Soft Food Recipes Thermomix

Hi! It’s Sian here…

This week one of my children had a fall and was put on a strict ‘Soft Foods’ only diet by the dentist for the next week. We actually get asked quite a bit in the Skinnymixers group for soft food recipes for people who have had their wisdom teeth out or perhaps gastric sleeve surgery. Hopefully this healthy recipe list for ‘soft foods’ in the Thermomix, will help next time it is needed.

Ok so the idea of eating dip off a spoon may not appeal to you. But if you’ve been living off a diet of soups, yoghurt, jelly and mashed vegetables for a few days then eating some full flavour snacks might be just what the doctor ordered.

Soups

Healthy Thermomix Soups

The Thermomix makes the most amazing soups. For the chunkier style soups, simply remove any bones or non-edibles and blend by gradually increasing to Speed 9 with your MC ON. If you need a really smooth consistency, try adding cauliflower, potato or pumpkin during the cooking process.

Smoothies

TIP: When making your own smoothies or ‘whole’ juice in the Thermomix. Add your vegetables and fruit with ice first. Blitz together like a sorbet with a little liquid. Then slowly add your chilled water, coconut water or other liquid through the MC hole whilst it is blending. The ice will help breakdown the vegetables/fruit and will give you a smoother consistency for your green smoothies.

So beyond cooking a Thermomix recipe and then blending at the end (the Greek Simple Stew is Foodie Baby’s favourite puree to eat)… these meals lend themselves to a softer texture. With a little tweaking, you won’t just be eating pureed food.

skinnymixer’s Marinated Feta

Marinated Feta is one of my favourite ways to eat cheese and although I am dairy intolerant, I still make an allowance for feta with my bacon and eggs occasionally. 

The only issue I have with commercial marinated feta is that it is almost always vegetable or canola oil used, which is definitely not something I can make an allowance for in my diet due to inflammation. This recipe uses olive oil, and while it will solidify in the fridge you can simply pop it on the bench to warm before serving. Feel free to experiment with marinating flavours, but keep in mind that raw garlic and keeping cooked garlic in oil carries a botulism risk. Love Nik xx

Ingredients
  • 300 g feta of choice, cubed, pat dry with kitchen paper (I used Bulgarian)
  • 200 g light flavoured olive oil
  • 2 garlic cloves, peeled
  • 3 sprigs of fresh rosemary
  • 5 sprigs of fresh oregano
  • 2 sprigs of fresh thyme
  • ½ tsp peppercorns
  • 1 medium sized jar, or 3 small jars - sterilised (see notes)
Instructions
  1. Add olive oil, garlic, fresh herbs and peppercorns to mixer bowl. Cook for 20 min/95 degrees/speed 1/MC on.
  2. Allow the oil to cool completely and discard the garlic.
  3. Put feta into sterilised jar and top with cooled oil. Allow it to marinate in the fridge for at least 24 hours before eating. Store in the fridge and use within the week.
Notes
To sterilise jar: add 500 g water to mixer bowl. Heat for 10 min/steaming temperature/speed 2/MC on. Arrange jar(s) and lid(s) upside down in deep steaming tray. Put in place and steam for 5 min/steaming temperature/speed 2. Allow to cool completely before using.

skinnymixer’s Chilli Mussels

Michael and dad LOVE mussels, and with Easter around the corner I thought it was a perfect excuse to get back in to the kitchen and cooking for this amazingly supportive community. Cooking your mussels in your Thermal cooker is not only really quick, but they turn out plumper and less rubbery according to my family (ill take their word on this one…) – This has a great kick to it, but you can always reduce the chilli content for a more mild version. I hope you enjoy this recipe as much as I did developing it after a little recovery break, Love Nik xx

