Everyone needs a list of go-to 30 minute Italian dinner Thermomix recipes, especially for those nights that you need a healthy dinner on the table ASAP. This is my list of 30 minute Skinnymixers recipes – hopefully it helps for the nights that you need dinner on the table in a hurry!

This list of 30 minute dinner recipes are faster than getting takeaway and can also be suitable for people needing gluten free, low carb, dairy free or low fodmap recipes. You will notice quite a few of these recipes are from A Little Taste of Italy. We’ve been a little crazy about everything Italian lately in the Skinnymixers Facebook group with the release of the new book A Little Taste of Italy.

Skinnymixers prawn pasta

Creamy Tuscan Prawn Linguine

ALToIT: Creamy Tuscan Prawn Linguine

This one-pot wonder from ‘A Little Taste of Italy’ is restaurant quality dinner, and is ready in 30 minutes.

If you don’t love prawns or maybe they aren’t in the budget this week, you can change the prawns to chicken, bacon, salami… or even chorizo.

I’ve also used frozen prawns before for a quick ‘I really don’t want to go grocery shopping’ dinner. You can use other types of pasta also – penne, spaghetti, fettuccini all work. We just recommend that you stay away from the rice based Gluten Free pasta. Or if you have fresh pasta you can omit the water and cook the pasta on the stovetop, then stir through the sauce at the end.

Creamy Marsala Chicken Skinnymixers

This 18 minute dinner is packed full of flavour and the perfect mid-week meal from the new book ‘A Little Taste of Italy‘.

Serve with mash, steamed vege, rice, pasta… whatever you feel like having. It is important to not sub the Marsala in it though, it completely changes the taste of the dish. You can buy a bottle of Marsala (most bottle shops in Australia stock ‘Boronia’) for approx $10 depending on where you live.

If you aren’t a mushrooms lover, you can increase your chicken and bacon slightly and add green beans.

Minestrone Soup

This is one of the most delicious soups that Nikalene has developed and it is super budget friendly!

Also if you have a few sad vegetables in the fridge, it is the perfect ‘chuck it all in’ meal. If you don’t have the kidney beans, then add a can of cannellini beans.

This recipe can easily be made vegetarian, low carb, paleo and low fodmap.

If you love skinnymixer’s Bacon & Vegetable Soup the Minestrone Soup from ‘A Little Taste of Italy’ is even better!

Ricotta Gnocchi

ALToIT: Ricotta Gnocchi with basil butter sauce

Do you love gnocchi but don’t love the carbs that come with it? This low carb ricotta gnocchi is a great alternative to pasta. However if you can have flour, the flour version is incredible.

The key to success is to stick with the ingredients and buy the fresh firm ricotta from the deli and not the tubs.  The ricotta tubs have more liquid and your gnocchi will melt when steamed. If this does happen you can still save dinner by letting them cool, rolling and panfrying them gently.

If you feel your mix is too wet – add more almond meal or flour. Gluten free flour works perfectly also.

The classic Italian Meatball recipe from ‘The Healthy Mix I’ uses an Italian Spice Mix to add flavour and cut down on active cooking time.

The Italian Meatballs are a fantastic 20 minute dinner that are popular with kids and can be served with pasta or mash, steamed vege or even salad.

Some #chubbymixers have even been known to serve them as their very own Italian Meatball Subway sandwiches.

If you keep some basic pantry staples ready for the nights that the fridge is looking empty, the Puttanesca can be ready in 20 minutes.

Thermomix Family Hidden Vegetable Bolognese

Thermomix Family Chunky Bolognese with Hidden Vegetables

THMII: Family Chunky Bolognese with Hidden Veg

The skinnymixer’s Chunky Bolognese is definitely a crowd favourite, but what if you need to cook for more hungry mouths and want to add some hidden vegetables? This version of the Chunky Bolognese cooks 1kg of mince in the large steaming trays and not in the simmering basket.

This recipe is great for kids and to fill your #freezerstash with easy family-friendly dinners.

THMII: Chicken Cacciatore

This recipe takes 25 minutes to cook, is lower in calories and is low carb. Classic Italian flavours, in a fast dinner that you will no longer need to buy pre-made sauce from the supermarket again.

Caponata is a delicious Sicilian eggplant stew, that will pair perfectly with grilled protein of choice.

The best part is that the leftovers are exceptional with eggs for breakfast and makes a delicious addition to a cheese & cracker grazing platter.

ALToIT: Piselli Alla Fiorentina (lemon & prosciutto peas)

Looking for a tasty side to go with your next BBQ or even a quick and easy pan-fried chicken breast?

The Piselli Alla Fiorentina can be made with frozen peas, fresh green beans or cauliflower. Making this side-dish incredibly fast to make and a great option to make a basic meal a little bit fancy.

Healthy Carbonara from The Healthy Mix

THM: Healthy Carbonara Sauce

This dairy free, creamy pasta sauce can be made with fresh or frozen cauliflower.

A hit with many mums to get the kids eating more vegetables and fantastic as a base sauce to add your choice of bacon, mushrooms, chicken… whatever your heart desires!

The sauce is a thicker sauce perfect for zoodles. If you are serving it with pasta, you might like to thin the sauce down to your preferred consistency.

The Healthy Carbonara makes the most amazing white sauce for your next lasagna – teamed with the Family Chunky Bolognese with Hidden Vege.

