Thermomix Meal Plan Large Family

Hi! Tash here…

With a family of 6 which includes 3 teenage boys and a threenager (girl), I find most recipes just don’t make enough as they cater for 4 serves at most. Since I don’t have 2 Thermomixers, I’ve needed to find recipes that feed all of us comfortably or recipes that complement each other that either don’t take all day to cook or can be cooked in other appliances. I also try to plan meals for the week that use the same fresh and dairy ingredients to minimise wastage and keep costs down.

SATURDAY

My fakeway “works” burger

I do a kilo of mince (in 2 batches, adding YIAH seasonings to the mixture to spice them up to our liking) and shape them into 12 patties so I can freeze 6 (raw) for another time.  The Soft Butter Rolls (Thermomix Basic Cookbook) bake during the first 20 or so minutes of the wedges being in the oven, and are then cool enough to cut open and pop back in the oven with some sliced cheese during the last 5 minutes of the baking time.  While the patties and bacon cook in the grill press, I brown some onions with a flavoured balsamic vinegar and fry an egg for each burger – keeping them warm in a thermoserver.  Everyone then makes up their own burger with salad ingredients (lettuce, tomato, beetroot) and the sauces they prefer.

Tip: Thermobexta’s Best Ever Potato Wedge seasoning goes perfectly with sweet potatoes as well.

SUNDAY

Skinnymixers Mexican Slow Cooked Pork, Refried Beans and Mexican Red Rice Enchiladas with salad.

Put the pork on to cook in the morning, and cook the beans and rice close to dinner time.  Fill tortillas with shredded pork, refried beans and red rice. Roll into enchiladas and place in an oven dish. Top with passata blended with 2 teaspoons of Nik’s Mexican spice mix, top with grated cheese and bake for about 20 minutes.

Serve with sour cream, lettuce and tomatoes from Saturday’s burgers and extra salad ingredients.

Tip: If you have any leftovers that you won’t use, simply freeze portions of the shredded pork in snaplock bags for use in jacket potatoes. For this meal plan we will be using it on pizza later in the week.

This is quick, easy and flavourful and works just as well with fresh pasta and frozen broccoli. Not only is this pasta very kid friendly but it is a great budget meal the whole family will love.

I found this dish was a Thermomix dinner that I kept cooking over and over again, so I thought I would share it with everyone on the Thermomix Recipe Community.

The Malaysian Satay Chicken from ‘A Little Taste of Asia’ is a favourite in our house. If you don’t know if your children will like the satay sauce, you can quite easily serve the sauce on the side. Also if you are short on time you can simply pan-fry the chicken pieces in some coconut oil and not add them to skewers.

I like to serve it with Quirky Cooking’s Non-Fried Rice, as it makes a large amount to feed the tribe and the vegetables can be adjusted to whatever I have in the fridge.

Tip: If you don’t use all the Satay Sauce you can freeze the remaining amount for use on pizzas. I don’t ever have this problem though!

WEDNESDAY

Mexican shredded pork pizzas (yoghurt dough base)

Yoghurt Dough: 

  • 375g greek yoghurt
  • 440g SR Flour

Mix on Speed 3 for 15 seconds, then 3 minutes on the dough/interval setting.  Press out onto a rectangular cookie sheet / baking tray and top with pizza sauce, leftover shredded pork, tomatoes, red onion, capsicum, jalapenos and cheese.  Bake for about 30 minutes.

Tip: Keep a stash of pre-grated cheese in your freezer as well as portions of the Skinnymixer’s Pizza Sauce, for a quick dinner.

Grain Free Chicken Parmigiana, sweet potato mash, steamed veg.

I double the mixture and make 9 large parmies which leaves one each for the boys to take for lunch!  You can steam your veg in the varoma while the mash is cooking.

Tip: If you wanted to be super prepared you can make the parmies in advance and freeze the patty / sauce separately. If you don’t need them to be grain free or gluten free you can use breadcrumbs.

FRIDAY

ALTOI Bhuna Gosht, Chickpea Curry and Jeweled Coconut Rice.

Cook the bhuna gosht in the slow cooker by following the Slow Cooker Tips on the website, and cook the jeweled coconut rice in a rice cooker while the chickpea curry is cooking in the Thermomix.

The spicy chickpea curry is a favourite of mine as it is incredibly tasty and budget friendly. It is a great recipe to cook when the fridge is looking a bit empty. If you do end up cooking it, I’d appreciate if you left me a comment on the recipe community.

Tip: This is fantastic with the Palak Raita for a full friday night curry feast. Make some Palak Raita in advance and keep in the fridge until ready to serve.

Whilst I’m technically not a vegetarian I eat very little meat. Our meals heavily revolve around vegetarian meals or easily tweaked meals so the family still gets their meat intake without having to make two completely different meals.

With a stocked vegetable crisper and weekend freezer prep, I can always knock up something on the fly quickly and some of my favourites are below. MONDAY

Thai Red Curry packed with vegetables.

Serve with: Thai Basil Rice

Low carb tip: serve with cauli rice or on cabbage noodles

Bulk it tip: Make the sauce then move to stovetop and pack it with all kinds of vegies. I generally add anything green (beans, broccoli, snow peas, Asian greens, zucchini), carrots, capsicum, mushrooms and cauliflower.