skinnymixer's Chilli Mussels

Ingredients
  • 1 x medium brown onion, peeled, quartered
  • 3 cloves of garlic, peeled
  • 3 fresh long red chillies, roughly chopped (you can deseed them and reduce the amount for mild)
  • 30 g olive oil
  • 400 g tin of diced tomato (I recommend Ardmona)
  • 30 g tomato paste
  • 1 tbsp stock concentrate
  • 100 g water
  • 1kg fresh mussels, debearded
to serve
  • handful of fresh continental parsley, roughly chopped
  • 2 tsp capers (optional)
Instructions
  1. Add onion, garlic and chilli to mixer bowl. Chop for 3-5 sec/speed 5/MC on. Scrape bowl down.
  2. Add remaining ingredients, except for the mussels and serving ingredients. Cook for 10 min/steaming temperature/speed 1/MC off.Put the deep steaming tray in place to avoid splatter in your kitchen.
  3. Put the mussels into the deep steaming tray and cook for a further 7 min/steaming temperature/speed 2 or until mussels are opened and cooked.
  4. Stir through the sauce and mussels into a serving bowl, top with parsley and capers and enjoy!
Notes
You can swap out the mussels for firm fish, prawns or crab as well for an alternative seafood 🙂

skinnymixer’s Porcini Salt

I was once gifted a gorgeous jar of Truffle Salt from a dear friend, and loved putting it on my eggs and fried mushrooms for breakfast… This is a great way to seriously boost the flavour of dishes, season vegetables and meat and to make fairly tasteless button mushrooms taste amazing – just fry in a little butter and finish with the Porcini Salt! You can find dried porcini mushrooms at quality fruit & vegetable grocers, markets and online.

Ingredients
  • 40 g dried porcini mushrooms
  • 80 g rock salt
Instructions
  1. Add porcini mushrooms to a very dry mixer bowl. Mill for 30 sec/speed 9/MC on.
  2. Add rock salt to mixer bowl. Mill for 30 sec/speed 9/MC on.
  3. Store in a jar in the fridge for at least 12 months.

Meal Plan: Freezer Stash for Quick Meals

There have been a few posts in the group recently from Skinnymixer friends who get together and cook up a huge freezer stash between them. Since I don’t have enough room to have a big stash of pre-prepared meals, I like to keep at least one shelf in my freezer full of recipe bases, spice mixes and pastes so that I can buy meat and veg fresh but since I have a good part of the prep work already done, dinner is still a relatively quick fix.

Clear a spot on your kitchen bench for a second Thermie, set aside a few hours for a good catch-up with a fellow Skinnymixer and get a “simmer sauce shelf” sorted for both of you!

These are some of the staples I like to have on hand, and I’ve put together a shopping list for you to make them all!

Make the dry spice mixes first then move onto the wet ones without washing the bowl – one of the most loved lines in Skinnymixer recipes 😉


Mexican Spice Mix

I double or triple it and freeze in a snap lock bag to keep it fresh.  A triple batch of this per family involved in the prep session would be ideal.

These are some of the ways I use it:

  • To add to mince for tacos (2 tablespoons per 500g meat)
  • To sprinkle / rub on chicken breasts which I either:
  • As a sprinkle for homemade wedges

Mexican Crio Chicken

Double this per family so you have at least two meals each out of it.

This makes amazing wraps when paired with chipotle mayonnaise and served with appleslaw and chipotle chips.

Za’atar

Double this per family so you have at least two meals each out of it. You can save on space and prepare the dry spices so you cut down on the toasting / cooling step and freezing in portions. When I go to use it I blend the garlic clove in with the oil and lemon. It also works making up the whole thing into a paste and freezing with the chicken marinating.

There is so much flavour in this spice mix, and I serve it with a simple green salad with a vinaigrette dressing, or a potato salad.

Chicken Kiev & Chicken Parmie Prep

Skinnymixers Chicken Parmie

Having Chicken Kiev and Chicken Parmie crumb mixtures ready in the freezer makes these into a quicker meal option for busy nights, so I like to have a couple of batches of these frozen to save myself a bit of time.  I make the garlic butter and roll into logs in cling wrap before freezing, which makes it easier to form the chicken kievs around slices of it and minimises leakage.  The parmie sauce freezes well too!

