Guest Recipe: Jodi’s Whisky Cream Sauce

When we discovered the story behind Jodi Hanel’s Wedding Anniversary Whisky Cream Sauce, we asked if it could be featured as a Guest Recipe. (Ok, yes we wanted to try it on our steak!)

Adapted from a 40 year old Women’s Weekly Cookbook for Thermomix, this Whisky Cream Sauce recipe is close to Jodi’s heart.

“My parents used to co-own a motel and mum did all the cooking in the small restaurant it had. The Steak with Whisky Cream Sauce was one of the first things on the menu. We always loved the sauce and it became a tradition to cook it on our anniversary whenever we were home.” – Jodi Hanel

Guest Recipe: Jodi's Whisky Cream Sauce

Ingredients

  • 1 brown shallot peeled
  • 30 g butter
  • 40 g water
  • 160 g cream
  • 30 g whisky I use Scotch Whisky
  • 1 tsp beef stock concentrate
  • 5 g lemon juice
  • 2 tsp cornflour
  • 1 Tbsp fresh flat leaf parsley chopped

Instructions

  • Add shallot to mixing bowl, chop 3 sec/speed 9/MC on, scrape down mixing bowl and repeat.
  • Add butter and cook 5 min/100°C/speed 1/MC off.
  • Add all other ingredients and cook 3 min/steaming temp/speed 1/MC off.

7 Easy Thermomix Dinners in the Slow Cooker in under 15 mins

These Thermomix plus Slow Cooker recipes are for those busy, low effort nights that you are time poor and need dinner on the table fast! You can easily have these meals starting to cook in the Slow Cooker in under 15 minutes.

Perfect for sports nights where you are running around taking the kids to training or have better things to do than cook dinner. These healthy Thermomix recipes require minimal effort to get them started in the slow cooker in the morning and should be ready to serve for dinner. The best part is – the Slow Cooker can fit double batches so you can cook once and have 2 nights of dinners ready!

These recipes are for use in your slow cooker, not in the slow cook mode for the TM6 Thermomix. We recommend using the Cookidoo collections designed for the Slow Cook Mode.

Beef Madras 

The beef madras recipe was one I developed when I was doing the HCG Protocol (500 calories a day)…. I needed to come up with creative ways to make extremely limited ingredients taste amazing. Would you believe it’s only 250 calories per serve…. in comparison, most curries are up around 700 calories per serve.

The Beef Madras from A Little Taste of India is a personal favourite of mine. If you don’t have the fresh ingredients to make the version in the book, you can make it even faster using the free version on the website. Two more great quick curries are Beef Curry in a Hurry & Quick Lamb Curry.

To slow cook, simply use the Thermomix to chop your chilli, garlic, ginger and onion. Either sauté in the Thermomix with oil or if you have the function on your slow cooker you can brown everything in there (including meat). Use a slow cook cut of meat like Gravy beef or Chuck beef and increase to 1.5 or double the meat. Reduce water by 50% and cook on low for 6-8 hrs.

When it is time to serve, pop some green beans in the slow cooker and thicken with a cornflour mixture if desired (1-2 Tbsp cornflour mixed with 2 Tbsp cold water). You can cook your rice while the beans cook or serve with cauliflower rice or fresh noodles for a super low calorie dinner.

Texas Chili 

Nothing warms you up like a bowl of Texas Chili !

A true Texan Chili Beef shouldn’t have beans (but we won’t be watching if you would like to add some in to make it stretch further!), I think you are going to love this Texas Chili from The Healthy Mix VI

To slow cook, simply use the Thermomix to chop your garlic, chilli and onion. Either sauté in the Thermomix with oil or if you have the function on your slow cooker you can brown everything in there (including meat). You can use coarse ground mince or even change to a slow cook cut of meat like Gravy beef or Chuck beef and increase to 1.5 the meat. Reduce water by 50% and cook on low for 6-8 hrs.

When it is time to serve, thicken with a cornflour mixture if desired (1-2 Tbsp cornflour mixed with 2 Tbsp cold water). Serve in a bowl topped with sour cream, cheese, fresh lime and some corn chips. This is also delicious with Mexican Red Rice, Cornbread and makes the best Sloppy Joes.

Mojo Pulled Pork Shoulder

Grab a pork shoulder on special and with a few minutes in the morning, you will have the most delicious SkinnyBarbecue Mojo Pulled Pork for wraps/street tacos by dinner time! 