Prep ahead tip: During weekend prep make your pastes and freeze in portions. Grab out a portion in the morning and pop it in the fridge to defrost.


TUESDAY

The Healthy Mix: Healthy Carbonara Sauce

Whilst the sauce is cooking pan fry mushrooms, beans, asparagus or whatever takes your fancy and serve on zoodles or pasta.

If cauliflowers are out of season you can quite easily use frozen cauliflower for this dish.

This sauce is a great dairy free / vegan alternative to white sauce.

It can be used to make an epic vegetarian lasagne and can also be used to make the creamy garlic sauce or the creamy mustard sauce on the website.

Prep ahead tip: The sauce can be made in advance and frozen in portions.

You don’t need to follow a LCHF diet to enjoy this gnocchi. It’s incredible simple and flavoursome. Sometimes the ricotta can be a bit wet. If you find the gnocchi melts a little, let it cool and roll then give them a quick pan fry.

Bulk it tip: Serve with steamed or pan fried vegetables.

Prep ahead tip: During weekend prep make gnocchi and freeze raw in 2 portions. Grab out a portion in the morning and pop it in the fridge to defrost.

The creamy cauliflower soup features often in our house (when cauliflowers aren’t super expensive that is). It’s a tasty soup that all enjoy that is quick to prep.

I like to omit the chicken and pan fry up some mushrooms. You could also crumble some fried haloumi or choice of cheese on top.

Prep ahead tip: The soup can be made in advance and frozen in portions.

If you need to cater for both veg and meat eater either cook the chicken separately then shred or using baking paper under the chicken to avoid liquid going in the soup.

skinnymixers-poppyseed-skordaliaSkordalia is something I grew up seeing at Greek weddings and parties but I haven’t eaten it for many years… until our good friend, Tatum, brought some over the other night to snack on while watching the UFC. It had poppyseeds in it, which I haven’t seen before and instantly felt inspired to create my own ‘healthier’ version using way less oil and low carb potatoes. Tatum promised to love me forever if I could pull it off, and I think I have managed to! If you do like a smoother/runnier Skordalia, feel free to add extra olive oil in. Looking forward to seeing this served and enjoyed for Christmas in only 1 month :O Love Nik xx

Poppyseed Skordalia (potato dip)
 
Ingredients
  • 300 g potato, peeled and cubed medium (low carb or Coliban)
  • 2-4 cloves of garlic, peeled
  • 10 g olive oil
  • 10 g lemon juice
  • 1 egg yolk
  • 1 tbsp poppyseeds
  • ½ tsp salt
Instructions
  1. Weigh in 400 g water into mixer bowl, insert simmering basket with potato inside and cook for 15 min/steaming temperature/speed 3 or until potato is cooked. Discard steaming water.
  2. Allow potato to cool, I like to soak them in cold water to speed up the process.
  3. Add garlic to mixer bowl, chop for 3 sec/speed 9/MC on. Scrape bowl down and repeat once.
  4. Add cooled potatoes to mixer bowl, mash for 15 sec/speed 4/MC on.
  5. Add remaining ingredients and blend for 20 sec/speed 4/MC on.
  6. Serve or store in an airtight container for up to 3 days in the fridge.

Ingredients
  • 1 clove of garlic, peeled
  • roughly 1 tbsp of fresh chives, roughly chopped
  • 250 g block cream cheese, at room temperature
  • 250 g avocado flesh (roughly 2 large ripe avocados)
  • 10 g olive oil
  • 10 g lemon juice
  • ½ tsp - 1 tsp salt
Instructions
  1. Add garlic and chives to mixer bowl, chop for 3 sec/speed 9/MC on. Scrape bowl down and repeat once.
  2. Add remaining ingredients and blend for 10 sec/speed 5/MC on. Scrape bowl down and repeat once.
  3. Refrigerate for 1 hour before serving. Can be stored in an airtight container in the fridge for up to 3 days.

skinnymixers-lchf-tiramisuWhile writing my next book, I came up with the idea of developing a LCHF Tiramisu… I ended up loving the recipe so much that we decided to release it for Christmas instead! This captures the essence of a traditional Tiramisu, without the carbs and sugar (see the nutritional info below). It can be served in glasses as pictured above, or layered in a more traditional way as pictured below. Being a LCHF recipe, this one is quite high in calories – if that bothers you, feel free to substitute with low fat cream. Stay tuned for a dairy free adaptation too 😉 Love Nik xx