THMII: Creamy Pesto Sauce

The Creamy Pesto Sauce is the perfect ‘I need dinner on the table right now’ recipe. Mix through with some pan-fried chicken, bacon, zoodles and you will have dinner on the table in under 15 minutes!

I like to freeze the pesto portion of the recipe and mix it through with the cream, as I can’t always locate fresh basil.

Something I didn’t realise before I went to Venice was how heavily seafood features in their cuisine, in hindsight that should be really obvious – so vegetarian meals were my go to in Venice and Pasta Alla Norma was one of my favourite things to eat!I love how fresh and light this sauce is, despite being a Sicilian recipe, which means it is perfect for the warmer weather Australia is coming in to. Ingredients
  • 500 g eggplant, 2 cm cubes (approx. 2 eggplants)
  • 2 Tbsp olive oil (for roasting)
  • 3 cloves garlic, peeled
  • 1 medium onion, peeled, quartered
  • 20 g olive oil
  • 2 x 400g tins whole tomatoes, we recommend Ardmona brand
  • 1 bunch of basil, leaves only (approx. 30 g)
  • 30 g tomato paste
  • 1 tsp red wine vinegar
  • 1 tsp salt
  • 1 bay leaf
  • Pinch of freshly cracked black pepper
  • Pinch of chilli flakes
Instructions
  1. Preheat oven to 200 deg, fan forced.
  2. Toss eggplant through olive oil and place on roasting tray. Cook for 25 mins, or until soft and golden brown. With 5 mins remaining, begin step 3.
  3. Add onion and garlic to mixer bowl. Chop for 3 sec/speed 7/MC on. Scrape bowl down.
  4. Add the 20 g olive oil to mixer bowl. Cook for 5 min/100 deg/speed 1/MC off.
  5. Add remaining ingredients, including roasted eggplant, to mixer bowl. Cook for 25 min/steaming temp/speed 1/MC off. Place simmering basket on top to avoid splatter.
  6. Season to taste. Serve over your favourite pasta, zucchini noodles or as a delicious topping over steak or chicken breast.

Biscotti, a very popular Italian biscuit, literally translates to “twice-cooked” – which is how the famous dry texture of this dessert is achieved.

I have created a festive pistachio & cranberry version for you all, but you can feel free to experiment with what ever flavours you would like – dark chocolate chips, almond slivers or even added cacao for a chocolate version would be delicious! These are also the perfect biscuit to include in a gift hamper! Love Nik xx

Ingredients
  • 50 g | 1.8 oz pistachios
  • 50 g | 1.8 oz cranberries
  • 200 g | 7 oz blanched almond meal
  • 50 g | 1.8 oz coconut oil
  • 50 g | 1.8 oz honey or sweetener of choice to taste
  • 20 g | 0.7 oz arrowroot flour
  • 2 whole eggs
  • 1 tsp baking powder
  • 1 tsp vanilla extract
  • Pinch of salt
  • Baking paper
Instructions
  1. Preheat oven to 170°C or 340°F and line a baking tray with baking paper.
  2. Add pistachios and cranberries to mixer bowl. Chop for 3 sec/speed 6/MC on.
  3. Add remaining ingredients to mixer bowl. Combine for 15 sec/speed 3/MC on.
  4. Scrape out mixture onto the baking paper and using a silicone spatula form the mixture into two rectangle shapes of approx. 10 cm or 4” wide.
  5. Bake for 20 mins or until just starting to brown.
  6. Remove from oven and reduce oven temperature to 140°C or 285°F.
  7. Allow to cool for 30 mins, then using a sharp serrated knife slice into 1.5cm biscotti.
  8. Place the biscotti back onto the baking paper lined tray and bake for 10 mins each side. You want the biscotti to be crispy, but not to brown too much - depending on your oven, you may need to adjust the time so keep an eye out! Allow to cool completely before serving.
Notes
!Tips:
Allowing the log to cool before cutting and using a sharp serrated knife are both really essential to achieving a nicer looking finished biscotti.
If you prefer a super crunchy biscotti, we recommend reducing the oven temperature on the second cook and cooking for longer.
Use different nut and fruit combinations or add some cocoa powder to change up your flavours.

One of the main reasons I love visiting London is for a proper English Breakfast. Only on holidays would I allow myself to eat bacon, sausages, eggs, chips, toast and baked beans all in one meal! On my recent trip to London, while enjoying breakfast, the idea struck me to do a healthier version of the English Breakfast – baked all in one. This is going to be my go to breakfast for family gatherings, because the entire thing can be prepared the night before and put in the oven first thing in the morning, meaning way less mess and effort. Ingredients
  • butter or olive oil for greasing
  • 350 g | 12.3 oz white or sweet potato, peeled, roughly chopped
  • 8 whole eggs
  • 50 g | 1.8 oz cream (optional for dairy free)
  • 1 tsp salt
  • pinch of freshly cracked black pepper
  • ¼ tsp onion powder
  • 6 pork chipolatas
  • 100 g | 3.5 oz streaky bacon, cut in to big chunks
  • 50 - 100 g | 1.8 – 3.5 oz mushrooms of choice, halved
  • 6 baby Roma tomatoes, halved
Instructions
  1. Preheat oven to 200°C or 400°F and grease a large baking dish.
  2. Add potato to mixer bowl.  Chop for 5 sec/speed 4/MC on.
  3. Add eggs, cream, salt, pepper and onion powder to mixer bowl.  Combine for 10 sec/speed 3/MC on.
  4. Pour potato and egg mixture into baking dish and arrange rest of ingredients.
  5. Cover dish with Alfoil and bake for 25 mins.
  6. Increase temperature to 220°C or 430°F.  Remove Alfoil and continue to bake for a further 15 mins or until egg has set through. Serve with my smokey baked beans.

