must try. Tanya Halse from Aussie TM5 Thermomixer uses wingettes and drumettes in this recipe. If you are using chicken with bones in your Thermomix, we don’t recommend leaving your Thermomix unattended.

Ingredients
  • 700 g chicken thigh diced or chicken with bone, marinated with 2 Tbsp Babas Malaysian meat curry powder & a pinch of salt.
  • 6 cloves garlic, peeled
  • 180 g brown onions, peeled and quartered
  • 1 tsp fennel seeds
  • 2 sprigs curry leaves
  • 2 star anise
  • 2 cinnamon sticks
  • 4 cloves
  • 5 cardamom pods, bruised
  • 30 g olive oil
  • 100 g liquid chicken stock (or 100 g water with 1 tsp chicken stock concentrate)
  • 4 medium sized tomatoes, quartered
Instructions
  1. Add garlic and onion to mixer bowl. Chop 2 sec/speed 5/ MC on.
  2. Add all the spices & oil. Sauté 4 min/steaming temp/soft speed/MC off.
  3. Add marinated chicken & liquid chicken stock. Cook 16 min/steaming temp/reverse/soft speed/MC on.
  4. Add the tomatoes. Cook 2 min/steaming temp/reverse/soft speed/MC on.

Note:
You can add cauliflower & broccoli in the last 4 mins of cooking.

skinnymixer’s Pina Colada Sorbet

Thermomix Pina ColadaPina Colada Sorbet was one of the first recipes I created for the Healthy Mix II. While we loved the recipe in development, the team felt it was a great recipe to give away for free on the blog. Pina Colada was the first alcoholic drink I ever had legally, on my 18th birthday and it is my go to cocktail on holidays… this sorbet version is amazing on a hot day by the water, made nutritious with the addition of avocado and can be made naughty by adding a splash of your favourite alcohol. Ingredients
  • 400 g frozen coconut milk, in ice cube trays
  • 300g ice
  • 2 x 440 g tin pineapple pieces, drained
  • 20g fresh lime juice
  • 1 flesh of ripe avocado (optional for nutrition)
  • Optional: splash of white rum
Instructions
  1. Add all ingredients to mixer bowl. Blend for 2 minutes/speed 9 using your machine approved spatula to properly blend.
Notes
If you would like a sweeter sorbet you can add your preferred sweetener to taste or even add a banana to the mix.

If you prefer a thicker sorbet you can add more ice when blending, to your desired consistency.

A delicious zesty chicken dish that is perfect for a summer BBQ from the amazing crew at ‘The 4 Blades’ in the ‘The Kitchen Garden’ Issue. We love the combination of all these different citrus varieties. It really adds a kick to the dish. Serve this with the Skinnymixer’s Appleslaw for a delicious and easy dinner. You can easily use this marinade with chicken thighs, tenderloins or even a whole chicken if you prefer.

Ingredients
  • 5 spring onions, roughly chopped
  • 2 garlic cloves, peeled
  • 4 Tbsp parsley
  • 2 limes, zest and juice only
  • ¼ orange, zest only
  • 1 orange, juice only
  • 1 lemon, juice only
  • 40 g olive oil
  • 2 tsp salt flakes
  • 4 chicken breasts
  • salad, to serve
Instructions
  1. Add the spring onions, garlic, parsley, lime zest (from 2 limes) and orange zest (from ¼ orange) to the bowl. Blitz Speed 9 / 4 seconds / MC on. Scrape down sides.
  2. Repeat Speed 9 / 4 seconds / MC on. Scrape down sides.
  3. Repeat again Speed 9 / 4 seconds / MC on. Scrape down sides.
  4. Add the lime juice (from 2 limes), orange juice (from 1 orange), lemon juice (from 1 lemon), oil and salt to the bowl. Mix Speed 9 / 5 seconds.
  5. Place the chicken breasts into a snap lock bag and add ¾ of the marinade. Seal and shake to coat well. Marinate for 1 hour.
  6. Fire up the BBQ.
  7. Grill the chicken for 6-8 minutes on each side until cooked through, basting regularly with the remaining marinade.
  8. Serve with salad.

