Baked Harissa Chicken

The Baked Harissa Chicken features in The Healthy Mix V Thermomix Cookbook.

Tray bakes are always incredibly popular amongst the Skinnymixers community. The idea of being able to chuck all of the ingredients into a tray and have a complete meal ready at the end is a great time saver.

The smoky red chilli pepper paste found at your local supermarket produces a minimal effort but maximum flavour dinner. If you can’t find the Harissa Paste in the spice section of your supermarket, you can use the Moroccan Spice Mix from The Healthy Mix V to make a delicious variation of the recipe.

THMV: Bacon Wrapped Meatloaf with Smoky BBQ Sauce

Bacon Meatloaf

This Bacon Wrapped Meatloaf with Smoky BBQ Sauce recipe has converted meatloaf-hating family members for many years now, it was one of the first recipes I created for Skinnymixers and I knew it deserved a place in The Healthy Mix V.

Topped with rich smoky BBQ sauce, this is so much more than your average meatloaf.

skinnymixer's Bacon Wrapped Meatloaf with Smokey BBQ Sauce

Ingredients

Meatloaf:

  • small handful of parsley
  • 2 garlic cloves peeled
  • 100 g carrot or zucchini roughly chopped
  • 1 small onion halved and peeled
  • 500 g beef mince or preferred minced meat
  • 2 eggs
  • 10 g psyllium husk or 1 cup bread crumbs
  • 1 tbsp salt
  • ¼ tsp cracked pepper
  • 1 tsp smoked paprika
  • 10 bacon rashers
  • 2 tbsp preferred frying oil

Smokey BBQ Sauce:

  • 30 g coconut sugar
  • 30 g butter
  • 120 g tomato sauce
  • 10 g tamari or coconut aminos or worcestershire sauce
  • 10 g apple cider vinegar
  • 1 tsp cacao or cocoa or instant coffee
  • 10 g lemon juice
  • 90 g water
  • 1 tsp smoked paprika

Instructions

  • Add parsley and garlic to mixer bowl, blitz for 3 sec/speed 9/MC on.
  • Add carrot and onion, chop for 3 sec/speed 6/MC on.
  • Add remaining meatloaf ingredients, except for bacon and oil, and pulse turbo 1 sec/5 times to roughly combine.
  • Remove meatloaf mixture to a silicone mat or large piece of aluminium foil and shape into a rounded meatloaf shape.
  • Wrap bacon rashers around meatloaf and secure in place with toothpicks.
  • Transfer meatloaf to large bottom steaming tray. It's okay if it bends up the sides.
  • Add 600 g or 21.2 oz water to mixer bowl and steam meatloaf for 45 min/steaming temp/speed 2/MC off. In the last 20 mins of steaming time, feel free to add vegetables around meatloaf to cook and serve.
  • With 5 mins remaining, heat preferred oil in a large frying pan to medium heat.
  • Transfer meatloaf to frying pan and brown on all sides.
  • While the meatloaf is browning, prepare smokey BBQ sauce with a clean bowl:
  • Add all sauce ingredients to mixer bowl, cook 5 min/steaming temperature/speed 2/MC off.
  • Remove toothpicks and serve meatloaf with steamed vegetables or salad and smokey BBQ sauce drizzled over the top.

Notes

I used smoked streaky bacon.
You can prepare the sauce standalone to use with other dishes.
I used Thermobextas *amazing* tomato sauce recipe for my sauce, in which I substitute the raw honey with coconut sugar 🙂
This is loosely inspired by the Womans Weekly BBQ Meatloaf.

Steaming meat in your thermo cooker may seem like a risky thing to do with a beautiful cut of meat like eye fillet, but the results will blow you away—especially if you utilise a meat thermometer to cook your meat perfectly.

While developing this recipe, we found that tinned peppercorns produce the best result, so try to source them when possible.

We found the tins of green peppercorns to produce a better result but have also included the amount to use for the little jars as well.

Caramel Coffee Frappe

The Caramel Coffee Frappe from The Healthy Mix V Sweets section has fast become my favourite morning Thermomix smoothie.

Frappé is a traditional Greek iced coffee, usually made only with water, instant coffee and sugar.