#9 Buffalo Chicken Wings

We all went a little Buffalo Chicken Wing crazy when this recipe was released in October this year and given a couple more months I’m sure it would be higher up the list!

We’ve seen so many different variations including using tomato sauce instead of the Chilli Sauce to make them very mild for the kids. Unfortunately my kids decided to taste these tasty wings and the delicious Blue Cheese Sauce… and loved them >.< !

#8 Roast Pork Belly with Caramelised Apple Sauce

How can something so simple and so little ingredients pack such a flavour punch? An instant classic and a meal sure to impress at any dinner party. This recipe received an all-in-one update in the cookbook The Healthy Mix III this year.

#7 Chunky Bolognese

It’s hard to believe that the Chunky Bolognese isn’t higher up on the list as it is cooked regularly in many households. If you have previously attempted a Spaghetti Bolognese in the Thermomix and haven’t loved the results, then you need to try this recipe.

#6 Rustic Shepherds Pie

The Rustic Shepherds Pie is a family favourite. Simple, classic flavours that is sure to be popular with fussy eaters (young and old). You can easily adapt this recipe to add extra vegetables or make it low carb with the addition of cauliflower mash.

You can also freeze portions for a fast mid-week. Simply pop into the freezer after adding the mash on top and bake in the oven when ready to eat.

#5 Aussie Meat Pie Filling

This healthier version of the classic Aussie Meat Pie with Mushy Peas was the cause of many, many pie makers being purchased in the Skinnymixers Facebook Group.

We saw the healthy pastry free versions, gluten free pastry and then a flood of classic pies with shortcrust pastry on the bottom and puff pastry on the top – with the confidence of knowing exactly what went into the delicious pies.

Some other clever Skinnymixers have made the Macaroni Cheese with a Twist into frittatas perfect by following similar directions to the Risotto Frittatas with a Twist and adding egg to the cooled mix and baking in muffin tins.

If you love Big Mac’s then you are certain to love this healthier salad version. Team up the Big N Special Burger Sauce & American Style Beef Burger Patties with some extra pickles, lettuce and toasted sesame seeds.

When you make Mayo based sauces in the Thermomix the oil is VERY IMPORTANT. If you can’t get the mild in flavour Costco Avocado Oil, you can use grapeseed, ricebran or a very light tasting olive oil.

Do not use supermarket extra virgin avocado oil for your mayo recipe.

The Moroccan Quinoa Salad from The Healthy Mix II is amazing as a side dish (especially with the THM Middle Eastern Lamb Cutlets) or can be eaten as a main.

I personally like to add roasted pumpkin & Persian Feta on top for an extra WOW factor.

This recipe is not able to be doubled but makes a large amount. If you are wanting to bulk it out even further for entertaining, it is recommended to make it twice OR bulk it out with roasted vegetables and baby spinach. 

TIP: Use the Spanish Spiced Almonds from ‘A Little Taste of Spain’ instead of the Smoked Almonds.

If you love prawns with a classic seafood cocktail sauce, you really MUST try this Skinnymixer’s version.

Yet again the oil used is super important. Use a light flavoured oil for the best results ie. Costco Avocado oil (it is refined and clear), rice bran oil, grape seed oil or

This quick and easy sweet condiment is the perfect accompaniment to our Roasted Balsamic Strawberries, Low Carb Burger Buns or Pancakes for a sweet breakfast treat – think healthy cheesecake deliciousness.   • 200 g | 7 oz fresh ricotta (from the service deli, low fat or full fat)
  • 10 g - 20 g | 0.3 – 0.7 oz honey (or liquid sweetener of choice, see tip for granulated)
  • 5 g | 0.2 oz milk of choice
  • ½ tsp vanilla extract
  • ⅛ tsp nutmeg
Instructions
  1. Insert butterfly whisk to mixer bowl, add all ingredients and whip for 20 sec/speed 4/MC on or until well combined. Note: If using the lower amount of sweetener, feel free to taste and add a little more if not quite sweet enough. Blend for a further 20 sec/speed 4/MC on.
Notes
If using a granulated sweetener or low carb sweetener like xylitol, we recommend 10 g powdered in a dry mixer bowl for 20 sec/speed 9/MC on before proceeding with the recipe.

Guide to recipes using Steaming Trays

We often see comments and questions saying that people have never used their steaming trays/ varoma, or asking how they can use their whole machine more.

Hi! It’s Sarah here…
Would you believe I had never ‘steamed’ anything until I got a Thermomix!!  And now it is one of my favourite methods to cooking vegetables, proteins and even desserts.

Using the steaming trays is a great way to use all of your machine, avoid using your stove top or microwave, to bulk out any meal with extra veg to serve more people and a great way to have a complete meal, cooked all at the same time!  Steaming your food locks in the vitamins and minerals making our meals more nutritious and healthy.

A few tips for Steaming success: –

  • You do need to have the temp high enough, the time long enough and enough liquid ingredient in the bowl to generate enough steam to cook food in the steaming trays.
  • Following recipes is a good way to get to know what your machine needs, so is consulting your user manuals and cookbooks.
  • When placing food in the steaming trays you need to ensure that steam can still flow through.If they are too crowded, you will end up with uneven cooking.  Turning or rearranging food halfway is sometimes required as well.