Serves: 6
Ingredients
Cake Ingredients
  • 160 g raw almonds
  • 2 whole eggs
  • 30 g coconut oil or butter
  • 30 g xylitol or nativa (or sweetener of choice such as maple syrup)
  • 20 g whipping cream / thickened cream
  • 15 g cacao powder
  • 1 tsp vanilla extract
  • 1 tsp bicarb soda
  • ½ tsp baking powder
  • 1 cup of espresso or strong coffee for soaking
Filling Ingredients
  • 1 tsp xylitol or natvia
  • 150 g marscapone
  • 1 tsp vanilla extract
  • 150 g whipping cream / thickened cream
Instructions
  1. Preheat oven to 180 °C fanforced and grease and line a 20 cm rectangle slice tray.
  2. Add raw almonds to dry mixer bowl, mill for 10 sec/speed 9/MC on or until fine.
  3. Add the remaining cake ingredients, excluding the coffee, and mix for 10 sec/speed 5/MC on. Scrape bowl down and repeat once.
  4. Remove batter to prepared cake tray, spreading the batter into an even layer with a butter knife. Please note the batter will be very thick, almost paste like. Bake in the oven for 15 min or until cooked.
  5. Allow cake to cool completely and once it has cooled you can choose to cut it into individual serves for glasses depending on serving preference. Slowly pour prepared coffee over the cake and allow to soak for 1 hour in the fridge (you can leave this overnight too).
  6. While cake is soaking, prepare filling by milling the xylitol/natvia for 10 sec/speed 7/MC on.
  7. Insert butterfly and add marscapone and vanilla. Whip for 10 sec/speed 3/MC on.
  8. Add cream and whip on speed 3/MC on until soft peaks form - take care not to over whip your cream into butter.
To assemble: Layer cake with cream (I did 2 layers of each) and top with shaved chocolate or sifted cacao powder.
Notes
You can omit the marscapone and replace it with cream for a more budget friendly option.

This is not an overly sweet cake, if you like your sweets to be super sweet but still low carb, I recommend choosing Xylitol and increasing the quantities of sweetener to your preference.

Recipe from the files: Kerry’s Low Carb Seed Crackers

  • 1 cup of sunflower seeds
  • 1 cup of sesame seeds
  • 1/2 cup of water (may not need it all)
  1. Process sunflowers to a fine meal speed 10, 10 seconds
  2. Add sesame seeds & using kneading function slowly start adding the water slowly until a stiff dough is formed.
  3. Spread out on a baking tray (I lined mine with baking paper & used the back of a spoon to press the mix out) & bake in 180 oven for around 15-20 minutes for thin crackers or longer for thicker ones.

These are great flavoured with your favourite salt/herbs. Sprinkle with rosemary & sea salt or cumin seeds, chilli, garlic powder.

skinnymixers-cheese-logI came across the idea to do a cheese log from a post in my news feed a few weeks ago and I got so excited about the recipe that I came up with a handful of different flavour combinations right away (see the notes). I think this will make a yummy and colourful addition to Christmas tables for those who want to continue to watch their carbs over the festive season or to impress guests with something a little different. The testing team have been enjoying this one way too much! Serves: 12
Ingredients
  • 50 g raw almonds
  • 50 g raw macadamia nuts
  • 20 g fresh continental parsley
  • 10 g fresh chives
  • 1 tsp nigella seeds (optional if you can't source them)
  • 1 tsp sesame seeds
  • pinch of cracked black pepper
  • 250 g cream cheese, cubed, room temperature
  • 100 g mild creamy blue cheese, cubed, room temperature (I used castello brand, if you don't like blue cheese you could use any other combination of cheeses like a mild feta, mozzarella or cheddar)
  • 2 large pieces of gladwrap
Instructions
  1. Add nuts and herbs to mixer bowl, chop for 3 sec/speed 6/MC on or until finely chopped.
  2. Add nigella seeds, sesame seeds and pepper to the bowl. Mix for 5 sec/speed 2/MC on.
  3. Remove nut mixture to a piece of the gladwrap retaining 1 tbsp in the mixer bowl. Flaten the mixture out with your hands into a large rectangle.
  4. Add remaining ingredients and blend for 10 sec/speed 6/MC on. Scrape bowl down and repeat once.
  5. Spoon even amounts of cheese mixture in a line down the centre of the nut mixture. Using the gladwrap, form into a log and twist the ends of each side tightly to remove air and compress mixture. Tie off ends, apply second piece of gladwrap and refrigerate for 1 hour or until ready to serve.

skinnymixer’s Twice Cooked Pork Roast

Roast meats are a tradition in many households during the holiday season. My roast pork belly has been a viral success since it was released, and I have wanted to do a similar recipe with rolled roast and a gluten free/low carb stuffing as it is one of the most common questions we get asked on the group – can you do the roast pork belly with rolled pork. Well, here it is and we loved every bite of it! The sauce is optional, and naturally if carbs aren’t an issue for you you can combine this recipe with the pork belly recipe and use the caramelised apple sauce too. Love Nik xx

Ingredients
Pork Ingredients
  • 1.5-1.7kg boneless pork leg roast, with the skin on, 2 cm score on the skin
  • salt
  • olive oil
  • butchers string
Stuffing Ingredients
  • 100 g raw macadamia nuts
  • 100 g pancetta (or bacon)
  • 30 g spring onion (white part only)
  • 20 g sesame seeds
  • 2 small handfuls of continental parsley
  • grated rind of 1 lemon
  • 1 garlic clove, peeled
  • pinch of salt
  • pinch of fennel seeds
Sauce Ingredients (optional)
  • 300 g left over steaming water
  • 100 g creme fraiche or cream or sour cream
  • handful of chopped continental parsley
  • 1 tbsp seeded mustard
  • pinch of salt
  • 2 tbsp cornflour or tapioca mixed with ¼ cup of water for thickening (optional for LCHF)
Instructions
  1. Add all stuffing ingredients to mixer bowl. Chop for 5 sec/speed 5/MC on.
  2. Transfer stuffing mixture to a frying pan and lightly fry while preparing steaming water.
  3. Without washing the bowl, add 1000 g steaming water and bring it to temperature by heating for 8 min/steaming temperature/speed 3/MC on.
  4. In the mean time, prep your roast by butterflying it in half, with the rind on one side (see below picture). Spoon the stuffing mixture evenly over the entire underside of the pork (not the rind side). Carefully roll it up and secure in place with butchers string.
  5. When the water is ready, place prepared roast into deep steaming tray and steam for 60 min/steaming temperature/speed 3. Pre-heat your oven during this time to 220°C or higher.
  6. When roast has finished steaming, if you have one available, use a hairdryer to quickly dry out the rind. Rub olive oil into the skin and salt liberally. Put into a roasting tray and roast until crackling is ready.
To prepare sauce:
  1. Retain 300 g of the steaming water, add remaining sauce ingredients and cook for 5 min/80 degrees/speed 2/MC on.

