Nuts and Bolts Thermomix recipe

Skinnymixer’s Nuts & Bolts – Our spin on the classic recipe “Nuts & Bolts” using the Queen of BBQ Chicken Rub from SkinnyBarbecue 😇😜.
 

Grant Neal, Mez Nelson & Ally Mathews were in the kitchen last week cooking up a storm and this Nuts & Bolts Thermomix recipe was just one of the recipes to come out of our efforts 😉
 
Feel free to mix and match with your favourite nuts, seeds or even cereal! 
 
You can make this recipe without a Thermomix and you can even cook these in your Barbecue.
 
We used the Queen of BBQ Chicken Rub but I’m sure The Joker’s Chicken Rub would be equally as delicious.

Nuts and Bolts

Ingredients

  • 2 cups pretzels
  • 120 g raw pistachio kernels
  • 120 g raw macadamia nuts
  • 120 g raw cashews
  • 20 g olive oil
  • 1 Tbsp Queen of BBQ Chicken Rub
  • 1 large pinch salt flakes or kosher salt

Instructions

  • Preheat oven, smoker or BBQ to 180°C or 350°F. Line a large metal baking tray with baking paper.
  • In a large bowl combine pretzels, nuts, olive oil and rub. Toss well to ensure even coating.
  • Spread evenly over prepared baking tray, bake for 15 min stirring every 5 min or until evenly golden and crisp. Season with salt and set aside to cool completely. Store in an airtight jar.

Cranberry and Rum Cocktail thermomix recipe

Skinnymixer’s Spiced Cranberry & Rum Cocktail is our spin on a winter warming cocktail.

It is storming here in Adelaide, South Australia and this morning when chatting to Grant about what recipes to develop this weekend he suggested a special ‘stuck at home’ cocktail was in order! I have always wanted to do a mulled wine, but I wanted it to be a little more exciting and fruity. This cocktail is a great way to warm up on cold winter nights, it feels like the best hug in a mug xx

Spiced Cranberry & Rum Cocktail

Ingredients

  • 1000 g cranberry juice
  • 20 g coconut sugar or sugar of choice
  • 20 g fresh ginger sliced in to coins
  • peel of a whole orange
  • 5 whole cloves
  • 4 star anise
  • 2 cinnamon quills
  • 1 tsp black peppercorns
  • 120 g dark spiced rum such as Kraken

To serve

  • 2 tsp coconut sugar
  • 1 tsp cinnamon powder
  • dried orange slices
  • cinnamon sticks
  • star anise

Instructions

  • 1. Add cranberry juice, coconut sugar, ginger, orange peel, whole cloves, star anise, black peppercorns and cinnamon quills to mixer bowl. Cook for 10 min/100 degrees/speed 1/reverse/MC on.
  • In the mean time, combine serving coconut sugar and cinnamon on a flat plate.
  • Prepare each glass by running a slice of orange over each rim. Put the rim of each glass in the coconut cinnamon sugar mix to coat well.
  • Put 30 g of rum in each glass.
  • When the spiced cranberry juice is finished cooking, strain in to each glass and serve garnished with dried orange, cinnamon quill and star anise.

Afghan Kebabeh Sikhi healthy Thermomix recipes

Afghanistan Kebabeh Sikhi has been on the recipe bucket list for a while now – and the current climate seems the ideal time to ensure we stay engaged and kind to the amazing people from this country that call Australia home.

Adelaide is blessed to have a significant population of Afghans and this means we eat a lot of their beautiful cuisine. It also means the bar is set high when it comes matching what they serve. This recipe is inspired by Parwana restaurant in Adelaide.
 

Served with our SkinnyBarbecue Freekeh Good Salad and simple three veg salad it is a nutrient dense and incredibly healthy dish. We are thinking of trying this with lamb and goat next so stand by!

Afghan Kebabeh Sikhi healthy Thermomix recipes

Skinnymixer's Afghan Kebabeh Sikhi

Cook Time 30 minutes
Marinating 6 hours

Ingredients

  • 1 kg chicken thigh, lamb rump or thick beef steak cubed large
  • 2 cloves garlic peeled
  • 1 brown onion peeled, quartered
  • 1 long red chilli deseeded, roughly chopped
  • 1 Tbsp coriander seeds
  • 50 g water
  • 25 g light tasting olive oil
  • Tbsp sea salt flakes or kosher salt
  • ½ Tbsp coarse cracked black pepper bought pre-cracked