To slow cook, simply use the Thermomix to chop your garlic, and weigh all the ingredients. Add everything to your slow cooker and cook on low for 8 hrs.

When it is time to serve, you may like to reduce the liquid down with the lid off or just pull the pork and stir through enough liquid to desired consistency. Serve on wraps or tacos with some salad or if you are organised so Quick Pickled Pineapple & onion.

Honey Mustard Corned Beef

Honey Mustard Corned Beef in the Slow Cooker

The Honey Mustard Corned Beef variation of the Honey Mustard Chicken in The Healthy Mix III first appeared in 2018 thanks to Kerry Lanzini, who is part of the Skinnymixers Recipe Development Team. 

Since then, we’ve seen a few different variations of this meal. Some Skinnies who have salt reduced corned beef, simply cook the sauce for the Honey Mustard Chicken without chicken or cornflour and add to their slow cooker in the morning with the corned beef and cook on high for 5 hours.

The Original variation is:

  • Double the Honey Mustard Sauce, uncooked (no stock paste, half honey, no chicken/cornflour)
  • Add potatoes to the bottom of the slow cooker, place meat on top and pour over prepared sauce.
  • Cook on low for 9 hours
  • Add cornflour as per recipe in the last 30 mins.

Country Chicken & Vegetables

Country Chicken & Vegetables in the Slow Cooker is definitely a family favourite

The Country Chicken & Vegetables from The Healthy Mix VI, has quickly become a Skinnymixers favourite for a simple, delicious and nutritious family approved dinner.

Although this recipe only takes 20 minutes to cook in the Thermomix, it has classic chicken casserole flavours that work perfectly in the slow cooker. You can literally just pop it all in the slow cooker (except cornflour) and add the cornflour mixture in the last 30 min of cooking.

The best part of cooking in the slow cooker is that you can increase the quantities and use budget cuts of chicken like chicken pieces or even a whole chicken.

Adjust your cooking time for your chosen cut of chicken and you will be enjoying this tasty dinner in no time at all.

We recommend not cutting up your chicken breast or thigh & pulling apart after cooking to help avoid them drying out.

  • Chicken breast 2 hr on High or 3 hr on Low
  • Chicken thigh 2 hr on High or 3 – 4 hr on Low
  • Chicken bone in pieces or drumsticks 4 – 5 hr on Low
  • Whole Chicken 4 – 6 hr on Low

It is best to also check with your Slow Cooker manual on their recommended cooking times for the different cuts of meat. If you have a food thermometer, you want the thickest part of the chicken to be 74°C or 165°F.

Serve with mash, rice, pasta or in a bowl with crusty bread and a spoon.

P.S. The leftovers make the most epic pies with a little more cornflour mixed in! 

Pea & Ham Soup

Thermomix Pea and Ham Soup
Skinnymixers Pea and Ham – super smooth and full of flavour in The Healthy Mix II.

Now the Pea & Ham Soup in The Healthy Mix II gives you the silkiest, smoothest and super fast Pea & Ham Soup cooked in the Thermomix. But if you are wanting to use a Ham Hock instead of Bacon Bones, then we recommend cooking it on the stove top, in a slow cooker or in a pressure cooker.

I could only get a whole ham hock not bacon bones so I did Skinnymixers pea and ham soup recipe but in the pressure cooker! 40 minutes and the meat just fell off of the bone.
Instead of blending the soup I just shook the meat off of the bones and mashed it all together with a potato masher – Kim Maree

This is a great budget recipe to use up the leftover Ham Bone from making Glazed Baked Ham or that leftover Christmas ham bone. If you don’t have much meat on the bone, you can add extra ham meat.

  • You want a ham hock approx. 1.2 kg or a meaty leftover ham bone. 
  • Use 1.5-2 L water
  • If you like an extra thick soup, double the split peas.
  • Use 3/4 tsp cracked black pepper instead of the peppercorns
  • You can thin out the soup after cooking with additional water and season to taste
  • Use the Thermomix to chop the vegetables and transfer to the slow cooker – or you can sauce first.
  • Cook for 8-10 hrs on low or 6 hrs on high, pressure cook for 40 mins. 
  • After cooking, remove bay leaves, bone and fatty skin. Feel free to blend the soup or just mash with a potato masher.
  • Shred ham meat off the bone and add back to soup.