All the flavour of a traditional Paella but quicker and healthier!  The dish can be finished off in a frying pan to achieve the socarrat which traditionalists believe is the secret to a great paella – although, I think this is pretty amazing as it is!!

This delicious dish can be made vegetarian and low carb.

A fantastic way to bring the flavours of Spain to your dinner table.

The perfect mid week meal that can be bulked out with extra veg to create the perfect all in one complete meal.

Making your own chorizo at home means you get to avoid the additives and preservatives that most commercially made chorizo contain.

Using the steaming tray to cook the pork that is just then finished off in the oven, BBQ or air fryer to finish off the crackle means a really moist roast with a beautiful crunchy crackle and the apple sauce is delicious too.

The general rule is short crust pastry on the bottom and puff pastry on the top.

Slow Cooked Greek Lamb

Being of Greek Heritage and a proud Australian, it would only be right for me to recommend my Slow Cooked Greek Lamb for an Australian Day dinner – fusing the best of both worlds!

Combine it with my pita breads, tzatziki and a tasty greek salad for a truly magnificent dinner.

Perhaps you might prefer to cook on the BBQ in this heat?

Another great entertaining recipe is my Curried Eggs – doesn’t get any more Australian than curried eggs at a BBQ according to Michael.

Watermelon Gin Fizz

The Watermelon Gin Fizz is a great drink for entertaining in this heat. You can make the syrup ahead of time and then add the soda water when you are ready to serve.

The beautiful thing about Australian summers is that our berries are also in season, and what could be better on a 40+ degree day than an instant strawberry ice cream in your Thermomix!   • 250 g | 8.8 oz fresh strawberries, quartered and frozen
  • 100 g | 3.5 oz pure pouring cream or coconut cream
  • 10 g | 0.3 oz honey (optional)
Instructions
  1. Add all ingredients to mixer bowl. Chop for 20 sec/speed 8/MC on or until well combined. You may need to scrape bowl down and blend for a further 10 sec/speed 8/MC on.Taste mixture and adjust sweetener if required.
  2. note: if you have a Bellini, you will need to drop your frozen fruit on to running blades one by one to avoid breaking your blades.

Coconut Curried Sausages

The Coconut Curried Sausages are extremely popular in the Thermomix Community. This not-so-skinny recipe is the ultimate comfort food and is soooo full of flavour. I don’t make it very often as it is too easy to over eat and stretchy pants are recommended (you don’t even notice that you are on your 3rd bowl :/).

The sausages steam in the varoma (you think you won’t like the texture but they are so tender), while the sauce cooks underneath and flavours the rice with Babas Malaysian Meat Curry Powder. This recipe makes A LOT of food and freezes extremely well. The sauce is meant to be runny as the rice soaks up all of the flavour. Make sure that you buy quality sausages or even chicken sausages, as they make a big difference in the overall dish.

Fragrant Asian Fish Parcels

The Fragrant Asian Fish Parcels recipe is the hidden all-in-one gem from The Healthy Mix Cookbook (the one where Nik’s eyes follow you around the kitchen). 

The fish is wrapped up in baking paper parcels with some of the delicious sauce and the rice is cooked underneath – flavoured by the sauce thanks to the magical 4 words… Without Washing the Bowl.

This dish is on the table within 30 minutes, making it the perfect weeknight recipe. You can also bulk it up by steaming other vegetables in the varoma/steaming trays while the fish and rice book. Don’t like fish? Simply swap for some chicken!

This recipe is very low fat and can be made even lower in calories (272 cals) by replacing the rice with cauliflower rice.

Now some people may want to avoid the extra garlic on a date night – but can you really go past some Creamy Garlic Prawns or even better a Surf ‘n’ Turf or Reef ‘n’ Beef?

The delicious Creamy Garlic Sauce, prawns and steak team up perfectly with the Silky Sweet Potato Mash, green beans or even a simple green salad. Or if you are looking for something a little lighter, there is an All-in-One Dinner variation of the Creamy Garlic Prawns in The Healthy Mix III that cooks cauliflower rice with the meal.

Boronia Marsala should be available at your local bottle shop for around $10-12 and will keep in the cupboard for many meals to come.

If you aren’t a lover of mushrooms, a little extra bacon and some green beans added towards the end will be a delicious variation.

Feeling adventurous? If you know that your date enjoys a good quality rare steak, then you might want to make Steak Tartare as a starter or as part of a grazing platter.

Using a good quality steak is very important to this recipe and it goes perfectly with the Skinnymixer’s Aioli. Other dishes you could prepare ahead of time to use on your grazing platter –

Taking Your Time to Impress

Sticky Szechuan Pork Belly and Asian Broth

Serve the Sticky Szechuan Pork on top of the broth or with the rice.

The Sticky Szechuan Pork Belly from A Little Taste of Asia is a big favourite in the community.

Leave yourself a good 1hr 20 mins to prepare this dish and save time by asking your butcher to remove the rind from your pork belly. You may like to cook some sneaky crackle in the oven while the pork is steaming in the master stock broth – I like to season with a little Chinese 5 Spice.

If you don’t eat pork, there has been success cooking this recipe with duck or beef, you just need a fattier cut of meat that will handle a longer cook.

You can purchase Szechuan Peppercorns from your local Asian Supermarket or Grandma’s Pantry. If you can’t buy them I recommend choosing a different recipe.

Seafood Bisque with Rouille

Nik considers the Seafood Bisque with Rouille to be one of the best recipes to come out of her kitchen… and for someone who doesn’t love seafood that is really saying something!