However, in recent times a fast food chain popularised Frappé made with syrup, milk and cream. I thought that a healthy blend of the traditional and new was needed!

Guest Recipe: Kate's Cranberry Pumpkin Seed Crackers

Ingredients

  • 170 g Dried Cranberries or 1 cup other dried fruit
  • boiling water to soak cranberries
  • 145 g wholemeal plain flour
  • 150 g white plain flour
  • 55 g brown sugar or coconut sugar
  • 100 g flaxseeds or linseeds
  • 35 g sunflower seeds
  • 80 g pepitas or nut/seed of choice
  • ½ tsp salt
  • 2 tsp Bicarb soda
  • 90 g honey
  • 30 g molasses
  • 500 g unsweetened Greek yoghurt or coconut yoghurt

Instructions

  • Preheat oven to 175°C or 347°F, fan-forced. Prepare a 28cm loaf tin.
  • Place dried cranberries in a bowl and cover with boiling water while you prepare other ingredients.
  • Add both flours, sugar, flaxseeds, sunflowed seeds, pepitas, salt and bicarb soda to mixer bowl. Mix 10 sec/speed 3/reverse/MC On.
  • Carefully drain cranberries. Add reserved cranberries and remaining ingredients to mixer bowl. Mix for 20-30 sec/speed 4/reverse/MC On - you want the mixture to be just combined.
  • Pour batter into prepared loaf tin and bake for 45-60 mins or until a skewer inserted into the centre comes out clean.
  • Remove the loaf from the oven and allow to cool for at least 4 hrs before placing in the freezer for 1-2 hrs - this will allow you to slice it thinly (you don't want the loaf to freeze solid).
  • Slice the loaf with the base of a very sharp serrated knife, as thinly as possible - approx. 3mm. You may wish to use a mandolin or deli slicer.
  • Preheat oven to 150°C or 302°F. Line 2 baking trays with baking paper and place slices onto trays, close together but not touching.
  • Bake for approx. 25-30 min, flipping every 10 min. It is important to keep a close eye on the crackers as they can burn easily. Crackers will firm up when cooled.
  • Remove crackers from oven and transfer to a colling rack. Allow to cool completely before storing in an airtight container for up to a week.

Notes

Tips:
  • If crackers lose their crispiness place them back in the oven and bake again.
  • Alternatively you may like to use mini loaf pans. I have used the KMart mini loaf pans with success. First bake time needs to be adjusted to 20/25 minutes or until a skewer comes out clean.

The Thermapen is the foolproof way to the perfect steak! It has been my go to item since I started barbecuing, but I use it all the time in the kitchen too. It gives you a calibrated temperature reading within 3 seconds, and you can switch between Celsius and Fahrenheit.

It takes the guesswork out of cooking, I no longer have to worry if my chicken is cooked through to a food safe level because the Thermapen so incredibly accurate. My best suggestion is don’t buy a black one as I can never find mine hiding around the barbecue lol!!!

I avoided getting an Apple Watch for years. But when the new version came out this year I made the purchase. I honestly don’t know why I didn’t get it sooner, although I now realise I don’t drink enough water and definitely don’t sleep enough but thanks to the watch I am working on it!

Wusthof Trident Classic Ridged Cooks Knife

My most favourite kitchen knife EVER – I have so many Wusthof knives, nearly the whole range, but I use this one 80% of the time.
I love it so much that I even bought one for the admin girls for Christmas presents last year.

Dyson Air Wrap

Now that my hair is long, but naturally curtly, I struggle daily to get a smooth straight finish on my hair. Only a trip to the hairdresser could see me getting away with not doing my hair for a few days at a time. When lockdown occurred I went online shopping and thought I would give the Dyson Air Wrap a go. For the cost I was thinking this better be good!!! It hasn’t disappointed and it honestly gives the same smooth finish I get at the hair dressers. I am now starting to experiment with the curling attachment, which gives my hair amazing body. 

Collagen Hydrolysate

I love being able to add Collagen easily into my Smoothies and of course into the new Frappe from The Healthy Mix V. It has numerous health and beauty benefits and its so easy to use. I don’t notice a difference in the taste in whatever I decide to add it into. You can purchase it from health food shops and some chemists.