Serve with crusty bread!

Coconut Curried Sausages

Coconut Curried Sausages in the Slow Cooker

The Skinnymixer’s Coconut Curried Sausages have been a long time family favourite in the Thermomix Community. But have you ever slow cooked them?

Kris Kalleske has been slow cooking the Coconut Curried Sausages for years & these are her slow cooker hacks for this Thermomix recipe!

  • Use 2kgs of good quality beef sausages and a couple of carrots sliced.
  • Fry off onion, Malaysian Style Curry Powder and tomato paste for a couple of minutes. 
  • Add everything else except rice, water and peas/baby spinach.
  • Add 1 cup blitzed or grated pumpkin to thicken the sauce.
  • Cook on high for 2-4 hrs.
  • Add peas and spinach 10 mins before serving and stir through. Add a little water and stir through to desired consistency if you would like it a little thinner.

Serve this super budget friendly recipe with rice & freeze any leftovers for an easy dinner!

Healthy Thermomix Meal Prep – 97 freezable THMVI meals for $2.88 per serve

Our amazing Brooke is back again with another Thermomix Meal Prep Cook Up, this time it is from The Healthy Mix VI cookbook.

You may have seen my earlier blog posts ‘Healthy Thermomix Meal Prep – 75 freezable dinners for $2.80 per serve’ and ‘Healthy Thermomix Meal Prep – 84 freezable THMIV dinners for $2.25 per serve a couple years ago where I did bulk cook up days for my 80 year old grandparents to make mealtimes easier for them.

Well a couple years have past and have been unable to fill the freezer due to restrictions. Nan had a bare freezer again and it was school holidays so it was the perfect opportunity for another bulk cook.

Somehow 2.5 years have passed since the last bulk cook up for my 80+ yo Nan. Now she is loaded up with nutritious meals for quite a while. 

This time THMVI has provided 97 meals for $280 ($2.88 per meal). 6 meal choices with various sides.

We spent $280 on shopping from the butchers, fruit & veg grocer and Woolies for all ingredients except for some Skinnymixers Chicken Stock Concentrate (THM1) and spices (I bagged these up from my house before going on holidays).

This worked out to $2.88 per portion.

I choose the following meals with a couple protein subs to suit Nan’s likes and we added some sides as individual serves ready to go are best for Nan so she can just grab, heat and eat on the fly. We made 6 different dishes with various sides. I have doubled all recipes and bulked out these dishes with additional sides to increase the vegetable intake and stretch them further to save money.

This cook up took around 6 hours including cleaning, serving, labelling and lunch (4.5 hours cooking and 1.5 portioning and serving up). 

Meal Planning

Beef Curry in a Hurry

Beef Curry in a Hurry

Opted to slow cook this recipe and therefore beef curry “not in a hurry” to reduce the cost by using a slow cook cut of beef – gravy beef.

Followed the double and slow cook variation notes in the book and increased the meat to 2kg.

Served individual meals with rice and veg or mash and veg.

Coconut Curried Meatball Dinner

Bulked this meal with some extra rice and spread over 3 dishes in the oven.

Served individual meals topped up with some additional steamed veg.

Not Butter Chicken

Followed the double and slow cook variation notes in the book and used 2kg chicken thigh.

Served individual meals topped up with some additional veg and rice or veg and mash.

Thai Pork & Lime Stir Fry

I changed the pork to chicken breast for this. Followed the double variation as per the book and bulked with additional stir fry vegetables.

Served individual meals served with noodles. 

Country Chicken & Vegetable Shepherd’s Pie Style

Country Chicken & Vegetables

I made two batches (one in each thermomix) and added some additional veg to each batch.

We split this meal into foil containers (double serves) one batch served on top penne pasta topped with some cheese for a pasta bake version and the other topped with mash. We didn’t bake at so they popped into the oven to finish off and serve with a fresh salad or vegetables.

Hodge Podge Brunch

I doubled this recipe. Ensure you do the meat step in 2 batches and cook in 2 large dishes to ensure even cooking. Portioned up in containers to be served with salad on serving.