Red Pesto

Double this per family, and freeze to use in one of many ways:

  • Scrolls, Pizza Sauce or even a toasted sandwich with cheese!
  • Savoury crepes (red pesto, ham, shredded cheese, tomato)
  • Use with shredded chicken
  • Eat it as dip, or also mix with cream cheese
  • Kievs (pesto, spinach & cheese), Parmies, Chicken Rissoles
  • Roast lamb crust
  • Stir through Pasta or a Pasta bake (with chicken)
  • Mix through Lunchbox Chicken Loaf

You can make the spice mixes, crumb mixtures, garlic butter and parmie sauce in the order listed without washing the bowl!  Give it a wash before starting on the curry pastes and a quick rinse between them unless you’re really good at scraping them out 😉

This all purpose BBQ Marinade was actually reserved for the new book, ‘The Healthy Mix II’. All Purpose BBQ Marinade

Ingredients
  • 200 g passata
  • 100 g tomato paste
  • 20 g lemon juice
  • 10 g Worcestershire sauce or Tamari / Coconut Aminos
  • 5 g paprika
  • 1 tsp onion powder
  • 1 tsp garlic powder
  • 1 tsp cumin powder
  • 1 tsp xylitol or preferred sweetener
  • 1 tsp salt
  • ½ tsp freshly cracked black pepper
  • ½ tsp instant coffee granules or cacao powder
Instructions
  1. Add all ingredients to mixer bowl, blend for 30 sec/speed 6/MC on. Scrape bowl down.
  2. Cook for 5 min/steaming temperature/speed 1/MC off. Put the simmering basket over the mixer lid to prevent kitchen mess.
  3. Allow to cool completely before marinating 1-1.5 kg BBQ meat of choice overnight or a minimum of 8 hours for the best results. I used pork rashers but it would work well with chicken or beef too.

skinnymixer’s Cherry Pie

I asked Michael what I should write for the opening line of this post. He said “Mmm, this must be where pies go when they die.”

If you’re as excited as we are for the next season of Twin Peaks coming out on the of 22nd May… or you just want to cook a delicious but healthy dessert – this is the cherry pie for you! I hope you enjoy it… perhaps with a hot cup of Joe. b

Crust Ingredients
  • 150 g blanched almond meal
  • 60 g coconut oil
  • 20 g xylitol or preferred granulated sweetener
  • 1 egg
  • pinch of salt
Filling Ingredients
  • 500 g frozen, pitted cherries
  • 1 tbsp tapioca flour
  • 20 g xylitol or preferred sweetener
Instructions
  1. Pre-heat oven to 180°C and grease + line a small pie dish.
  2. Add all crust ingredients to mixer bowl and process for 5 sec/speed 6/MC on.
  3. Take the crust dough and press ¾ of the mixture in to the prepared dish. Put it in the oven for 10 mins.
  4. Take the remaining crust dough and place it on glad wrap. Press it out in to a square and pop it in the freezer - this will be used to top off the cherry pie.
  5. In the mean time, without washing the bowl, put the filling ingredients in and cook for 10 min/100 degrees/speed 1/MC off or until desired consistency is reached.
  6. Put the prepared filling mixture on to the base. Take the crust dough from the freezer and cut in to 6 strips. Lay the strips over the pie and bake for a further 10 mins or until golden brown.

skinnymixer’s Sticky Date Pudding with Caramel Sauce

While I LOVE sticky date pudding, I have found that since I have reduced the amount of sugar in my diet I find it too sickly sweet to actually enjoy… until now! I find this recipe is the epitome of what Skinnymixers has always been about for me – turning recipes that we all know and love into healthier, but still as amazing, versions. I don’t think you will miss your ‘old’ recipe for sticky date after trying mine 😉 Love Nik xx