This 7 Day Meal Plan is designed for use with the Skinnymixers ‘The Healthy Mix’ Cookbook. This 7 Day Healthy Thermomix Recipe Meal Plan is family friendly and flexible for different dietary needs.

The following are base recipes, intentionally kept simple so that you can adapt the menu plan to your requirements. Bulk out meals with seasonal vegetables and salads.

Prior to starting you will want to check out the ‘Starting From Scratch’ section of the book to make any of the spice mixes required and some Stock Concentrate. Typically I keep Chicken and Beef Stock Concentrates in the freezer for recipes. Don’t be afraid of the salt in them as you only use a spoonful per recipe and that is where the flavour is.

Healthy Carbonara Sauce

Served with zoodles for a lighter option or pasta for the rest of the family, this dairy-free carbonara sauce is a great base recipe.

Personally I like to pan-fry some diced bacon and chicken seasoned with the Italian Spice Mix, then add the sauce to the pan. Served with zoodles the sauce thins out; served with pasta you may like to add some water/milk/cream – whatever you like to thin the sauce a little. It will ultimately depend on the water content of your cauliflower though 🙂

There is a Low Carb Healthy Fat variation in the book that some people like to use to give a richer flavour. I often use this sauce to make Lasagne with the Chunky Bolognese.

This is the most basic of recipes, but shows you that healthy eating doesn’t need to be tasteless. This is one of Nik’s favourite recipes for weight loss, and features regularly in the Riddle household. Season your chicken with your choice of spice mix from ‘The Healthy Mix. Serve on a bed of steamed vegetables with a squeeze of lemon for a Super Skinny meal or shred with your favourite mayo. The combinations are endless and can be frozen for meal prep.

This marinade is incredible on lamb cutlets, slow roasted roast lamb and baked chicken drumsticks.

Serve with a fresh salad or the jeweled coconut rice as pictured 🙂

You can make this recipe dairy free by using coconut cream in the marinade and there is also a Super Skinny variation in the cookbook.

These snacks are great for an occasional treat – especially if you are craving something sweet or savoury, and need to curb those cravings!
Thermomix Coconut Rough Butter

Coconut Rough Butter

Not your typical weight loss food, but it’s fantastic to have a teaspoon on a slice of apple, if you have a sweet craving.

For this recipe it is important that your nuts are ROASTED. This will allow the oils to release and bring it together. The time it takes the oils to release can be anywhere between 5-15 minutes depending on your nuts. If you are worried about your machine or feel like it just isn’t coming together, you can add a little coconut oil to the mix.
If you have a sweet tooth you can also increase the maple syrup to taste.
Serving size: 1 teaspoon

French Onion Chick Bits

French Onion Chick Bits

These are really moreish, salty savoury snacks which are a great alternative to the popular soy crisps. These are suitable for lunch boxes and the flavour can be switched up. Favourite variations in the group include rosemary/sea salt and using coconut cream to make them dairy free.

If you feel the mixture is too hard to pipe, make sure you are using a large nozzle and perhaps add some water to thin it if required. The best tip is to do small amounts at a time in the piping bag.
If you want an extra crispy finished product you can pop them in a dehydrator overnight.

Thermomix no fat tomato soup

No Fat Tomato soup

This is a yummy and filling soup, great for keeping on hand to satisfy your hunger.

The flavour comes from the tomatoes so if you are using fresh tomatoes, please make sure that they are lovely and ripe. Alternatively the canned tomatoes are full of flavour.
If you have kids who love canned spaghetti, try adding alphabet spaghetti to this soup with some cream to taste.

The admin girls have been begging me to do a peri peri chicken for years now, and the suggestion finally made itself to the top of my list! I am so glad it did… I truly believe this is one of the best tasting recipes I have ever developed. It is perfect for those who are wanting to lose a little holiday season weight: its low carb, gluten free, preservative free, dairy free – and with a hint of chilli it’ll get your metabolism working! We served it with some fresh lemon and a summer salad but it would also be amazing paired with my chipotle chips and aioli. I hope everyone takes the time to marinate it for at least 8 hours, the flavour develops significantly ! Love Nik xx 

skinnymixer's Peri Peri Chicken

Serves: 6
Ingredients
  • 1 - 1.5 kg chicken thighs (or whatever chicken you want)
  • 4 x garlic cloves
  • 1 large brown onion, peeled, quartered
  • 50 g lemon juice
  • 20 g olive oil
  • 15 g sweet paprika
  • 10 g fresh ginger, cut into coins
  • ¼ tsp chilli powder (this is mild, increase for spicer peri peri)
  • ¾ - 1 tbsp salt
  • pinch of pepper
Instructions
  1. Please note. this recipe requires 8 hours marinating time.
  2. Add all ingredients, except chicken, and blend for 1 min/speed 5/MC on.
  3. Coat chicken well and marinate in the fridge for a recommended 8 hours.
  4. You can then fry, grill, bake or BBQ your chicken until cooked. Garnish with chopped parsley and a squeeze of fresh lemon juice.
Notes
Super Skinny Adaptation: Remove the oil, replacing with 15 g water. Use chicken breast.

