Ratatouille

Ratatouille is a hearty French vegetable stew made even more famous by a cute rat that convinced kids everywhere to tuck into this healthy meal. While I love this served in a bowl, I think it is extra amazing served on top of steak or with fried eggs for breakfast. It is one of those dishes that also gets better over a couple of days in the fridge.

I wanted to include this classic French recipe in my cookbook A Little Taste of France, as Ratatouille is incredibly healthy and makes a great side dish or topping to bring flavour to a plain protein – ie. poached eggs, grilled chicken, steak, pork chops or even a roast.

The quality and freshness of your vegetables will have a big impact on the results of your Ratatouille.

If your tomatoes aren’t beautiful red and ripe,  you won’t get that rich red colour through the stew.