skinnymixer's Sticky Date Pudding with Caramel Sauce

Ingredients
Sticky Date Ingredients
  • 260 g raw almonds
  • 250 g medjool dates, seeds removed
  • 1 tsp bicarbonate soda
  • 80 g light tasting olive oil
  • 3 eggs
  • 2 tsp vanilla bean paste or extract
  • ½ tsp baking powder
  • pinch of salt
Caramel Sauce Ingredients
  • 300 g cream or coconut cream for dairy free
  • 80-100 g coconut sugar
  • 2 tsp vanilla bean paste or extract
  • ½ tsp salt
Instructions
  1. Pre heat oven to 180 °C fan forced.
  2. In a dry mixer bowl, add 130 g of the almonds and mill for 9 sec/speed 9/MC on or until finely milled. Set aside.
  3. Add remaining almonds and mill for 9 sec/speed 9/MC on or until finely milled. Set aside with the other almond meal.
  4. Without washing the bowl, add the dates and chop for 10 sec/speed 5/MC on.
  5. Add 150 g water and cook for 5 min/100 degrees/speed 1/MC on.
  6. Add bicarb soda and mix for 5 sec/speed 3/MC on. Let it sit while you lightly grease either a 12 portion muffin tray or standard cake tin.
  7. Add ingredients to date mixture in this order: almond meal. olive oil, eggs, vanilla, baking powder and salt and mix for 10 sec/speed 5/MC on.
  8. Spoon mixture evenly in to prepared dish and bake for 25 mins or until golden brown and a tooth pick comes out clean. This may take longer if you are baking it in a cake tin.
  9. When the puddings are cooked, remove them from the oven and in a clean mixer bowl, add caramel sauce ingredients and cook for 8 min/70 degrees/speed 4/MC on.
  10. Serve puddings warm with caramel sauce poured over.
Notes
Tip
You can use normal dried dates in this recipe by soaking them in boiling water first and draining the water off prior to using.

Nut-free
You can replace the nuts with the same amount of Spelt flour or plain flour plus an additional ½ tsp Baking Powder.

Egg-free / Vegan
Replace the 3 eggs with 6 Tbsp Apple Sauce

skinnymixer’s Lamb Rogan Josh

Skinnymixers have been asking me to do a Lamb Rogan Josh recipe for 2 years now… I haven’t been game enough to try it until now! Another common request is for great recipes using lamb shanks. This is a beautiful, authentic recipe is rich and flavoursome – just like the perfect Rogan Josh. I have included instructions on how to cook it using lamb steak for a quicker version, as well as shanks – personally we prefer it with lamb steak. Enjoy – Love Nik xx


Lamb Rump Version

Rogan Josh Paste Ingredients
  • 10 g lemon juice
  • 20 g fresh ginger, sliced into round coins
  • 20 g tomato paste
  • 6 cloves of garlic, peeled
  • 2 x medium brown onions, peeled, quartered
  • Large handful of fresh coriander
  • 2 x large red chilli, roughly chopped (increase for a spicer curry)
  • 1 tbsp paprika
  • 2 tsp coriander powder
  • 2 tsp cumin powder
  • 1 tsp turmeric powder
  • 1 tsp salt
  • 700 g lamb rump steak, diced small
Curry Ingredients
  • 20 g fresh ginger, sliced into round coins
  • 2 cloves of garlic, peeled
  • 400 g tin of diced tomato (Ardmona brand)
  • 10 cardamom pods, bruised
  • 20 g olive oil
  • 20 g tomato paste
  • 1-2 tsp salt
  • 3 bay leaves
  • 3 whole cloves
  • 1 cinnamon stick
  • 1 tsp cumin powder
  • 1 tsp paprika
  • 1 tsp freshly cracked black pepper
  • ½ tsp turmeric powder
  • 150 g greek yoghurt
Instructions
Marinating Instructions
  1. Add all paste ingredients (except for lamb rump) in to mixer bowl. Blend for 10 sec/speed 8/MC on. Scrape bowl down and repeat once.
  2. Marinate lamb in the fridge overnight or for at least 6 hours.
Curry Instructions
  1. Add the ginger and garlic to mixer bowl. Chop for 3 sec/speed 9/MC on. Scrape bowl down and repeat once or until ginger is finely chopped.
  2. Except for the yoghurt, add remaining curry ingredients to mixer bowl, including 100 g water and marinated lamb. Cook for 20 mins/steaming temperature/speed 1/MC on or until meat is tender.
  3. Remove cinnamon stick, add yoghurt to curry sauce and mix for 10 sec/speed 2/MC on. Season to taste.

