With everything happening in the World I thought it was a good time to blog my favourite super budget friendly, pantry staple Thermomix recipe – Red Lentil Dahl.
Dahl is a hearty, super healthy vegetarian dish that is packed full of protein but easy on the budget.
You can serve this Red Lentil Dahl as a main with steamed rice or Garlic, Cheese & Spinach Naan.
It also makes a delicious side dish to serve with your favourite Butter Chicken or Curry.
There is no need to soak the split red lentils overnight & you can adjust the chilli to taste.

Skinnymixer's Red Lentil Dahl
Equipment
- Thermomix
Ingredients
- 2 cm ginger
- 2 cloves garlic peeled
- 1 onion peeled and halved
- 30 g olive oil
- 1 red capsicum deseeded and quartered
- 1 large carrot roughly chopped
- 1 cup split red lentils rinsed
- 450 g water
- 2 Tbsp Chicken Stock Concentrate
- 1 tsp Ground Coriander
- 1 tsp Ground Cumin
- ¼ tsp chilli flakes increase up to 1 tsp for spicier
- 1 tin chopped tomatoes
- 1 squeeze Fresh Lemon Juice
Instructions
- Add garlic, ginger and onion. Chop for 5 sec/speed 7/MC on. Scrape mixer bowl down.
- Add oil and spices. Cook for 5 min/100°C/speed 1/MC off.
- Add capsicum and carrot, chop for 5 sec/speed 5/MC on. Scrape mixer bowl down.
- Add remaining ingredients except lemon. Cook for 25 min/ 100°C/speed 1/MC off - place simmering basket on top to avoid splatter.
- Season to taste with salt/tamari and serve witha squeeze of fresh lemon juice.