  • 80 g desiccated coconut plus extra for rolling
  • 2½ Tbsp of psyllium husk

  1. Add sunflower seeds to mixer bowl. Mill for 10 sec/speed 9.
  2. Add apricots, mix 10 sec/speed 8. Scrape down mixer bowl.
  3. Add the remaining ingredients and mix 30 sec/speed 6.
  4. Roll into balls and then roll in coconut.

It is that time of year again where everyone’s attention turns to ‘What should I make for Christmas?’. Well if you haven’t already found inspiration from ‘The Skinnymixers Guide to Entertaining’, then hopefully this meal plan will help. We’d love if you could comment below with any other special dishes you are making for the festive season.

Recipes to make ahead to help keep Christmas Cheery…

  • skinnymixer’s Chilled Mulled Cider – Struggling to get into the Christmas Spirit? This refreshing Christmas cocktail will get your Jingle Bells started.
  • skinnymixer’s Cheese Log – This cheese log is truly a standout and very adaptable to your own tastes. I’ve never actually liked the taste of blue cheese before, but if you use a mild blue cheese it is something special.
  • skinnymixer’s Christmas Brownies – Making a batch of Christmas Brownies will help you indulge without over-indulging (unless you eat the whole tray – which is a strong possibility!) Adjust these Christmas Brownies to your own family’s preference.
  • skinnymixer’s Mushroom Pâté – I’m sorry but this is not one I can personally recommend… I haven’t quite got around to making this dish yet, but I’m told on good authority that this recipe is lovely for mushroom lovers…

  • THMII: Moroccan Quinoa Salad – I know this salad has been creeping onto quite a few Skinnies Christmas Menus already. This is a knockout salad that you can make the day before.
  • THMII: Prawn Cocktail Salad – I have personally been planning this salad for my Christmas Lunch for nearly a year. You can make the amazing Prawn Cocktail Sauce ahead of time and serve with fresh prawns, grilled salmon or any seafood that you like.
  • THM: Chicken Caesar Salad – So you may not want to serve it with Chicken, but this Caesar Salad will be extremely popular with your guests. The crunch from the bacon and cashews, combined with the insanely delicious dressing…. seriously drool worthy.
  • skinnymixer’s Red Pesto Chicken Salad – This salad is another show stopper and can be made ahead. I personally like to use roasted sweet potato and make it ahead of time. Keep some of the red pesto aside for cheese platters or to mix through with cream cheese as a dip.

With Christmas around the corner, I thought it was time to create a healthy table snack. These can be prepared ahead of time and put out in little serving bowls, as part of a cheese platter, wrapped up for a gift or as an excuse to eat something yummy! Love Nik xx

skinnymixer's Nik's Nuts

Ingredients
  • 1 x raw egg white
  • 50 g raw pecans
  • 50 g raw macadamia nuts
  • 50 g raw almonds
  • 50 g raw cashews
  • 30 g granulated sweetener of choice (I used Xylitol, but any granulated sugar will work)
  • 1 tbsp cinnamon powder
  • 1 tsp salt flakes
Instructions
  1. Preheat oven to 150°C fan-forced.
  2. Insert butterfly into a clean, dry mixer bowl. Add egg white and whip for 1 min/speed 4/MC on.
  3. Add remaining ingredients and combine for 15 sec/speed 2/MC on.
  4. Remove almond mixture to a baking tray, spread in a single layer. Bake in the oven for 10-15 mins or until golden brown, carefully stirring half way through. Allow to cool completely before serving.
Notes
Store in an airtight container for up to 1 week.

skinnymixer’s Black Forest Trifle

Recently I asked the Skinnymixers Facebook Group which dessert they would want to see in time for celebrating Christmas… the resounding request was ‘TRIFLE!’.

I have always wanted to do a trifle, but the idea of it seemed so against what Skinnymixers is about – after all, I had only ever made a full of sugar, preservatives and additives cheats trifle before. This Black Forest version is gluten free, very low in unrefined sugar and teaches you how to make cherry jelly from scratch – so while it is definitely still a *treat*, it is one you can enjoy with much less guilt. Feel free to play around with the layering and presentation depending on how your family likes it… Love Nik xx

Please note: This recipe needs to be prepared the day before for best results. It is not an overly sweet trifle, if your family have a sweet tooth you can up the sweetener.