Served with some crusty bread and any seafood lover will be in absolute heaven.

Leave yourself plenty of time to prepare the seafood and debeard the mussels. If you have a little extra time on your hands, you could make the skinnymixer’s 5 Herb & Garlic Spelt Focaccia.

Beef Bourguignon

This deliciously rich Beef Bourguignon will definitely impress. After all isn’t French the language of love?

Serve with your favourite mash and green beans, with a sneaky bottle of red wine on the side.

Recipe Guide: Surviving a Fussy Eater AKA Turdler

This blog post is purely based on my own personal experience of surviving the last 6 years with a fussy eater aka the Turdler. I thought I’d share my tips and tricks that I have used to remain sane (ish) and some of the favourite Thermomix recipes from our community that have conquered fussy eating children and of course some compulsory fails. The term ‘turdler’ is used out of a place of affection and sometimes you just need to vent/laugh about your battles with a stubborn, fussy toddler… in a safe place surrounded my other parents facing the same battles.

The Beginnings of a Turdler

Back when my little man couldn’t say ‘I don’t like that!’

Looking back I have tried to pinpoint where the fussiness began, when I first heard “I don’t like that”.

I remember the days of finishing work at the office at 6pm and rushing home to pick up the toddler from day care to put him through his meal and bath time routine. With two full-time working parents in the household you revert to whatever is easiest for the toddler to feed themselves and the dinners that receive the least amount of resistance. Everyone is tired by 6:40pm and I found myself giving in to the toddler demands… Sausages with tomato sauce, avocado and a boiled egg WITHOUT any trace of egg yolk. Sound familiar? 

A Mum on a Mission

5 years ago this TM5 arriving changed my life and my family’s eating habits.

Weekends I would be trying everything to try to get the turdler to eat different things… so much money and food wasted. His mouth would clamp shut, unless of course it was a treat from nanny. I spent countless hours looking into different allergies, intolerances and sensory issues… thinking something was wrong as he struggled with formula when he was a baby and being constantly sick from day care. It was actually this research that I first discovered what a Thermomix was and that I HAD to have one – the only problem was I was told I wasn’t allowed one.

For 12 months I used a high-speed blender for every possible thing I could to prove that I would use a Thermomix – justified by the single fact that it would help sneak more vegetables into the Turdlers diet. I would make big batches of Spaghetti Bolognese with vegetables blitzed through and portion in the freezer – basically the only dinner he would eat consistently without complaint other than sausages, avocado and egg white. Eventually I was given the green light to get a Thermomix for my 30th Birthday (it was a big investment for new home owners). Hurray! I could finally make all these amazing recipes I had been lusting after and of course found my way to Skinnymixers.

Looking back I feel like it was those early days of survival, giving in to the very tired toddler with a repetitive dinner routine that led to setting the scene for the fussy eater. The second time around I was committed to making sure a wide range of tastes and textures were experienced – this was my Foodie Baby who is now 3 years old and can handle more chilli than her brother.

It took time for the Turdler to get used to the spices and ACV

By the time I got my Thermomix I had a Turdler on my hands, we even had to eat our Butter Chicken on the other side of the house as it “hurt his nose to smell it”.

I spent hours searching for the perfect recipes that were nutritious, delicious and that I could cook after a busy day at work or batch cook on the weekend. I started making everything from scratch and spent way too many weekends in the kitchen making food that would ultimately end up in the bin.

Something I discovered was that I had more success with recipes from Skinnymixers than I ever did with the Recipe Community or other cookbooks. So I started using the recipe index http://skinnymixers.com.au/index/  as my menu planning guide and never looked back.

The Most Recommended Fussy Child Recipe

I had such high hopes for the Macaroni Cheese with a Twist, so many other parents had success with their fussy eaters. Being full of hidden vegetables, freezer friendly and the recipe making sooo much food… I was excited to add it to our meal rotation. The Turdler hated it. I think I got him to eat two mouthfuls, before I was left eating Macaroni Cheese for a week. In hindsight I should’ve known better as he didn’t like cheese (I know, I know… what kid doesn’t like cheese?!?). My advice to make sure you get the best results for this recipe…

  1. Make sure you chop your vegetables small and check that they are fully cooked before blending. If they are slightly firm you will pick up the texture of them in the sauce.
  2. The cheese used makes up the flavour, so make sure you use a mild flavoured cheese or your child’s favourite.
  3. If you are dairy free – use this recipe instead: skinnymixer’s Dairy-Free Cheesy Spelt Pasta
  4. If you want to make an adult version adding crispy chorizo and wholegrain mustard is delicious.

Dinner Marketing 101

Spending so much time in the Skinnymixers Community I noticed it wasn’t just great recipes, but also a wealth of knowledge from so many mums who have been through the battles before and even won the wars.

Surely after 4 years of doing marketing at university I could persuade a 2.5 year old to eat delicious healthy food?!? I started having successes using some Jedi-mum techniques as the kid got older.

Never use the word Curry

The cutest Turdler and Foodie Baby in the world… ok I’m a little bias.

IF I wanted to try and run the gauntlet of having a mild curry for dinner (there are only so many nights of spaghetti a mum can take!).

I learnt quickly to NEVER EVER say the word CURRY or anything spicy related. Always simplify the name and make it sound really mild like Creamy Chicken and Rice.

