A year and a half ago I wouldn’t have dreamed of cooking such a gourmet and delicious meal for the kids & I with little planning.
I certainly wouldn’t have dreamed I would be able to reverse sear lamb backstrap to pure perfection like this!!

For those old enough they will remember missing everything, for example a date with Tom Cruise or Nicole Kidman, for Sunday lamb roast. Well the country will ride high again on the sheep’s back as ‘SkinnyBarbecue’ takes the humble Aussie icon and puts it back centre table!

Mez’s Famous Potato Wedges – During recipe development for the NEW SkinnyBarbecue Thermomix Cookbook, Mez made us the most delicious Potato Wedges seasoned with the new The Joker’s Chicken Rub. Don’t worry, if you don’t yet own SkinnyBarbecue you can substitute with any rubs or spice mixes of choice.
We knew immediately that we needed to share this delicious recipe with the Skinnymixers Community as a Guest Recipe.
So we present to you… Mez’s Famous Potato Wedges!
Steamed in the Thermomix until tender, then made crispy and golden in the oven or air fryer. You will love this incredibly simple but tasty recipe.
Serve them with your favourite SkinnyBarbecue Sauce…
Add water to mixer bowl. Put deep steaming tray in place and add potatoes. Steam for 20 min/steaming temp/speed 3. If cooking in oven preheat your oven to 200°C or 390°F fan forced.
Add steamed potatoes into a large bowl and coat with the olive oil.
OVEN: If cooking in oven use a large metal tray line with baking paper and evenly place the wedges. Place on top shelf and cook for 45 min, move and turn them 1-2 times during cook time.
AIR FRYER: If using the air fryer, place evenly in air fryer basket. Cook for 25 min at 200°C or 390°F move and turn them 1-2 times during cook time.
Once wedges are evenly browned add to large bowl and sprinkle with The Joker's Chicken Rub from SkinnyBarbecue or spice mix of choice. Adjust amount added to your taste.

When I first tasted the Carolina Gold & Honey Pork Fillet as it came out of the Traeger Timberline 850 – honestly I thought it was the best thing I had ever eaten.
Basted in the ever tasty Carolina Gold Sauce (which is a Tangy Mustard Barbecue Sauce), this pork fillet/pork tenderloin is cooked low and slow to bring out the most beautiful texture and taste in the pork.
We smoked this with cherry wood to get that lovely red smoke ring.

I think pizza is one of the easiest ways of using up leftovers (that is loved by everyone). Nikalene made an epic pizza with her son Patrick and as you can see the results below are mouthwatering…
We talk lots about how SkinnyBarbecue is geared towards left overs and using the delicious rubs & sauces to make meals… this epic pizza ticks all of the boxes.

Perhaps one of the healthier options, using leftover vegetables and cooked meat in a frittata is a great way to meal prep and also makes a delicious brunch/lunch or light dinner.

‘Bulgogi Beef Cheek Pie I would say that this was a 100% success out the park!
Pull left over Bulgogi Beef Cheeks from SkinnyBarbecue (SMBBQ) & reduce the braising liquid in a pan…
Pop it in a pie dish and top with either puff pastry or cauliflower & parsnip purée (THMV) for a low carb variation and bake as per needed!
Another standout way of using leftover Bulgogi Beef Cheeks from Kerry Ferguson was in Spring Rolls. Melissa Belshaw used beef cheeks thinly sliced with a bad of stir fry veggies, noodles and Sweet & Spicy Korean Sauce in a quick stir fry.

There are so many possibilities when you take a wrap, add your fillings of choice, fold it over in half and toast it in a sandwich press.

I absolutely fell in love with this dessert when developing recipes for SkinnyBarbecue. I really, really wanted to make a peach cobbler but wanted to be able to make it all year round – so Very Berry Cobbler to the rescue!
This Thermomix dessert recipe uses frozen berries, you can mix and match or even add some apple to the mix!
Being nutrient dense, it also makes a perfectly acceptable breakfast

An ode to SkinnyBarbecue Octopus Tapas Style… by Grant Neal
The Costa Brava was living up to its name – the Rugged Coast! They had been at sea for weeks now and had their sights set firmly on terra firma and the warm embrace of loved ones and as much Rioja as they could afford and consume!
But they had one more hurdle, one more requirement to fulfil, one last box to check. Their beautifully coloured jabega boat rocked mercilessly in the shallow waters and multiply rope lines ran from the port and starboard side, tied to men below the surface for safety!
One appears from the depth the water with burst! Air gasping and the salty water running from his long hair and beard as he exclaims “Ellos están aquí! ¡El pulpo!” – “They are here! The Octopus!”
The boat cheers and one by one the Spanish divers appear with the eight legged gold from their shallow rock hides. Homewood bound they discuss the joy at seeing family and red wine again but now they have Octopus Tapas Style on their minds!
Helpful Octopus Preparation Tips:
Cut through the body like a cake to section the tentacles into long individual pieces
remove the membrane /peel the skin prior to marinating. It isn’t necessary but helps the marinade penetrate the meat.
When sectioning the octopus tentacles, slice through the body like a cake – so they are long individual pieces
Using the smaller octopus, you can leave them whole
Skinnymixer’s Buffalo Wings have been an extremely popular Thermomix recipe on the website for years, so we thought they deserved the SkinnyBarbecue treatment!
More flavour (if that is possible!) and cooked to perfection… these Buffalo Wings are so moorish but please don’t forget the Blue Cheese Sauce or Alabama White Sauce for dipping!