Chocolate Torte Ingredients
  • 250 g | 8.8 oz raw almonds
  • 200 g | 7 oz 70% dark chocolate, roughly chopped
  • 100 g | 3.5 oz coconut oil, plus extra to grease
  • 50 g | 1.8 oz coconut sugar (or preferred sugar)
  • 1 tsp vanilla bean paste or extract
  • pinch of salt
  • 5 large eggs
Jelly Ingredients
  • 600 g water
  • 500 g frozen or fresh, pitted cherries
  • 20 g coconut sugar (or preferred sugar)
  • 2 tbsp powdered gelatine (I used Great Lakes)
Cream Ingredients
  • 600 g thickened cream
  • 150 g | 5.3 oz marscapone
  • 2 tsp vanilla extract
Custard Ingredients
  • 1 litre milk
  • 4 whole eggs
  • 1 tsp vanilla extract
  • 50 g coconut sugar (or preferred sugar)
  • 50 g corn flour or tapioca
  • 30 g cacao powder
  • large pinch of salt
Garnish Ingredients
  • grated chocolate
  • fresh cherries
Instructions
Assembly Instructions
  1. Prepare the torte, jelly, custard and cream the day before you wish to serve this trifle - it takes a while for each element to set. Please note, if you don't like your cake to be jelly soaked you can set the trifle in the order of jelly, custard, cake then cream.
  2. Cut the torte in to small squares and layer the bottom of a trifle bowl evenly.
  3. Place retained 250 g cherries over the top of the cake and pour chilled jelly over the base of the trifle bowl. Place in the fridge until completely set - this takes about 2-3 hours.
  4. Once the jelly has set, spoon over the custard and then top with cream. Allow to chill in the fridge for 2 hours or until needed for serving.
  5. Grate chocolate over the top and serve with fresh cherries.
Torte Instructions
  1. Grease and line a medium sized rectangle baking dish. Preheat oven to 150°C or 300°F fan forced.
  2. Place almonds in to a clean, dry mixer bowl, mill for 10-20 sec/speed 8/MC on, until almonds are a fine ground. Set aside.
  3. Without cleaning the bowl, add the dark chocolate and mill for 10 sec/speed 8/MC on.
  4. Scrape bowl down, ensuring to loosen the chocolate from the bottom of the bowl. Add coconut oil, coconut sugar, vanilla and salt to mixer bowl. Melt for 3 min/50°C or 120°F/speed 2/MC on.
  5. Insert butterfly and set timer for 1 min/speed 2.5/MC off. Slowly add eggs one at a time.
  6. Set timer for 40 sec/speed 3/MC off. Slowly add reserved almond meal to mixture.
  7. Pour mixture in to prepared dish and place into the middle of your oven.
  8. Bake for around 25 min or until cake is fully set. Grain free baking is dependent on individual ovens. Allow the cake to cool completely.
Jelly Instructions
  1. Add water, 250 g cherries (set aside 250 g to use in the jelly whole) and coconut sugar to clean mixer bowl. Cook for 10 min/100 degrees/speed 1/MC off.
  2. Blend for 1 min/speed 9/MC on.
  3. Mix gelatine in to a bowl with ¼ cup of cool water. Add to mixer bowl and blend for 1 min/speed 3/MC on. Allow to cool in fridge for 1 hour before assembly of trifle.
Cream Instructions
  1. In a clean mixer bowl, insert butterfly and add cream, mascarpone and vanilla. Whip for around 1 min/speed 3/MC on or until soft peaks form - take care not to over whip your cream into butter. Set aside in fridge until assembly.
Custard Instructions
  1. Without cleaning the bowl from making the cream, add all custard ingredients and cook for 15 min/90 degrees/speed 3/MC on or until custard is thick. Set aside in fridge with a layer of glad wrap over the top of the custard to cool before assembly.

skinnymixer’s Watermelon Gin Fizz

With New Years Eve approaching, it seemed like the perfect time to work on a cocktail recipe for the blog. 