Butter Chicken became Creamy Tomato Chicken, Coconut Curried Sausages became Creamy Sausages and I think you get the picture…

I always make it on the mild side, as I can add chilli on top but I definitely don’t feel like making a second dinner after the first one is rejected due to fire in their mouth.

Getting the kids involved in the kitchen and interested in cooking

Make your own wraps night

I found if I needed to try a new recipe, getting the kid actively involved in making dinner could help reduce the friction in them trying new things. I also tell them that they need to have 3 mouthfuls before declaring they ‘don’t like it’. Also one of the favourite dinners in our household is ‘Make your own wraps’ night – putting a big plate of salad that they helped prepare in the middle of the table with some protein. Some of our favourites are:

I’ve seen the hidden vegetable argument played out so many times on social media. Team Hidden Vegetable vs the parents soapboxing that the children should just eat what is on their plate. Personally I like to add hidden vegetables into the recipes I cook – it is great for using up old vegetables in the fridge and if it means the kids get a little extra goodness each day it helps give me a little mummy win. I also serve other vegetables with the hidden vegetables.

Sausages will always be a winner

In this household sausages still reign supreme. But these days I get to enjoy sausages the Skinnymixers way.

From the Skinless Sausages in THMIII that I know aren’t full of preservatives, the ridiculously tasty Coconut Curried Sausages (I use 1 Tbsp of Babas) or the All in One Sausage Dinner with the most delicious tomato onion gravy that you can serve on the side to avoid any complaints from your fusspot.

Adapting recipes to your needs

Don’t be afraid of changing /  adapting a recipe to your needs. If you are concerned feel free to ask in Skinnymixers – there are no silly questions!

Most children are sensitive to spice, so feel free to omit or decrease chilli, curry powder, cayenne pepper or even larger amounts of black pepper. You can switch smoked paprika to mild paprika if they don’t love the strength of smoked paprika.

Or even if a recipe calls for mushrooms… you have the power to not put them in 😉 My kids love the Creamy Chicken Pie Filling on Silky Sweet Potato Mash with bacon instead of mushrooms.

My kids also love the Speedy Beef Stir Fry but find it a little spicy, so I replace the birdseye chillies with a red cayenne chilli and reduce the ginger a little.

Survival

My little man has grown up so much. He loves to get involved with cooking and review new recipes.

Honestly it is just about survival, these precious years will pass and they will be a teenager driving themselves to McDonalds in no time at all. Everyone is different and doing their best. If you see a cry for help from a fellow parent, be kind, tell them they are a great parent for caring so much and maybe share a recipe that worked for you.

My turdler recently turned 7 years old and his tastebuds are definitely changing and he is more adventurous with food. He now actually eats potato salad, sometimes likes lettuce, is obsessed with mustard (hello Honey Mustard Chicken!) and pickles and get’s excited when we are testing new recipes for the new cookbooks. His favourite dinner is now the Baked Risotto from A Little Taste of Italy or the Peri Peri Chicken. He still has nights where he is exhausted from a big day at school and tries to tell me it is too spicy or doesn’t like it. I give him my best “eat your dinner or go to bed” look and he either finishes his plate or decides he’s had enough to eat. I know if he is hungry, it will be eaten.

There have been quite a few posts in Skinnymixers about what to make with chillies lately, so I thought I would share my Sambal Oelek recipe for the Thermomix™. This recipe was created for my best-selling cookbook, ‘A Little Taste of Asia’ but I felt it was too simple to include in the cookbook. Sambal Oelek is a spicy condiment which is great to have in the fridge if your family have different spice preferences. The perfect condiment to have with my Vietnamese Pho or Curry Mee Laksa.

Ingredients
  • 100 g large red chillies, roughly chopped
  • 15 g Apple Cider Vinegar (I use Braggs)
  • ½ tsp salt
  • ½ tsp sugar of choice (optional for keto/lchf)
Instructions
  1. Add chillies to mixer bowl, chop for 3 sec/speed 9/MC on. Scrape bowl down, repeat 3 times.
  2. Add remaining ingredients and blend for 3 sec/speed 9/MC on.
Notes
Can be stored in a sterilised jar in the fridge for up to 2 weeks or freeze in portions. Serve on the table for guests to add to their meal.

I bet you never would’ve thought I would write a full Thermomix blog post about Mushrooms… but apparently some people find them delicious (strange I know!). Hi it’s Sian here! This 30 minute dinner was the People’s Choice recipe for The Healthy Mix II Cookbook and is extremely popular with the Skinnymixers Community. This Beef Stroganoff recipe uses Swiss Brown mushrooms and a good quality steak cooked quickly. For maximum tenderness make sure that you use a good quality steak like porterhouse or scotch fillet and slice it very thinly. skinnymixer’s Hungarian Goulash

Hungarian Goulash is a popular meat and paprika stew, originating in Medieval Hungary. I love how simple, yet full of flavour this healthy Thermomix recipe is and I also love the versatility of this recipe. There are so many variations of Goulash, that I figured creating a base recipe, that you could easily adapt would be ideal. Feel free to chuck in potato, capsicum and wine if you are used to your Goulash having these ingredients! Enjoy, Love Nik xx