Instructions

  • Add coriander to the bowl, mill for 20 sec/speed 9/MC on.
  • Add garlic, onions and chilli. Blend for 10 sec/speed 9/MC on.
  • Add water, oil, salt & pepper and mix for 20 sec/speed 6/MC on.
  • Marinate your chosen meats covered in the fridge for minimum of 6 hours - preferably 12-24 hours. Mix halfway through marinating time to ensure full coverage.
  • Assemble loosely packed on skewers and place in preferred cooker.
  • For Beef or Lamb: Preheat BBQ, smoker or cooker to 121°C or 250°F.  Cook for 20 min. Turn bbq/cooker up to 200°C or 400°F and finish beef/lamb to an internal temp above 60°C or 140°F
    For Chicken: Preheat BBQ, smoker or cooker to 200°C or 400°F. Cook for approx. 20 min ensuring internal chicken temperature is above 74°C or 165°F.

Skinnymixer’s BBQ Duck Salad with Plum Sauce

BBQ Duck Salad Thermomix

We’ve been a little busy in the Skinnymixers Kitchen lately with finishing The Healthy Mix VI, that I honestly haven’t thought much about Christmas! So when @luvaduck asked us to share a recipe for their fresh duck breasts, I immediately thought of my Duck Rice Paper Rolls in The Healthy Mix III. So I present to you BBQ Duck Salad with Plum Sauce.

Honestly Skinnies the duck is melt in your mouth tender and is insanely delicious – without all the sugar and preservatives that plum sauce typically has! It also makes an impressive salad that you can make ahead of time to serve at Christmas.

Drawing on our SkinnyBarbecue experience, our resident pitmaster Grant smoked this duck to perfection on the @Traegergrill with cherry wood, but it would also be delicious cooked in the pan/oven.

BBQ Duck Salad Thermomix

BBQ Duck Salad with Plum Sauce

A healthy BBQ Plum Duck Salad, without all the sugar and preservatives of traditional BBQ Duck.
Course Salad
Servings 4

Ingredients

Marinade

  • 2 tsp Chinese Five Spice powder
  • 2 Tbsp soy sauce, Tamari or coconut aminos
  • 2 tsp honey
  • 2 pinch salt
  • 4 fresh duck breasts I used Luv-a-duck

Plum Sauce

  • 250 g tinned plums flesh only, deseeded
  • 30 g honey
  • 20 g soy sauce, tamari, coconut aminos
  • 5 g apple cider vinegar
  • 100 g water

Salad

  • 200 g rice noodles soaked as per packet and drained
  • carrot finely julienned
  • capsicum finely julienned
  • cucumber finely julienned
  • bean sprouts rinsed
  • 1 handful fresh coriander leaves
  • 1 handful fresh mint leaves
  • chopped peanuts dry roasted
  • fresh red chilli to garnish sliced

Instructions

  • Add marinade ingredients (except duck) to mixer bowl, combine 5 sec/speed 3/MC on. Jaccard or score the duck fat and cover duck with marinade. Marinate for 2-4 hr in the fridge.
  • Preheat your BBQ, smoker or fan-forced oven to 190°C or 375°F. If smoking, we used cherry wood.
  • Add all plum sauce ingredients to mixer bowl. Cook for 20 min/steaming temp/speed 2/MC off - place simmering basket on top of lid to avoid splatter. Continue with next step while the sauce cooks.
  • Place duck in your BBQ or smoker (on a tray in your oven) skin down and cook at 190°C or 375°F for 15 min or until internal temp reaches 54°C or 130°F.
  • Flip duck and cook for a further 5 min or until internal temp reaches 57°C or 135°F. Rest for 10 min before slicing.
  • Arrange salad ingredients in serving bowl, with sliced duck on top. You can also toss the sauce through the salad after it has cooled if desired. Garnish with chopped peanuts and sliced chilli.

I will be the first to admit that I have never enjoyed eating meat alternative dishes, but with the rise in people choosing to reduce their meat consumption I thought it was time to create a veggie burger that actually tastes delicious and is enjoyable to eat!

THMVI: Beef Curry in a Hurry

Curries were essential in my weight loss journey because they are so easy to make ultra low calories without compromising on bold flavours. I would regularly opt for making a delicious curry and serving with cauliflower rice or zucchini noodles, and with a mindset shift I never felt like I was missing out. When a craving for a curry hits, this recipe is under 20 minutes and absolutely quicker to make than order take away.

If you ask my Mum what single recipe she would pick for me to create, she would say hands down the old KFC Bean Salad recipe! I think this is a pretty amazing, healthy version from when I was a kid and my Mum loves it too.