Macadamia Milk

I started using MilkLab Macadamia milk late last year and I have been hooked ever since. It complements coffee so well and I find it perfect in my smoothies and frappe. It is so smooth and creamy and such a great milk alternative. If you haven’t tried it then please give it a go – I guarantee you wont be disappointed.

Lanolips Lip Tints

I was gifted these from a friend as I was suffering dry lips throughout winter but still wanted to have a bit of colour on my lips. These are so good!
They aren’t too sticky, don’t have a scent and have a lovely soft colour to them to suit any skin tone. I now have one in the car, my room, and my bag so I always have one on hand.

With the release of my A Little Taste of Greece cookbook in 2020, it seems everyone was getting ready for the new Greek recipes by recooking an old favourite – Slow Cooked Greek Lamb.

The best part about this Slow Cooked Greek Lamb is definitely the gravy that is created by the marinade mixing with a little stock concentrate and the juices from the lamb cooking.

Dropping a couple of places from #6 the Rustic Shepherds Pie is a family favourite. Simple, classic flavours that is sure to be popular with fussy eaters (young and old). We included a special Family Shepherd’s Pie with Hidden Veg in The Healthy Mix IV cookbook.

You can easily adapt this recipe to add extra vegetables or make it low carb with the addition of cauliflower mash.

You can also freeze portions for a fast mid-week. Simply pop into the freezer after adding the mash on top and bake in the oven when ready to eat.

I definitely think the Southern Not Fried Chicken was one of the most cooked new recipes in Skinnymixers this year. 

I love to keep the mixed spices made up in a jar in the cupboard to have it ready to go for a quick & cheap delicious meal.

Loosely inspired by the KFC recipe on wikipedia, I am definitely glad I finally gave into Sian’s Skinnynag to make my own KFC recipe.

There is also a Southern Not Fried Chicken Bites recipe in The Healthy Mix V that my kids absolutely LOVE.

YESSS!! I’m so excited about this new addition to our Top 10 Recipes for the year. To me it means, so many more Skinnies took the time to take their dishes to the next level by making my Stock Concentrate!

I always make sure that I have a stash of the Chicken Stock Concentrate and the Beef Stock Concentrate in the freezer. It doesn’t freeze solid and can just be scooped out as needed.

Once made it will keep in the freezer for months, ready to take your dishes to the next level.

It seems the new updated version of this popular hidden vegetable Thermomix recipe, jumped it up to #2 in our Top 10. This recipe is popular with mums of fussy eaters. Give it a go and see if it is popular in your household. If your child doesn’t like the taste of cheese or prefers different cheeses, try different cheese combos.

If you need it to be dairy-free, try the Dairy Free Cheesy Spelt Pasta recipe.

Some other clever Skinnymixers have made the Macaroni Cheese with a Twist into frittatas perfect by following similar directions to the Risotto Frittatas with a Twist and adding egg to the cooled mix and baking in muffin tins.

My Aussie Lamb Burger Patties Thermomix Recipe takes just minutes to cook!

It doesn’t get much more Aussie than an Aussie Burger… unless you opt to use my new Aussie Lamb Burger Patties instead of beef!

To celebrate Australia Day 2021, I thought it was time I created a delicious and healthy Aussie Lamb Burger Patties Thermomix recipe… much like my American Burger Patties these can be enjoyed in a burger or salad bowl and I highly recommend a heavy dollop of my beetroot relish to top it off 😉

Skinnymixer's Aussie Lamb Burger Patties

Servings 5

Ingredients

  • 1 clove garlic
  • 1 small handful flat leaf parsley leaves
  • 5 large fresh mint leaves or 8 small
  • 500 g lamb mince
  • 1 egg optional but recommended
  • 1 tsp onion powder
  • 1 tsp garlic powder
  • ½ tsp salt increase up to 1 tsp
  • ½ tsp cumin powder

Instructions

  • Add garlic, parsley & mint to mixer bowl. Chop for 3 sec/speed 9/MC on. Scrape bowl down and repeat.
  • Add remaining ingredients and combine 10 sec/speed 3/MC on.
  • Form into preferred burger sized patties (makes approx. 4-6) flatten and grill, pan-fry or BBQ.
  • To Cook on a Smoker: 135°C or 275°F until 71°C or 160°F internal temp.