FODMAP Friendly: Take out garlic and swap the plain oil with garlic-infused olive oil and use the green part of spring onions instead of 1 large onion.

Hi! It’s Sian here…

Well it is nearly that time of year that Skinnymixers is filled with the constant cries for help from parents, asking for the best ‘Back-to-School’ recipes. With my eldest starting Prep School in a couple of weeks (yes, the turdler is all grown up!) I thought some other Skinnymixers might also benefit from having an easy to go to list. About 3 years ago I bought the Planetbox Rover from Biome.skinnymixers.com, as I was sick of buying a new $15 plastic lunchbox every 4 months. It was definitely an investment, but I haven’t looked back 🙂 Having a bento style lunchbox and a well stocked freezer stash, makes packing lunch each day a breeze.

The other day I asked the Skinnymixers Facebook Group for a suggestion on what I could serve visiting friends and their kids for lunch. Hasselback Chicken made the final cut, as Katie my other friend has suggested it a few times now to me. We made it the more traditional way, by stuffing the chicken breasts with individual ingredients and I remarked that I couldn’t believe it took us 20 minutes to stuff 6 chicken breasts! This Thermal cooker recipe speeds up the stuffing process by blending all of the ingredients together, I had this ready within 5 minutes. skinnymixer's Hasselback Pizza Chicken

Ingredients
  • 4 large or 6 medium chicken breasts
  • 30 g parmesan cheese, cubed
  • 100-120 g fresh mozzarella (drained weight), cubed small
  • 80 g tomato pizza paste (I use pizza paste as its lower in carbs!) or my pizza sauce
  • 50 g butter, cubed (LCHF option, omit for lower calories)
  • 15 fresh basil leaves
  • 2 cloves of garlic, peeled
  • ⅛th tsp chilli powder (optional)
  • large pinch of salt and pepper
Instructions
  1. Preheat oven to 200 °C.
  2. Prepare chicken breasts with 1 cm thick slices over the top to create pockets.
  3. Add parmesan cheese to mixer bowl, mill for 5 sec/speed 9/MC on.
  4. Add remaining ingredients, except for chicken, and blend for 10 sec/speed 5/MC on.
  5. Stuff chicken breasts evenly with mixture and bake in oven for around 15 mins on a baking tray or until cooked through. Be mindful not to overcook the chicken breast!

If you would like a dairy free option, try stuffing the chicken breast with my red pesto !

Menu Plan: Favourite Australia Day Recipes

This Australia day (2017) will be spent by us in Brisbane, Queensland… spending quality time with our family and friends and watching one of my favourite bands live with Michael and the kids. So this year I am lucky to have avoided needing to cook for a large group of people! Having said that… Australia Day is one of my favourite holidays for entertaining, so I thought I would put together this little guide if you are stuck for inspiration this Australia Day. Love Nik xx

Breakfast

Smokey Baked Beans

My Quick Big Breakfast is an awesome option for an Australia Day breakfast celebration, as it can be prepared ahead of time to feed a mass of people.

Cook up my Smokey Baked Beans to spoon over the top of them as they come out of the oven and guests will be talking about their breakfast for weeks to come!

Lunch

Paleo Rissoles

Does it get any more Australian than Rissoles darl? My Paleo Rissoles are a great way to get extra veggies into the family on Australia Day and make a delicious addition to the BBQ. I think these would go great with my French Potato Salad or a simple green salad dressed with my Classic French Vinaigrette. Check out Thermobextas Tomato Ketchup for a classic tomato sauce recipe that is loved by all.

Dinner

Slow Cooked Greek Lamb

Being of Greek Heritage and a proud Australian, it would only be right for me to recommend my Slow Cooked Greek Lamb for an Australian Day dinner – fusing the best of both worlds!

Combine it with my pita breads, tzatziki and a tasty greek salad for a truly magnificent dinner.

I released the Raw Lamington Truffles recipe for Australia Day two years ago, and I still think they are a perfect way to celebrate lamingtons on Australia Day if you have intolerances, allergies or are just trying to choose healthier options. If you are short on time, or lazy like me, simply make them into a slice!

Another great entertaining recipe is my Curried Eggs – doesn’t get any more Australian than curried eggs at a BBQ according to Michael.