THMVI: Ćhevaps with Ajvar

You might also know this delicious dish as cevapcici or chevapchichi, which is a traditional food of the Balkans. From Serbia, Croatia to Bosnia and Macedonia, each South Eastern European country has its own spin on this dish. This version is most similar to the one I grew up eating at all of our family barbecues. If you haven’t heard of Ajvar before, it’s a condiment that can be used in many different ways - but I love it with pita bread, chevaps and sour cream. This makes a good amount of Ajvar, feel free to halve it if you like.

A big thank you to Grant’s friend, Dan Johnson, for giving us this amazing Nuoc Cham Vietnamese Dipping Sauce for the Dim Sim Meatballs from The Healthy Mix VI.

We took his original recipe and converted it to Thermomix, but you could easily put this together by hand as well. For the hot heads, feel free to skip deseeding the chillis!

Guest Recipe: Dan Johnson's Nuoc Cham (Vietnamese Dipping Sauce)

Course Sauce

Ingredients

  • 2 Birdseye chillies deseeded, roughly chopped
  • 1 clove garlic peeled
  • 40 g hot water
  • 20 g coconut sugar
  • 15 g fish sauce
  • 15 g rice wine vinegar
  • 15 g fresh lime juice

Instructions

  • Add chilli and garlic to mixer bowl. Chop for 3 sec/speed 9/MC on. Scrape bowl down and repeat twice.
  • Add remaining ingredients and combine for 10 sec/speed 3/MC on. Repeat if needed, until sugar has dissolved.

She adapted a recipe seldom shared. Hand written in our nondescript, but prized folder that holds all the family cooking secrets. This one is her gift to the ‘Skinnymixers’ family. The Carrot, Pineapple & Walnut Cake with Lemon Cheesecake Icing is a delicious afternoon tea or dessert favourite.

It’s equally popular as a morning tea snack sans the icing, instead spread some butter and a cup of tea. We hope you like it as much as our family has.

Ingredients

Carrot, Pineapple & Walnut Cake

  • 180 g carrots, peeled, roughly chopped
  • 170 g plain flour
  • 80 g caster sugar or sugar of choice
  • 1 tsp baking powder
  • ½ tsp bicarb soda
  • ½ tsp cinnamon powder
  • 2 eggs
  • 60 g melted butter or light tasting oil of choice vegetable oil to be traditional!
  • 200 g tinned crushed pineapple drained
  • 70 g walnuts chopped

Lemon Cheesecake Icing

  • 85 g cream cheese, softened, cubed we prefer Philly
  • ½ tsp vanilla paste
  • 30 g icing sugar
  • 1 tsp lemon juice
  • dried fruit & nuts for decorating optional

Instructions

  • Preheat oven to 180°C and line a loaf tin. 
  • Add carrot to mixer bowl and chop 4 sec/speed 5/MC on, set aside.
  • Add flour, sugar, baking powder, bicarb and cinnamon to the mixer bowl. Mix for 5 sec/speed 5/MC on.
  • Add eggs and oil to the mixer bowl and blend 6 sec/speed 4/MC on, scrape mixer bowl down.
  • Add carrot, pineapple and walnuts to the mixer bowl, mix for 10 sec/speed 3/MC on.
  • Pour batter into prepared loaf tin and bake in the oven for 1 hour.
  • While cake is baking - prepare your icing in a clean mixer bowl. Add all icing ingredients into mixer bowl and blend 10 sec/speed 4/MC on. Scrape mixer bowl down and repeat.
  • Spread icing on cooled cake and decorate with mixed nuts and dried fruits.

Tasting Australia: The Grill Masters

What an amazing night we had taking over Sean’s Kitchen in Adelaide for Tasting Australia: The Grill Masters!

Celebrity Chef Sean Connolly and Grant Neal headlined “The Grill Masters”, a sold out BBQ inspired event.
With the help of Sean’s head chef John Rankin and myself we delivered some delicious barbecue fare.

Fabulous local food was on display from Mayura Station Wagyu, Boston Bay Small Goods Pork & Saskia Beer Farm Produce Chicken.

One of the most exciting parts was seeing recipes from SkinnyBarbecue featuring in a Tasting Australia event & being served at Sean’s Kitchen
 
How cool is this Skinnies?! Everyone absolutely loved all the food.

It was definitely a pinch me moment! I was so incredibly proud that we got to share some of the SkinnyBarbecue deliciousness as part of Tasting Australia & help celebrate some amazing local produce.

The Grill Masters was a sold out event.

The event was SOLD OUT and once you tasted the food, you definitely knew why!