Ingredients
  • 1 medium onion, peeled, halved
  • 2 cloves garlic, peeled
  • 30 g olive oil
  • 700 g gravy beef, trimmed and diced small
  • 500 g liquid beef stock (or 500 g water + 1 Tbsp beef stock concentrate)
  • 50 g tomato paste
  • 2 Tbsp sweet paprika
  • 1 Bay leaf
  • 150 g carrots, peeled, cut into chunks
  • Sour cream and parsley to serve
Instructions
  1. Add onion and garlic to mixer bowl. Chop for 3 sec/speed 5/MC on. Scrape mixer bowl down.
  2. Add olive oil and cook for 5 min/100 deg/speed 1/MC off.
  3. Add beef, liquid stock, tomato paste, paprika and bay leaf to mixer bowl. Cook for 20 min/steaming temp/slowest speed/MC off - place simmering basket on top to avoid splatter.
  4. Add carrots and cook for further 15 min/steaming temp/slowest speed/MC off – place simmering basket on top to avoid splatter. Due to differing water content in beef, the cook time may need to be extended by 5-10 min.
  5. Season to taste, it will need an extra pinch or two of salt and pepper!
Notes
Low Carb / Keto Variation: Omit carrot & use vegetable of choice.

I haven’t had Hungarian Goulash for years as it was something that I cooked from a supermarket packet mix. This preservative free, healthy Thermomix recipe will be popular with the family and can be made in the slow cooker or pressure cooker by reducing the water.

Slow Cooker Tips:

Transfer the recipe to the slow cooker from the Thermomix in Step 3 & reduce water to 200 g or less for less sauce. Cook on low for 8-10 hrs or until beef is tender. You may wish to thicken the stew with a cornflour + water paste in the last 30 mins or cook with the lid off until liquid has reduced.

If you have added potatoes and other vegetables to make it an all-in-one, you will need to season to taste.

Finding Coeliac friendly & gluten free Thermomix recipes doesn’t need to be hard or scary. When you have a Coeliac disease diagnosis, it is life-changing – hopefully this beginners guide and Skinnymixer experience can help you make the transition.

Having a daughter diagnosed at the age of 2 with Coeliac Disease was scary… like really scary!

Coming from a family with zero allergies and zero allergy awareness it was quite a daunting diagnosis.  But it also explained a lot to us – like why her hair hadn’t ever grown properly, why her tummy was so round and always sore, why her nappies were so gross (like sooo gross I can’t even tell you!) and why her third word was EAT – she would stand in the kitchen pulling at my leg saying ‘Eat, eat, eat, eat EATTTT!’

The plus side of this diagnosis was that it led me to buying a Thermomix, looking online for the best gluten free recipes and found myself joining the Skinnymixers community, then the Development team and ultimately now I get to work with someone that has made such a huge impact on healthy eating for so many of us… ok I still fangirl sometimes 🙂

What is gluten?  A very basic description of gluten is that it is a protein that is found in Wheat, Barley, Oats and Rye so any foods containing these ingredients, contain gluten.

A Ceoliac Diet Isn’t So Scary

gluten free thermomix coeliac recipesWhat I’ve learnt along the way is that it didn’t really need to be so daunting.  There are a lot of resources available out there, so I thought I would share some tips I have learnt along the way and hopefully they might make the journey a little less daunting for some of you!

  1. If you suspect you are a Coeliac, please please please have the correct testing done before you change anything with your diet. I’m a really strong believer in this for many reasons. By correct testing I mean a blood test and, if the markers indicate it, a biopsy performed by endoscopy. This was done for my daughter at the age of 2.  It is very traumatic to go back to eating gluten once you have gone gluten free so I don’t recommend it.
  2. If you are a diagnosed Coeliac, join your local Coeliac society – whether that be becoming a Member or by joining their social media pages.  There is a National organisation, then most states and territories have regional ones as well. In Australia is is ‘Coeliac Australia‘.
  3. Learn food labelling rules and learn to read labels.  BORING, I know – but it is crucial.
    While most of the food in our house is now cooked from scratch, you still need to check every sauce, spice and packaged ingredient that you may need to use.

    Gluten hides in many foods, not just cakes, biscuits and bread!  Some surprising places it has turned up are – mayonnaise, cornflour, sauces, spices, stock powders/liquids, dressings, potato chips, processed meats, drinking chocolate.
    Also, if you are choosing based on checking ingredients – you need to check every time!  Sometimes manufacturers change recipe without making it obvious.
    Another thing to consider is that one item in a brands range might be ok, where another is not!
  4. Cross contamination! This is something a lot of people don’t think of and is so important.  In my house we only have one person with Coeliac disease so while we mostly eat gluten free, there are a few strategies we have come up with along the way to keep gluten in our house and keep our house Coeliac safe as well –
    • Separate toasters and toasted sandwich makers.
    • We have a strict ‘No double dip’ rule for all spreads, butters, condiments – often results in 10 butter knives in the sink for just one round of sandwiches, but it works 😛
    • One drawer contains all of the gluten foods, the rest of the house is basically gluten free. Any food containing gluten that is not in that one special drawer is labelled clearly with the word GLUTEN.
    • Sponges and tea towels are changed often for us, I know some people run separate cleaning sponges/cloths but we haven’t found that necessary.

If you have a gluten intolerance the above tips may or may not be of use. The main difference between having a gluten intolerance and having Coeliac Disease is that while the consumption of gluten is usually pretty unpleasant for both, it can be life threatening for someone with Coeliac Disease – long term consumption can result in an increase in the chance of developing many other autoimmune diseases, cancers, inflammations and also malnutrition.

EATING OUT

It is hard to enjoy eating out when we eat so well at home!

The key to eating out is planning.  Every time you eat in a non-dedicated gluten free kitchen you are taking a risk and taking a chance on how careful the person preparing your food is going to be.