Sides

  • Rice – cooked in the thermomix, you can also do in a rice cooker or stovetop
  • Penne – cooked on the stovetop
  • Sweet potato mash
  • Rustic Mash
  • Steamed veg (frozen vegetable mix and some excess vegetables from the recipes)
  • Rice noodles
 

Planning

  1. The Healthy Mix 6 cookbook for meal choices.
  2. Prepared a shopping list – you can download mine using the form above.
  3. Prepared all the spices required, fresh batches of stock concentrates and a double batch of Malaysian Style Curry Powder as I was travelling.
  4. Review fridge, pantry and freezer contents.
  5. Ordered online shopping with Woolworths for click and collect the day before and picked up the meat from the local butcher and most vegetables from a local fruit & veg grocer.
  6. Prepared labels (you can hand write too)
  7. Planned the order of what to cook in what thermomix/slow cookers/appliances to best utilise the time

Also don’t forget the freezer space needed to store the meals, so clean out prior to cook up day.

Cooking Day

Get the slow cooker recipes on first then move onto the Thermomix recipes.

Prep as much as you can as most of these recipes are quick cooks, ie. Peel that bag of onions, those couple cloves of garlic at once.

Use all leftover vegies as sides.

Tip – Allow all meals to cool before portioning up. This time I cooled in the fridge overnight and portioned up the next day.

Tip – If you have time I recommend preparing your slow cooker meats & sauces the day before so you just to add to the slow cooker and turn on.

Tips for Freezing

  • Allow meals to cool slightly before serving into dishes.
  • Allow to completely stop steaming before putting on lids.
  • Further cool in the fridge before freezing (day/over night).
  • Use appropriate sized containers so they are full. I bulk bought 500ml containers from ebay.
  • You can use glass or higher quality plastic containers should you wish and the budget allows.

Tips for Reheating

  • Ideally defrost in the fridge first then can microwave heating evenly. Foil tray items defrost then into the oven to reheat/finish off.
  • Yes everything freezes and reheats well.

Other FAQS

Q: Do you have more than 1 thermomix?

  • Yes, I used 2 Thermomixes, 2 slow cookers, stovetop and an electric fry pan. 

Q: Wow must have a huge freezer?

  • No, they stacked really well and only took 4 drawers of space in a side by side french fridge/freezer.

I absolutely love the minimal ingredients and minimal time needed to make Choo Chee Prawns using a portion of the Thai Red Curry Paste from the freezer stash!

This flavour packed Thai Prawn Curry uses the Red Curry Paste in SkinnyAsia, however you can also use a portion of store-bought curry paste. The heat levels will come from how hot the chillies are in your Thai Red Curry Paste.

Dark Rum

Kraken Dark Rum is a favourite of Nikalene & Grant’s, however any rum like Bundaberg Rum will be suitable.

If you don’t drink Rum, this cocktail will work beautifully with your favourite Gin or Vodka also.

Thai Basil

The SkinnyAsia Hainanese Chicken Rice Thermomix recipe in my eyes is PERFECT!  Truly a big, warm hug on a plate, my kids love meals like this where everyone can adjust flavours to their own taste. 

SkinnyAsia is available from Friday 22nd of September at 8pm SA time. 

If you have never had this classic poached chicken and fragrant rice dish, it is truly a classic & much-loved recipe in Singapore.

When we made it in the Skinny test kitchen I think I stood there for a good 20 min just dipping chicken into that Green Ginger Sauce… don’t forget to make the Sambal too, it pairs so perfectly!

This Hainanese Chicken Rice isn’t a traditional recipe, just our Skinnymixer’s take on it. Steaming the chicken in the Thermomix produces incredibly moist chicken and the flavour drips down onto the rice as it cooks the broth underneath.

Although the Sambal isn’t a traditional part of Hainanese Chicken Rice, it is a delicious take on a garlic chilli sauce that it would traditionally be served with. 

For all our Low Carb Skinnymixers the cauliflower rice version is just as delicious!

  • squid calamari tubes – you can buy whole fresh calamari from your local fish market or fish monger. Don’t stress if you can’t buy fresh whole squid, you can easily use calamari tubes from the supermarket or even frozen ones.

The Chilli Oil in SkinnyAsia is so incredibly easy to make in the Thermomix and is sure to add a flavourful, spicy zing to any dish!

This recipe is exclusive to the cookbook SkinnyAsia – available as an eBook or Cookbook

Now this Chilli Oil isn’t just any quick fix condiment, although there is very little active time. 

We infuse the aromatics in the chilli oil for a an hour in the Thermomix or the stovetop. 

This adds an incredible level of depth and complexity to the flavour of the Chilli Oil.