My family and I recently went on a little trip to Sydney for a concert, and it was such a delight to take our kids to experience proper Yum Cha for the first time. Michael had this great idea of letting the kids choose whatever they wanted to eat off of the little Yum Cha carts to get the proper experience, and both of the kids jumped at the coconut jelly for dessert and loved it. I think its a lovely textural dessert and full of coconut flavour. I have made a healthier version of the traditional dessert using Xylitol for the sweetener, so it is also great for low carbers and those with diabetes who want a little sweet treat. I hope you enjoy it as much as our kids do! Love Nik xx

Ingredients
  • 70 g xylitol (or preferred sweetener)
  • 400 g coconut milk (I recommend Ayam brand for this as it won't split)
  • 100 g water
  • 1 tbsp powdered agar agar (I get mine for $1.50 a packet from the Asian grocer, but you can also get it from health food stores, its just more expensive)
Instructions
  1. Mill xylitol for 10 sec/speed 7/mc on. Scrape bowl down.
  2. Add the rest of the ingredients and mix for 30 sec/speed 3/MC on.
  3. Cook for 10 min/90 degrees/speed 2/MC off.
  4. Pour it into silicone moulds of choice then let it cool for 10 mins before refrigerating for at least 1 hour before serving.

Guest Recipe: Sweet Potato & Vegetable Gratin

Guest Recipe: Sweet Potato & Vegetable Gratin

Ingredients
  • 500 g sweet potato
  • 1 garlic clove
  • 1 tsp salt
  • 900 g water
  • 200 g frozen vege (beans, carrot and broccoli )
  • ¾ cup skinnymixer's Healthy Carbonara Sauce
  • ¼ cup parmesan cheese ( grated )
  • 1 tsp onion flakes
  • 1.5 tsp seasoning of choice (Greek, Italian & Mexican Spice Mixes available in THM)
  • 50g spinach, fresh or frozen- thawed.
Instructions
  1. **This recipe needs freezing time.***
  2. Peel and cut sweet potato into largish bite size pieces and place into TM.
  3. Add garlic, salt and water. Cook 13mins/100 deg/reverse sp 1/ MC on.
  4. RESERVE COOKING WATER, Strain off the Sweet potato. Place sweet Potato in a separate bowl.
  5. Add the reserved cooking water back in TM bowl.
  6. Place frozen vegetables into the simmer basket and cook for 4 mins/steaming temp/sp 3.
  7. Discard cooking water and place vegetables into TM bowl. Chop vegetables for 3 secs/sp 4/MC on.
  8. Combine chopped vegetables with chunky mashed sweet potatoes.
  9. Add carbonara sauce, parmesan cheese, onion flakes, seasoning of choice and spinach.
  10. Gently mix to combine with a spatula.
  11. Line a tray or platter with baking Paper , that can fit flat in your freezer
  12. Use a small Scone cutter as a mould and fill directly onto the lined tray you intend to use. Gently pressing as you fill. Once filled to the top you should be able to lift the mould easily leaving a pretty stack of Vegetables behind.
  13. Place Vegetables Au Gratins in the freezer overnight or until frozen. Then just Transfer to a airtight container or zip lock bags until needed.
  14. Cook from Frozen in Air fryer for approx 15-20mins( No preheat) or Oven for approximately 30mins until golden Brown.
  15. Make sure you spray a non stick spray to the bottom of basket or place a small amount of foil underneath each to stop sticking.

Skinnymixers LCHF Meal Plan

There has been so much talk lately about the LCHF way of eating (Low Carb Healthy Fat), I thought I would put together a very basic meal plan with some of our favourite Skinnymixers recipes. You will actually find that most Skinnymixers meals can be made to be Low Carb Healthy Fat compliant, with some small changes. If you get stuck with any of the meals make sure you ask in Skinnymixers for some help 😉We like to accept all different ways of eating/ diets in Skinnymixers, so hopefully you will find this helpful if you are looking for lower carb options. To fit a ketogenic diet it is best to keep your carbs to under 20g per day, but feel free to increase to whatever level of carbs you feel comfortable with.

Some great tips for anyone starting out on LCHF:

  • Only eat whenever you are hungry and really listen to your body. If you don’t feel hungry for lunch, then you don’t need to eat just because it is lunchtime.
  • Eat until you are satisfied. We have all been guilty at one time or another of continuing to eat after we are already full.
  • Lots of water!
  • Stock your fridge with lots of low carb friendly vegetables and salad ingredients.
  • Research and understanding. Some great websites to check out are www.dietdoctor.com and www.realmealrevolution.com

MONDAY

Shredded Mayo Chicken served with a simple green salad and Avocado Dip.

LCHF meals don’t need to be complicated. Making a batch of this Shredded Mayo Chicken at the beginning of the week means that you have some easy grab and go protein in the fridge for lunches and snacks.

Mix up the flavours by adding different spices to the chicken or flavour your mayo with a teaspoon of sumac or chipotle powder. Remember to leave out the honey to keep it LCHF compliant. You can add a little compliant sweetener if you really want, but it is delicious without. Keep whatever mayo you don’t use separate from the chicken, so you can mix and match with your meals.

One of Nik’s favourite additions to boost the fat of a simple meal is her amazing Avocado Dip. Add a little to your breakfast, lunch or dinner for a delicious fat boost. 

Tip: Boost your fats in this meal with the addition of Avocado, mayo, boiled eggs and your favourite cheese.


TUESDAY

Healthy Thermomix Recipes Burger Patties

American Burger Patties on Low Carb Savoury Pancakes.