I have learnt along the way to research before we go – either searching online, making phone calls to ask what they can provide.  Then when I am there it involves quizzing the serving staff and often kitchen staff about how safe they can make the food.

It has also meant that there has been times when we’ve walked away from a restaurant because I didn’t feel satisfied they could safely feed my Coeliac child.

Your local Coeliac group will have information on places where people have eaten safely or there may be a Facebook group dedicated to gluten free food in your area – here is the one I belong to for Adelaide (along with a few other Skinnymixers!)

SHOPPING

Babas Malaysian Meat Curry Powder is gluten free & we don’t have an issue using it.

Look for naturally gluten free foods! This will help keep your costs down.  Prepackaged gluten free food is convenient – but boy it can be expensive.  And to be honest, they often substitute the lack of gluten for extra sugars and salts making them even unhealthier than you first might think.
If you are buying packaged gluten free foods – my process is this, look for one that states GLUTEN FREE (and is made in Australia), if there is no product like that, then you need to read the ingredient label and allergen statement and then choose your product.
People with a gluten intolerance are usually ok with foods that have the ‘May contain… statement’.  Coeliacs will generally avoid these foods as well.

Here are my favourite general Supermarket brands that I will look for if buying packaged foods (but still check the labels… just in case!)

  • Chang’s Asian sauces
  • Bulla, Golden North and I think even Peter’s now all have Gluten Free ice creams in their ranges
  • Spring Gully Worcestershire
  • Heinz and Fountain sauces (be very careful with BBQ sauce)
  • Chris’ dips
  • Smiths Potato crisps
  • Mission Mexican products offer a few items
  • Hans smallgoods – bacon and cold meats
  • Sakata rice crackers
  • Mitani chicken salt

As for spices, bread mixes etc… I always go to our friends at Grandma’s Pantry – their range of GF items is ASTOUNDING – and includes lollies (and we have a discount code 😉 SKMIX)

To be honest, I’m not sure what we experience here in Australia can really be called “Winter” – but it gives us an excuse to enjoy the hearty stews and winter comfort food Thermomix recipes.

Hi! It’s Sian here… I thought it might be fun to have a list of healthy Winter Thermomix Recipes, fit for the Iron Throne (or to impress at your viewing party!).

1. Roast Chicken Dinner with all the Trimmings

I’m not sure they had grain free stuffing during the fight for the Seven Kingdoms, but Roast Chicken was definitely the Hound’s favourite – and this Thermomix recipe is seriously one of the best Roast Chicken Dinner’s you will have the pleasure of trying.

Why cook this recipe? Cooking a Roast Chicken in the Thermomix like this produces a beautifully moist roast chicken and the juices drop down into the sauce, making a ‘plate licking’ gravy. I like to make little balls of the stuffing and get them crispy in a hot oven – so bloody good!

2. Hungarian Goulash

These Lamb Shanks simmered for 10hrs in a Hungarian Goulash stew would be fit for a King or Khal Drogo. When you are sitting there feasting on this delicious winter warmer dinner, feel free to ditch the cutlery and eat like a true Dothraki.

6. Slow Cooked Greek Lamb

Hot Cross Buns Bread n Butter Pudding Recipe Thermomix

Ok so this Hot Cross Buns Bread and Butter Pudding Thermomix recipe really isn’t Skinny & is definitely a treat dessert Thermomix recipe reserved for Easter. Perfect for using leftover homemade Hot X Buns or if you have some Hot Cross Buns going stale.

I posted this recipe in the Skinnymixers group one Easter a few years ago and it seems to have become a tradition for some Skinnymixers – so I thought I had better blog the recipe! You could also use my Lovely Finger Buns Recipe from the Thermomix Community.

Not-so-Skinny Tips from the Skinnymixers Facebook Community:

  • Replace the jam with 3 medium size crushed up chocolate Easter Eggs & drizzle with warm caramel sauce.
  • Replace the Hot X Buns with Croissants or homemade fruit loaf.
  • If you use Chocolate Hot Cross Buns for the Pudding, add some orange zest into the custard mixture.
  • You can add an extra naughty dash of Cointreau
  • Probably shouldn’t even mention this variation, as it is over the top decadent and definitely not Skinny… (Chocolate HCB, Nutella & Bailey’s Irish Cream!!!)

Hot Cross Buns Bread and Butter Pudding

Hot Cross Buns Bread and Butter Pudding can be made dairy free, gluten free or even Keto if you have some leftover LCHF Hot X Buns!

Ingredients
  • 6 Hot Cross Buns
  • butter
  • jam of choice
  • 200 g cream
  • 50 g milk of choice
  • 20 g coconut sugar or sugar of choice
  • 4 eggs
  • 1 pinch ground cinnamon
Instructions
  1. Preheat oven to 180C degrees, fan-forced. Butter a baking dish.
  2. Slice buns into bread slice thickness. Butter the slices on one side, jam on the other.
  3. Arrange slices on baking dish.
  4. Add cream, milk, sugar and eggs into mixer bowl. Blend for 30 sec/speed 4/MC on. Pour over the hot x buns and allow it to soak in for 5 min. Sprinkle with cinnamon. Loosely cover with foil.
  5. Bake in the oven for 20-30 min, or until golden brown and set.
Notes
Dairy free: Use coconut milk and dairy free spread

Keto/LCHF: Use LCHF Hot X Buns, omit the jam and use xylitol to taste.

Gluten Free: Use Gluten Free Hot Cross Buns