Gin or Vodka based drinks are the “skinniest” and healthiest choice, of you are choosing to drink alcohol. While this recipe does still have sugar in it, it is significantly reduced compared to the 1 cup of sugar I have seen in similar recipes! Sarah and I enjoyed drinking this for breakfast last week, and certainly found it sweet enough. You can also enjoy this as a virgin cocktail without the alcohol, as well as frozen as ice blocks. skinnymixer’s Watermelon Gin Fizz

Serves: 2 litres
Ingredients
  • 100g sugar of choice
  • 100g water
  • 30g fresh basil
  • 800g seedless watermelon, cut in to chunks with the green and white skin removed
  • 200g ice cubes
  • 10g fresh lime juice
  • 200g Gin (or vodka or omit for mocktail)
  • 500g soda water
Instructions
  1. Add sugar, basil and 100g water to mixer bowl. Cook for 10 min/100 degrees/speed 1/MC off. Pick out or strain basil off and allow syrup to cool for 5 mins.
  2. Add watermelon, lime juice and ice to mixer bowl with the basil syrup. Blend for 1 min/speed 9/mc on.
  3. Add gin and soda water and blend for 10 sec/speed 3/mc on.

Bombay Potato Salad has been requested by two of my favourite Skinnies – Gem & Katie – for a year now!

I think this will be a hit for summer bbq’s and parties and it is definitely a healthier spin on commercially made Bombay Potato Salad thanks to using yoghurt, in addition to no additives or preservatives. I have also provided instructions on how to make this a low carb salad using cauliflower. I hope you enjoy it! Love Nik xx

Ingredients
  • Small handful of fresh continental parsley or coriander
  • 10 small fresh mint leaves
  • 150 g Greek yoghurt (or whole egg mayo for dairy free)
  • 10 g olive oil
  • 1 tbsp babas curry powder (increase if you want)
  • 10 g dijon mustard
  • 10 g white vinegar
  • ½ tsp salt
  • 700 g waxy potato, cut in to medium chunks (such as kipfler) or cauliflower florets for low carb
  • sliced spring onion to serve
Instructions
  1. Add fresh herbs to a dry mixer bowl. Chop for 2 sec/speed 8/MC on. Scrape bowl down and repeat if necessary.
  2. Insert butterfly and add remaining ingredients, except for potato and spring onion. Blend for 10 sec/speed 3/MC on. Scrape out sauce and set aside in the fridge.
  3. Without washing the bowl, add 300 g water and insert internal simmering basket. Put potato in the basket and cook for 17 min/steaming temperature/speed 3/MC on or until potato is just cooked but still firm. If using cauliflower, cook for 13 mins.
  4. Allow potato to cool completely before stirring through sauce and seasoning to taste with salt and pepper. You will get the best results if you refrigerate the potato salad for a few hours before serving. Top with spring onion before serving.

Our kids, Leilani (6) and Patrick (5), LOVE the choc chip oat slice bars I created last year and it has been on my list to create a chocolate free version to mix it up a bit and reduce the sugar content a bit. Michael and I were talking about what flavour combinations to do for the kids, and he suggested dried apple… then I said with cinnamon… and a great idea was born! I think these apple and cinnamon flavoured bars are even better than the original, which is saying something! Feel free as always to play around with the flavours. These freeze well and are great as small bites to pop in to lunch boxes or for an on the go breakfast option. Love Nik xx

  • 300 g whole traditional oats
  • 80 g coconut milk (or milk of choice)
  • 50 g sugar of choice (I used coconut)
  • 3 whole eggs
  • 1 tsp cinnamon powder
  • pinch of salt
Instructions
  1. Preheat oven to 190°C or 375°F, and lightly grease + line a medium sized slice tray.
  2. Add dried apple to a dry mixer bowl. Chop for 3-4 sec/speed 6/MC on or until finely chopped.
  3. Add oats to the apples and chop for 3 sec/speed 5/MC on.
  4. Add remaining ingredients and combine for 15 sec/speed 3/MC on.
  5. Press mixture into prepared tin and bake in the oven for 15 minutes or until golden brown. Allow to cool before cutting.
Notes
Keep in the fridge in an airtight container.
Freezes and defrosts well.