In the SkinnyAsia Cookbook we use it in the Dumpling Dipping Sauce, Rainbow Soba Salad, Char Kway Teow, Betty’s Yum Cha Black Bean Pork and serve it with Mi Goreng or Spring Onion Pancakes.

Tip: It is best to get your chilli flakes from an Asian grocer – as they have less seeds and are not as hot!

You can deseed whole dried chillies to have full control over the heat of the Chilli Oil. Remove stems and seeds. Then add chillies to the thermo cooker or food processor and blend briefly (2 sec/speed 7/MC on) and repeat until desired consistency.

skinnymixer’s Furikake

Furikake is a dry Japanese seasoning that will bring extra flavour to your Okonomiyaki from SkinnyAsia or steamed rice, udon noodles, salad and popcorn. 

Nutty, crunchy and savoury packed with umami flavour. Furikake is a little bit like the salt & pepper in the Japanese kitchen.

For everyone waiting to make the new Okonomiyaki, we thought you might like to start getting ready this weekend with some Furikake!

You can buy seaweed sheet snack packs at Woolworths and Coles

What will you need to make Furikake?

  • white sesame seeds
  • black sesame seeds
  • Nori seaweed sheets (approx. 2 g total – we used 1 of the snack pack sizes but you can break a bigger sheet)
  • salt flakes
  • dried chilli flakes
  • dried basil leaves
  • white sugar is optional

  • 3 Tbsp white sesame seeds
  • 1 Tbsp Black sesame seeds
  • 3 Nori seaweed strips snack size pack (2 g)
  • tsp ginger powder
  • 1 tsp salt flakes
  • ¼ tsp dried chilli flakes 1/2 for heat
  • ¼ tsp dried basil
  • 1 pinch white sugar optional

Instructions

  • Shred nori in a bowl for 3 sec/speed 9/MC on, scrape bowl and repeat.
  • Add sesame seeds and roast for 10 min/steaming temp/speed 2/MC off.
  • Add all remaining ingredients and mix for 5 sec/speed 4/MC on. Set aside to cool before using.

Store in an airtight container in the pantry for up to 3 weeks.

With SkinnyAsia being released this Friday, we thought it was the right time to release our Healthy Hoisin Sauce Thermomix recipe so our Paleo and Low Carb Skinnymixers can get prepared too!

This Healthy Hoisin Sauce can be used in all the recipes in SkinnyAsia that use Hoisin Sauce. Hopefully it helps unlock a little more of the delicious world of Asian cooking for you and you don’t need to worry about what is in the sauces! 

We also have a Roasted Seed Butter (savoury version) that you can use for this recipe.

Ingredients

  • ¼ cup soy sauce, tamari or coconut aminos
  • 2 Tbsp roasted seed butter, tahini, almond butter or peanut butter (no added salt)
  • 4 Tbsp brown sugar, coconut sugar or compliant low carb granular sweetener
  • 1 Tbsp rice vinegar or balsamic vinegar
  • 2 tsp sesame oil
  • 1 tsp garlic infused olive oil or 1 tsp garlic powder
  • 2 Tbsp water
  • ½ tsp Chinese Five Spice
  • ¼ tsp xanthan gum

Instructions

  • Add all ingredients to mixer bowl and mix 10 sec/speed 7/MC on. Scrape mixer bowl down and repeat if required.
  • Cook for 10 min/100°C/Speed 1/MC on or until reduced and starting to thicken.
  • Store in the fridge for up to 3 weeks.

For years a certain someone on the Skinnymixer’s team has been begging me for a Skinny Zinger Burger with Pepper Mayo Sauce *cough Sian*.

If you love Tandoori, you are going to LOVE the roasted Chargha Chicken in The Healthy Mix Dinners 2!

We save a little of the marinade to make a delicious spiced yoghurt dressing. We highly recommend also making the ever versatile Chopped Tomato Salad from the sides section to complete the meal.

What is Chargha Chicken?

This delicious marinated, roasted chicken has Pakistani influences. “Chargha” comes from the Pashto language and means “chicken”. This recipe is inspired by Lahori Chargha, a soft succulent fried chicken marinated in a spicy rub and steamed first.

We don’t steam or deep fry this chicken, but we do spatchcock and then roast to be juicy and cooked to perfection.

Feel free to use this marinade on other proteins or other cuts of chicken. Just don’t forget to save a little of the marinade to make the sauce!