 

Lamb Shank Version

  • 10 g lemon juice
  • 20 g fresh ginger, sliced into round coins
  • 20 g tomato paste
  • 6 cloves of garlic, peeled
  • 2 x medium brown onions, peeled, quartered
  • Large handful of fresh coriander
  • 1 x large red chilli, roughly chopped (increase for a spicer curry)
  • 1 tbsp paprika
  • 2 tsp coriander powder
  • 2 tsp cumin powder
  • 1 tsp turmeric powder
  • 1 tsp salt
  • 3-4 lamb shanks
Curry Ingredients
  • 20 g fresh ginger, sliced into round coins
  • 2 cloves of garlic, peeled
  • 400 g tin of diced tomato (Ardmona brand)
  • 10 cardamom pods, bruised
  • 20 g olive oil
  • 20 g tomato paste
  • 1-2 tsp salt
  • 3 bay leaves
  • 3 whole cloves
  • 1 cinnamon stick
  • 1 tsp cumin powder
  • 1 tsp paprika

  • ½ tsp turmeric powder
  • 150 g greek yoghurt

  1. Add 700 g water to mixer bowl. Put marinated lamb shanks and marinade in to the deep steaming tray. Steam for 30 min/steaming temperature/speed 3.
  2. Set aside the water from the mixer bowl - don’t tip it out - and add the ginger and garlic to mixer bowl. Chop for 3 sec/speed 9/MC on. Scrape bowl down and repeat once.
  3. Except for the yoghurt, add remaining curry ingredients to mixer bowl, including the retained steaming water, put your shanks back in place. Turn the shanks over carefully. Cook for a further 60 mins/steaming temperature/speed 2 or until shanks are tender.
  4. Remove cinnamon stick, add yoghurt to curry sauce and blend for 10 sec/speed 2/MC on. Season to taste.
Notes
Slow Cooker Instructions:
Follow marinade instructions.
When it comes time to cook the curry, add all ingredients except for the steaming water and yoghurt to slow cooker. Cook on low for 7 hours. Stir through yoghurt and serve.

I absolutely love pesto and recently while freezer-diving for a quick meal, I had a stroke of genius when I decided to combine my Red Pesto recipe with my Creamy Garlic Sauce recipe. Here, I have created a new green pesto recipe, with hidden kale for extra nutritional value, but feel free to try this with the Red Pesto recipe found on the website as well.

If I’m ever going to eat a fast food breakfast it will be a sausage muffin because I love the peppery meat patties. This is my take on that tasty goodness which also goes great with the Smashed Avocado and Bruschetta Mix for something a bit different. You can also use them with the Low Carb Burger Buns if you are watching your carb intake.

Mayonnaise is my favourite condiment, and making your own from scratch makes it a super healthy, delicious dairy free addition to meals. 

I highly recommend using the avocado oil from Costco, but if you’re not able to source it I have found Cobram Light Tasting Olive Oil is the second best! Love Nik xx

Ingredients
  • 125 g avocado oil from costco, or cobram light tasting olive oil
  • 1 egg yolk, room temperature
  • 1 heaped teaspoon dijon mustard
  • 1 tablespoon apple cider vinegar
  • 10 g raw honey (optional)
  • pinch salt and pepper
Instructions
  1. Insert butterfly, add yolk, mustard, vinegar, honey, salt and pepper to mixer bowl. Mix for 1 min/37°C/speed 4/MC on..
  2. Set mixer to 3 mins/37°C/speed 4 and VERY slowly start drizzling oil into bowl. Take the full 3 minutes to do so. Scrape bowl out and set aside in the fridge.
Notes
I use the avocado oil from Costco. If you don't have a costco near you, I recommend you use Cobram extra light tasting olive oil as the avocado oil from supermarkets is pretty gross!

To Store: 3-5 days in a sterilised jar in the fridge.

This is another recipe that I have been cooking for years, yet have not gotten around to putting on the website because of how difficult it can be to find raw chorizo mince. When you do find it, you definitely don’t want to look at the ingredients list! A big thank you to Brooke for giving me the idea of teaching people how to make their own healthy chorizo mince.