Whether you want to make a batch of the Low Carb Savoury Pancakes (think Low Carb Bun from Grill’d) and keep them in the freezer for a fast dinner, or just go bunless… who doesn’t love burgers? The American Burger Patties also freeze well for easy grab and go meals. Simply freeze the burger patties between baking paper to avoid them sticking together.

Build your own burger packed with lots of lettuce, cucumber, tomato, avocado, bacon, fried egg, cheese, mayo (from the Shredded Mayo Chicken).

Tip: Freeze your Low Carb Savoury Pancakes and pop them in the toaster to reheat and use as toast in the morning.


WEDNESDAY

LCHF Chicken Kiev

LCHF Chicken Kievs with roasted vegetables.

Roast some vegetables in the oven, whilst you prepare the Chicken Kievs. Mix and match the fillings with your favourites from the alternative fillings list.

The LCHF Chicken Kievs freeze perfectly and bake from frozen in approx. 30-40 minutes (depending on size).

Tip: Roast extra vegetables like Kent pumpkin, zucchini, red capsicum, broccoli & cauliflower in olive oil, seasoned with herbs/spices. Use the leftovers to bulk out green leafy salads, omelettes and super fast meals.


THURSDAY

skinnymixer's Creamy Garlic Sauce

skinnymixer’s Creamy Garlic Sauce is a perfect match for seafood and steak

Steak topped with Creamy Garlic Sauce.

This is seriously a restaurant quality meal that is so fast to put together.

Heat a pan and start cooking your steak and with some vege such as asparagus / mushrooms / beans. Then start cooking your creamy garlic sauce. You can even add prawns to the pan with a couple of minutes to go and serve on top of your steak with the creamy garlic sauce.

Alternatively you can cook the steak and vegetables on the BBQ and serve with a simple salad or leftover roast vegetables from the previous night.

Note: Garlic seems to differ in strength throughout the year, so if your garlic seems strong or are really large cloves please adjust the amount used. I find 4 cloves is a good amount.

Tip: If you don’t have the right fresh herbs for the sauce, fresh parsley is delicious.


FRIDAY

LCHF Thermomix Chicken

The perfect faster than takeaway, end of the week LCHF Thermomix Dinner. This chicken is succulent and the flavours can me mixed up to your taste or even the ingredients on hand. Served with a simple salad, you can boost your healthy fats even more with avocado and a dollop of mayo.

Tip: These can be frozen fully assembled or even just freeze the mix to add into fresh chicken breast.


A little less basic for the weekend…

SATURDAY

Thermomix Thai Green Chicken Curry

Skinnymixers Thai Green Chicken Curry

Thai Green Chicken Curry served on zoodles.

Take a little bit extra time on the weekend to make your own Thai Green Curry paste. The Thai Green Curry paste can be used to marinate chicken, fill Chicken Kievs and so much more. Make sure you take a look at the Alternative Uses for Curry Pastes information. To make the Thai Green Curry LCHF compliant simply omit the coconut sugar and make sure you use compliant Tamari / Red Boat Fish Sauce. Serve with zoodles or even some Thai Basil Cauliflower Rice.

Tip: Freeze the extra portions in mini snaplock bags for easy mid-week meals.


SUNDAY

Take the opportunity to enjoy a delicious Sunday night roast dinner. Not only will it feed the whole family, but it should give you lunches for the next couple of days.

Vegetables such as zucchini, cauliflower, Kent pumpkin, broccoli, brussels sprouts, asparagus and beans, all roast beautifully.

Tip: Roast extra low carb vegetables in olive oil, seasoned well with herbs to add to salads.

Meal Plan: Cooking for a friend in need

This week our favourite person had back surgery to help relieve on-going pain, and we have been inundated with offers of help from fellow Skinnies to cook some meals. We have an incredibly supportive community in Skinnymixers and often the question is asked ‘What can I cook for my friend who is in need of some help?’. So whether your friend has been in hospital or suffered a loss in the family, hopefully this meal plan can help give you some guidance. When cooking for someone else, always keep in mind their available freezer space, portion sizes and dietary needs. Using disposable takeaway containers that reheat well is also a good idea.


Simple Meals

When cooking for someone else I always try to keep the meals tasty but simple, particularly if it is to feed children also. These meals are nourishing and freezer friendly.

Chicken & Vegetable Soup

This is the perfect meal to bring someone who isn’t feeling well. The broth is full of goodness from the chicken bones and is like a big warm hug in a bowl.

This meal is budget friendly, dairy-free, gluten-free, grain-free and Paleo.

Tip: To make it LCHF friendly, replace the carrot with some broccoli or zucchini.

Rustic Shepherd’s Pie

This is a great family friendly complete meal and you can hide extra vegetable in the sauce if needed. This dish reheats really well and is the perfect comfort food.

If you are wanting to freeze this dish, you could freeze in the alfoil trays before the oven cook and give them instructions to pop it in the oven until golden on top. Otherwise it is best to provide this meal cooked and ready to reheat.

Tip: Change the mash to suit their dietary guidelines if needed. Use cauliflower mash they are low carb, or even the silky sweet potato mash is delicious on top.

Simple Stew

This little gem is only found in ‘The Healthy Mix’, but it is full of flavour and great for freezing. Mix up the flavours between the Greek, Italian or Mexican Spice Mixes… they are all delicious.

Using some meat, vegetables and some pantry staples; makes this meal quite economical. I recently cooked the Greek version of the Simple Stew for some friends who had a loved one in hospital. I asked if I could help with some meals and was asked for ‘normal food‘ as they aren’t used to spice (and flavour :p). The Simple Stew was extremely well received and reheats really well. It is a hearty meal for all the husbands who like their meat and vegetables.

Tip: This recipe can also be used to bulk cook in the slow cooker. Using cheap cuts of meat and cooking on low all day will result in the most tender stew. Just remember to add the vegetables in a bit later to prevent them over cooking.

Tip: Make sure your bacon isn’t too fatty and that your egg reaches the bottom. Otherwise the bacon won’t be combined with the egg.

Choc Chip Oat Bars

Grab and go breakfast foods can be so helpful for time poor people or someone who can’t move around too much. These Choc Chip Oat Bars can be changed to different flavour variations and made into bite size mini muffins that freeze well for lunch boxes.

These are great for new mothers as the oats help with milk supply. If you are changing the chocolate to dried fruit in the recipe, I highly recommend halving the sugar.

What to make with… Cauliflower!

Hi! It’s Sian here…

I think a few of us have gone a little cauliflower crazy with all the super cheap cauliflowers available at the moment. We’ve had a few people asking ‘What can I make with the 6 cauliflowers I bought?’, so I thought I would compile a handy guide of what I will be doing with the 5 cauliflowers taking up all the room in my fridge 😉

Prep Tips:

  • If you would rather prep your cauliflower into ‘Cauliflower Rice’ and freeze raw. Add 500g cauliflower florets to the mixer bowl and chop 5 secs/speed 5/reverse/MC On.
  • Freezing raw will produce a bit of liquid when defrosting. You can dry on a paper towel and even bake the cauliflower rice spread out on a tray in an oven to dry it out a bit. Just leave it in the oven at 180c fan-forced, until you start to see the edges turn golden.
  • Alternatively, some prefer to blanch and dry the cauliflower florets before freezing to remove the extra moisture.
  • Personally I would rather cook the meals and freeze the finished product, for fast mid-week meals. My frozen cauliflower rice will be covered with sauce, so I’m not too worried about the moisture 😉

THM: Healthy Carbonara Sauce

Healthy Carbonara Sauce

The ultimate “will this trick my cauliflower hating family” sauce. The Healthy Carbonara Sauce recipe is worth buying ‘The Healthy Mix’ for in my opinion. Use it as a base sauce to add your preferred flavour to.

Personally I pan-fry some chicken and bacon in a little of the Italian Spice Mix and add the sauce to the pan to infuse even more flavour in it. Sometimes I add in a little cream and cheese too. This is a great budget kid-friendly meal. You will find that cauliflowers get a stronger taste the older they are, so the fresher the better. When fresh cauliflowers are expensive, you can also use frozen cauliflowers for this dish.

Tip: The sauce consistency is thick and perfect for zoodles as they release a little water. Using it with pasta you may like to thin it down to your preferred consistency.

If you haven’t yet made lasagne with this sauce and the Chunky Bolognese, I highly recommend it! Also some Skinnies use this as a base for their Tuna Pasta Bakes and Cauliflower Gratins. Personally for a Cauliflower Gratin,  can’t go past the recipe on the Back to Basics Recipe Chip.

Whenever I am shopping and see Thai Basil I buy it, as it means Malaysian Satay Chicken with Thai Basil Rice will be added to the menu ASAP.

Not many people know that there is a Low Carb ‘Cauli Rice’ variation of the Thai Basil Rice in the book ‘A Little Taste of Asia’. With the abundance of cauliflower, now is the time to try it!

Did you know there is a ‘Cauliflower Rice’ recipe in each of the ‘A Little Taste of’ Books? The Mexican Red Rice Low Carb Variation is so, so, so good. I actually think I prefer it to the normal rice version.

This recipe is exclusive to ‘A Little Taste of Mexico’ and the Low Carb Variation is what you are looking for in the book, under the Mexican Red Rice recipe.

Tip: You didn’t hear it from me, but sliced crispy chorizo added into the basket with the rice to cook takes this dish to the next level 😉

Low Carb Jalapeño & Cheese Fritters

These delicious low carb patties are Kerry’s spicy version of the Low Carb Cauliflower and Haloumi Fritters.

This is a great recipe to use up whatever cheese you have in the fridge and jalapeños make everything better right?

Tip: Add some guacamole to serve, or use as ‘toast’ for your breakfast eggs.

This recipe is perfect to use cauliflower mash with, to top the pie. Simply switch the potatoes for cauliflower and steam them in the Varoma whilst the meat cooks. Then you can either follow the recipe instructions for the rustic potato mash or use the ‘No Fail Cauliflower Mash’ recipe as a guide for blending with butter and cheese.

If you have bacon and onion to add in, then it is highly recommended 😉

Low Carb variation of the Smokey Baked Beans

So you are Low Carb but don’t want to miss out on the delicious Smokey Baked Beans? Well the good news is you don’t have to!

Add 200g of small cauliflower florets instead of the beans and cook for 5 minutes (or some use mushrooms/zucchini).

Remove the Worcestershire sauce & maple syrup if you need to be LCHF compliant. You can use a little Tamari, preferred sweetener and chilli flakes or liquid smoke.
